Det l\u00e5ter inte helt orimligt tycker jag som g\u00e4rna \u00e4ter soppa flera g\u00e5nger i veckan, \u00e5tminstone s\u00e5 h\u00e4r \u00e5rs. Dessutom \u00e4r det s\u00e5 bra v\u00e4rma-p\u00e5-till-lunch-mat s\u00e5 jag g\u00e4rna g\u00f6r en stor kastrull med soppa i b\u00f6rjan av veckan som jag och Jonas kan \u00e4ta av till lunch flera dagar. St\u00e5ende ingrediens \u00e4r basilika och n\u00e5gon sorts fisk. Godast blir det med torsk tycker jag, och sedan \u00e5ker det mesta som r\u00e5kar finnas i kylsk\u00e5pet i rotfrukts- och gr\u00f6nsakv\u00e4g i. Rotfrukter \u00e4r det s\u00e4song av nu, och det g\u00e5r bra med vilka sorter som helst. De b\u00e4sta recepten tycker jag \u00e4r just de d\u00e4r det finns utrymme f\u00f6r improvisation och h\u00f6ftande, f\u00f6r d\u00e5 \u00e4r det just de d\u00e4r halvtr\u00e5kig gr\u00f6nsakerna som riskerar att \u00e5ka i komposten som man f\u00e5r anv\u00e4ndning f\u00f6r, och man beh\u00f6ver inte \u00e5ka en v\u00e4nda extra till aff\u00e4ren f\u00f6r att det saknas n\u00e5gon ingrediens. \u00a0Man tager vad man haver helt enkelt. L\u00f6k kan bytas ut mot annan l\u00f6k. Gul mot r\u00f6d till exempel, och ist\u00e4llet f\u00f6r purjol\u00f6k anv\u00e4nder jag oftast skogsl\u00f6k som jag plockar p\u00e5 v\u00e5ren och fryser in hackad. Under sommaren toppar jag soppan med fler sorters f\u00e4rska kryddor, som gr\u00e4sl\u00f6k och persilja. Har jag lite r\u00e4kor i frysen kan jag sl\u00e4nga med dem i soppan strax innan den \u00e4r klar. Basilikan \u00e4r dock det som ger soppan karakt\u00e4r, s\u00e5 hoppa inte \u00f6ver den. Eller g\u00f6r det f\u00f6r all del, men d\u00e5 blir det en annan soppa. S\u00e5 h\u00e4r brukar jag g\u00f6ra, p\u00e5 ett ungef\u00e4r allts\u00e5:<\/p>\n<p><strong>4 -5 portioner<\/strong><\/p>\n<p><strong>En gul l\u00f6k\u00a0<\/strong><\/p>\n<p><strong>En halv purjol\u00f6k eller n\u00e5gra n\u00e4var fryst skogsl\u00f6k\u00a0<\/strong><\/p>\n<p><strong>2 vitl\u00f6ksklyftor<\/strong><\/p>\n<p><strong>T\u00e4rnade rotsaker. H\u00e4r blir det mest potatis och mor\u00f6tter. Kanske lite k\u00e5lrot eller jord\u00e4rtskocka. Bort\u00e5t en liter t\u00e4rnade rotsaker f\u00f6r fem personer\u00a0kanske. Vill man ha mycket mat i soppan h\u00e4ver man i mer rotsaker och ser bara till att det finns tillr\u00e4ckligt med vatten och buljong f\u00f6r att det ska bli lagom mycket spad.<\/strong><\/p>\n<p><strong>Vatten s\u00e5 det t\u00e4cker gr\u00f6nsakerna gott och v\u00e4l<\/strong><\/p>\n<p><strong>2-3 fiskbuljongt\u00e4rningar.\u00a0<\/strong><\/p>\n<p><strong>Ett par deciliter gr\u00e4dde\u00a0<\/strong><\/p>\n<p><strong>En skv\u00e4tt citronsaft<\/strong><\/p>\n<p><strong>400 g torsk<\/strong><\/p>\n<p><strong>Ett rej\u00e4lt knippe f\u00e4rsk basilika. Klyfta den gula l\u00f6ken, och hacka purjol\u00f6ken och vitl\u00f6ken. Fr\u00e4s l\u00f6ken och purjol\u00f6ken mjuk i olja. Tills\u00e4tt vitl\u00f6ken och fr\u00e4s snabbt. H\u00e4ll sedan i rotsakerna och fr\u00e4s en liten stund s\u00e5 de b\u00f6rjar mjukna, men se upp s\u00e5 de inte br\u00e4nner vid i botten. H\u00e4ll p\u00e5 vatten, smula i buljongt\u00e4rningarna och l\u00e5t alltsammans koka tills rotsakerna b\u00f6rjar bli mjuka. T\u00e4rna under tiden fisken och hacka basilikan.<\/p>\n<p>N\u00e4r rotsakerna b\u00f6rjar bli f\u00e4rdiga &#8211; h\u00e4ll i en skv\u00e4tt gr\u00e4dde, ett par deciliter eller s\u00e5 och l\u00e5t det b\u00f6rja sjuda. N\u00e4r det bubblar igen, h\u00e4ll i fisken och den hackade basilikan och l\u00e5t sjuda n\u00e5gra minuter tills fisken \u00e4r genomkokt. Smaka av med salt och svartpeppar och en liten skv\u00e4tt pressad citronsaft.
