H\u00e4r kommer den med ett n\u00f6tigt havrefras och med kn\u00e4ckig paj som bonustips. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det k\u00e4nns osannolikt. Allt som syns \u00e4r den kalla, svarta jorden. Kraftiga stj\u00e4lkar och gr\u00f6na blad? \u00c4r det ens m\u00f6jligt? Och s\u00e5 pl\u00f6tsligt h\u00e4nder det. Jordskorpan spricker och raberknopparna f\u00e5r br\u00e5ttom. Redan efter ett par veckor \u00e4r det dags. Kompott och paj \u00e4r givna p\u00e5 menyn.<\/p>\n<p>Jag spetsar \u00e5rets kompott med lite jordgubbssaft, ibland blir det fl\u00e4dersaft. Smakkamrater alla tre. Och det finns n\u00e5gra tips som g\u00f6r kompotten s\u00e5 mycket b\u00e4ttre.<\/p>\n<p>F\u00f6r det f\u00f6rsta: Sk\u00e4r rabarberstj\u00e4lkarna i sm\u00e5 bitar, inte l\u00e4ngre \u00e4n ett par centimeter. Fibrerna m\u00e5ste kortas f\u00f6r att undvika en tr\u00e5dig kompott.<\/p>\n<p>F\u00f6r det andra: L\u00e5t rabarberkompotten puttra stilla och ifred. R\u00f6r inte i den. K\u00e4nslan blir mycket b\u00e4ttre om bitarna \u00e4r hela efter koket. B\u00f6rjar du r\u00f6ra blir det mest en gr\u00f6t av alltihop och kompotten f\u00f6rlorar sin fina f\u00e4rg.<\/p>\n<p>Det n\u00f6tiga havrefraset ger b\u00e5de smak och knaprig struktur. Missa inte det.<\/p>\n<p>Nu till verket!<\/p>\n<h2>Rabarberkompott med n\u00f6tigt havrefras<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>350 g rabarberstj\u00e4lkar<\/li>\n<li>1 dl vatten<\/li>\n<li>1 dl socker<\/li>\n<li>1 msk koncentrerad fl\u00e4der- eller jordgubbssaft (kan uteslutas)<\/li>\n<li>\u00bd citron<\/li>\n<\/ul>\n<h4>N\u00f6tigt havrefras<\/h4>\n<ul>\n<li>1 dl hasseln\u00f6tter<\/li>\n<li>40 g sm\u00f6r<\/li>\n<li>\u00be dl socker<\/li>\n<li>2 dl havregryn<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>l\u00e4ttvispad gr\u00e4dde<\/li>\n<\/ul>\n<ol>\n<li>Skala rabarbern om stj\u00e4lkarna \u00e4r grova. Sk\u00e4r dem i ett par centimeter stora bitar. L\u00e4gg i tjockbottnad kastrull tillsammans med vatten, socker, koncentrerad saft och saften fr\u00e5n pressad citron.<\/li>\n<li>L\u00e5t puttra p\u00e5 svag v\u00e4rme tills rabarbern \u00e4r mjuk cirka 15 minuter. R\u00f6r inte i kastrullen utan f\u00f6rs\u00f6k beh\u00e5lla rabarberbitarna hela.<\/li>\n<li>Grovhacka n\u00f6tterna. Sm\u00e4lt sm\u00f6r i en stekpanna och str\u00f6 \u00f6ver sockret som ska sm\u00e4lta p\u00e5 medelv\u00e4rme innan n\u00f6tter och havregryn r\u00f6rs i.<\/li>\n<li>R\u00f6r runt i pannan och ta fr\u00e5n v\u00e4rmen s\u00e5 fort blandningen b\u00f6rjar ta f\u00e4rg. H\u00e4ll upp p\u00e5 fat f\u00f6r att svalna.<\/li>\n<li>Servera rabarberkompotten ljummen eller sval. Str\u00f6 \u00f6ver det n\u00f6tiga havrefraset och l\u00e4gg p\u00e5 en klick gr\u00e4dde.<\/li>\n<\/ol>\n<p>F\u00f6rutom kompotten blir det varje \u00e5r rabarberpaj. V\u00e5r favorit \u00e4r den en variant med riktigt kn\u00e4ckig yta.
