P\u00e5 var mans bord, vardag som fest. Den har gjort en motsatt, modern klassresa. Fr\u00e5n status som exklusiv och upph\u00f6jd ut till k\u00f6k \u00f6verallt. En smak vi k\u00e4nner igen och gillar. Stor eller liten, lax finns i smakregistret.<\/p>\n<p>Idag blir det en enkel variant, men med helgfeeling. Jag bakar en st\u00f6rre bit i ugn och det ger vissa f\u00f6rdelar. Den riskerar inte att bli torr p\u00e5 samma s\u00e4tt som tunna stekta skivor.<\/p>\n<p>Ytan f\u00e5r fin f\u00e4rg och eftersom citronmarinaden inte har direktkontakt med en het stekpanna beh\u00e5ller den smaken b\u00e4ttre. En bra metod och verkligen mycket enkelt.<\/p>\n<p>Picklade gr\u00f6nsaker till ger lite sommark\u00e4nsla. Och h\u00e4r m\u00e5ste jag tipsa om ett annat recept, stekt, inlagd lax. En verklig sommarhit. \u00a0<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/duo-i-midsommarlax\/\">Receptet hittar du h\u00e4r.<\/a><\/p>\n<p>Men nu till dagens recept.<\/p>\n<h2><strong>Citronbakad lax med picklade gr\u00f6nsaker<\/strong><\/h2>\n<p>4 \u2013 5 personer<\/p>\n<ul>\n<li>1 kg laxsida<\/li>\n<li>\u00bd citron<\/li>\n<li>50 g sm\u00f6r<\/li>\n<li>1 msk honung<\/li>\n<li>1 tsk flingsalt<\/li>\n<li>\u00bc tsk grovkrossad svartpeppar<\/li>\n<\/ul>\n<h4><strong>Picklade gr\u00f6nsaker<\/strong><\/h4>\n<ul>\n<li>1 knippa r\u00e4disor<\/li>\n<li>\u00be gurka<\/li>\n<li>\u00bd dl \u00e4ttika (12%)<\/li>\n<li>1 dl socker<\/li>\n<li>1 \u00bd dl vatten<\/li>\n<li>\u00bd citron<\/li>\n<li>salt<\/li>\n<li>\u00bd knippa dill<\/li>\n<\/ul>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. L\u00e4gg laxsidan i en ugnsform.<\/li>\n<li>Riv det gula skalet av citronen och pressa ur saften. Sm\u00e4lt sm\u00f6ret tillsammans, citron och honung.<\/li>\n<li>Pensla laxsidan med blandningen. Str\u00f6 \u00f6ver flingsalt och svartpeppar. S\u00e4tt in i ugnen.<\/li>\n<li>Skiva r\u00e4disor och gurka tunt, g\u00e4rna p\u00e5 mandolin. Blanda \u00e4ttika, socker, vatten, citronsaft och salt. L\u00e4gg i r\u00e4disor och gurka.<\/li>\n<li>Ta laxen ur ugnen efter cirka 20 minuter. M\u00e4t g\u00e4rna innertemperaturen som ska vara 54 \u2013 56 grader.<\/li>\n<li>Finhacka dillen och r\u00f6r ner den i de picklade gr\u00f6nsakerna.<\/li>\n<\/ol>\n<p>Servera laxen med gr\u00f6nsakerna, f\u00e4rskpotatis och sparris. Och varf\u00f6r inte en kall s\u00e5s med lika delar majonn\u00e4s och rysk yoghurt. Lite salt och finhackad dill. S\u00e5 f\u00e5r det bli!<\/p>\n<p>Allt gott!
