Fantastiska smaker och allt kan f\u00f6rberedas. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag gillar tanken p\u00e5 f\u00f6rberett. S\u00e4rskilt inf\u00f6r en helg n\u00e4r midsommarafton redan bjudit p\u00e5 matutmaningar. Sill, f\u00e4rskpotatis och jordgubbst\u00e5rta \u00e4r avklarat och nu ska grillen laddas.<\/p>\n<p>Id\u00e9n kommer med inspiration fr\u00e5n en av mina favoritkockar, Stefan Ekengren. S\u00e5 r\u00e4tt t\u00e4nkt med tunna skivor f\u00e4rdig karr\u00e9 som penslas med goda grejer och sedan g\u00e5r en snabb sv\u00e4ng p\u00e5 grillen f\u00f6r smak och fin yta. Han valde BBQ-s\u00e5s, men jag v\u00e4ljer smaker f\u00f6r tidig sommar och g\u00f6r en rabarberglaze.<\/p>\n<p>Potatissallad blir det till f\u00f6rst\u00e5s. Den klassiskt kr\u00e4miga varianten och <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/klassisk-potatissallad-den-kramiga\/\">mitt recept p\u00e5 den hittar du vid l\u00e4nken h\u00e4r.<\/a><\/p>\n<p>Nu tar vi tag i midsommargrillen.<\/p>\n<h2>Karr\u00e9spett med rabarberglaze<\/h2>\n<p>6 personer<\/p>\n<ul>\n<li>1,2 kg fl\u00e4skkarr\u00e9 i bit<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>eventuellt rosmarin<\/li>\n<\/ul>\n<h4>Rabarberglaze<\/h4>\n<ul>\n<li>300 g rabarberstj\u00e4lkar<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 stor vitl\u00f6ksklyfta<\/li>\n<li>1 f\u00e4rsk chili, eller motsvarande m\u00e4ngd chilipasta<\/li>\n<li>1 dl socker<\/li>\n<li>1 msk \u00e4ppelcidervin\u00e4ger<\/li>\n<li>\u00bd dl vatten<\/li>\n<\/ul>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 165 grader. Torka k\u00f6ttet innan du saltar och pepprar det. Den som gillar rosmarin l\u00e4gger p\u00e5 f\u00e4rsk eller klappar in den torr.<\/li>\n<li>Stek k\u00f6ttet runtom tills det f\u00e5tt fin f\u00e4rg. S\u00e4tt spetsen av en stektermometer mitt i biten och placera i ugn. L\u00e5t k\u00f6ttet g\u00e5 till en innertemperatur p\u00e5 65 grader. Ta ut och l\u00e5t svalna.<\/li>\n<li>Till glazen ska rabarber, l\u00f6k och vitl\u00f6k skivas tunt innan alltihop f\u00e5r svettas i en panna n\u00e5gra minuter. Tills\u00e4tt \u00f6vriga ingredienser och sm\u00e5puttra tills massan tjocknar. Ta fr\u00e5n v\u00e4rmen och mixa helt sl\u00e4t.<\/li>\n<li>N\u00e4r grillen b\u00f6rjar bli varm \u00e4r det dags att skiva k\u00f6ttet tunt. Vecka sedan skivorna och tr\u00e4 upp dem p\u00e5 dubbla spett. Pensla med glaze och grilla till riktigt fin f\u00e4rg. Pensla eventuellt spetten med lite olja ocks\u00e5 innan grillen s\u00e5 f\u00e5r de extra fin yta. Bjud resten av glazen vid sidan av spetten.<\/li>\n<li>Servera potatissallad till och vill du som jag grilla n\u00e5gra fina f\u00e4rska l\u00f6kar kan de f\u00f6rkokas, eller sjudas i cirka 10 min s\u00e5 g\u00e5r sj\u00e4lva grillandet snabbt och du slipper l\u00f6k som \u00e4r r\u00e5 i mitten.<\/li>\n<\/ol>\n<p>Saknar du id\u00e9er till sillen s\u00e5 har du <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/matjessill-pa-gronprickig-yoghurtbadd\/\">min variant av \u00e5rets matjes vid l\u00e4nken h\u00e4r<\/a> och <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/arets-jordgubbstarta\/\">en h\u00e4rlig jordgubbst\u00e5rta med mazarinbotten finns i det h\u00e4r inl\u00e4gget<\/a>.<\/p>\n<p>M\u00e5 solen lysa \u00f6ver er midsommar!
