Men nu \u00e4r den gl\u00e4djen slut. Det stora k\u00f6rsb\u00e4rstr\u00e4det har f\u00e5tt en ny \u00e4gare och grenarna som str\u00e4ckte sig en bra bit \u00f6ver en t\u00e4t, oklippt h\u00e4ck \u00e4r inte l\u00e4ngre dolda. L\u00e4gg i gryta tillsammans med vatten. Koka sakta under lock tills \u00e4ppelbitarna kokat s\u00f6nder. L\u00e5t den pektinrika v\u00e4tskan rinna av i silduk.<\/li>\n<li>Styrkan i pektinbasen varierar beroende p\u00e5 \u00e4ppelsort och mognadsgrad, men r\u00e4kna med att tills\u00e4tta ungef\u00e4r 2 dl per kg sylt- eller marmeladb\u00e4r. Det \u00e4r pilligt, men en urk\u00e4rnare underl\u00e4ttar. Anv\u00e4nd annars skalkniv eller rena fingrar.<\/li>\n<li>L\u00e4gg b\u00e4ren i en gryta tillsammans med \u00e4ppelpektin, pressad citron, socker och kanel.<\/li>\n<li>Koka marmeladen i cirka 10 minuter, till en temp mellan 103 &#8211; 107 grader. H\u00e4ll upp p\u00e5 heta, rena burkar. R\u00e4kna med att marmeladen beh\u00f6ver n\u00e5gra dagar p\u00e5 sig innan den f\u00e5r en bra konsistens. \u00c4ppelpektin kan variera i styrka s\u00e5 var beredd p\u00e5 att slutresultatet kan se lite olika ut mellan koken.
