V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Min lottengranne \u00e4r tveksam. Bondb\u00f6nor? Nej, det skulle han aldrig l\u00e4gga arbete p\u00e5. Hans minnen av bondb\u00f6nan \u00e4r en tunn, smakl\u00f6s v\u00e4lling. En sorts soppa som serverades n\u00e4r kassan var skral d\u00e5 f\u00f6r mycket l\u00e4nge sedan.<\/p>\n<p>Han har passerat 90 f\u00f6r ett antal \u00e5r sedan och har \u00e4gnat tiden \u00e5t annat \u00e4n att f\u00f6lja b\u00f6nans klassresa. Bondb\u00f6nan har f\u00e5tt ny status och placeras nu i gr\u00f6nsakernas \u00f6verklass. Och inte mig emot, den har en alldeles egen underbar smak och en f\u00e4rg som \u00e4r sinnebilden av gr\u00f6n.<\/p>\n<p>Men som alltid handlar mottagandet om hur en r\u00e5vara tillagas och serveras. Vattnig soppa st\u00e5r inte p\u00e5 min meny, men risotto! Hela processen \u00e4r en upplevelse och n\u00e4r den rykande heta sk\u00e5len s\u00e4tts p\u00e5 bordet blir allt lite b\u00e4ttre.<\/p>\n<p>N\u00e5gra ord p\u00e5 v\u00e4gen: en risotto ska vara r\u00e4tt l\u00f6s i konsistensen. Riset ska vara precis n\u00e4tt och j\u00e4mnt genomkokt med en yttepytte k\u00e4rna kvar. Inte knaprigt, men med konsistens. Den som v\u00e4ljer ett specialris f\u00f6r risotto beh\u00f6ver 18 \u2013 20 ost\u00f6rda minuter vid spisen. L\u00e5ngsamt r\u00f6ra samtidigt som riset sp\u00e4ds om och om igen med het buljong.<\/p>\n<p>Och viktigt, en risotto kan inte v\u00e4nta p\u00e5 matg\u00e4sterna. Det \u00e4r precis tv\u00e4rtom. De v\u00e4ntar med gaffeln i h\u00f6gsta hugg.<\/p>\n<p>S\u00e5 har vi bondb\u00f6norna. Jag befriar alltid varje b\u00f6na fr\u00e5n det sega skalet som omger den. Enkelt, men lite tidskr\u00e4vande. Sprita b\u00f6norna och l\u00e4gg dem n\u00e5gra sekunder i kokande saltat vatten. Lite som en stunds stilla meditation f\u00f6re servering.<\/figcaption><\/figure>\n<h2>Bondb\u00f6nrisotto<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>250 g spritade bondb\u00f6nor (cirka 1 kg med skidor)<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 dl olivolja<\/li>\n<li>4 dl risottoris<\/li>\n<li>2 dl vitt vin<\/li>\n<li>12 \u2013 15 dl rykande het kyckling- eller vegobuljong<\/li>\n<li>2 \u00bd dl riven lagrad ost<\/li>\n<li>1 gener\u00f6s klick sm\u00f6r<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<ol>\n<li>Koka upp l\u00e4ttsaltat vatten i en kastrull och l\u00e4gg i de spritade b\u00f6norna. Koka cirka 30 sekunder. Kyl genast och tryck sedan b\u00f6norna ur den sega hinnan. St\u00e4ll \u00e5t sidan.<\/li>\n<li>Hacka l\u00f6ken fint. Hetta upp olja i en tjockbottnad kastrull och l\u00e4gg i l\u00f6ken tillsammans med riset. Medelv\u00e4rme r\u00e4cker, inget ska brynas. R\u00f6r ett par minuter innan vinet h\u00e4lls p\u00e5.<\/li>\n<li>L\u00e5t vinet koka in under omr\u00f6rning och sp\u00e4d sedan med den heta buljongen. Lite i taget, r\u00f6r och sp\u00e4d, r\u00f6r och sp\u00e4d. H\u00e5ll koll p\u00e5 tiden och smaka av efter 17 minuter. K\u00e4rnan ska finnas d\u00e4r men bara anas. \u00c4r riset h\u00e5rt forts\u00e4tter du.<\/li>\n<li>L\u00e5t aldrig riset bli som en tjock gr\u00f6t, det ska vara n\u00e4st intill rinnande. Avsluta med att r\u00f6ra i bondb\u00f6norna, osten, en klick sm\u00f6r och dra ett par tag \u00f6ver med pepparkvarnen. L\u00e4gg upp i sk\u00e5lar och hasta till bordet. Hyvla eventuellt \u00f6ver lite extra ost vid bordet.<\/li>\n<\/ol>\n<p>\u00c5h, det gr\u00e4mer mig att det l\u00e5ter kr\u00e5ngligt, f\u00f6r det \u00e4r verkligen enkelt. Det som kr\u00e4vs \u00e4r n\u00e4rvaro.
