Olika som tv\u00e5 kan bli, men med r\u00e4tt behandling som gjorda f\u00f6r varandra. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Nu ljungar kantarellropen. Alla hittar och jublar. Alla utom jag. Skogens gula guld \u00e4r inte f\u00f6r mina \u00f6gon, men jag tar igen det med karljohan-, trattis- och trumpetsvampsegrar. N\u00e5ja, det finns storsinta och givmilda kantarelletare s\u00e5 jag blir inte utan.<\/p>\n<p>Det finns s\u00e5 m\u00e5nga s\u00e4tt att servera kantareller p\u00e5 och de flesta startar med att de ska stekas. L\u00e4nge var jag av den best\u00e4mda \u00e5sikten att de ska svettas i panna och \u00e5nga av sig innan sm\u00f6ret \u00e5ker i pannan, men jag har haft fel. Sm\u00f6ret ska i genast tillsammans med svampen. Det blir s\u00e5 mycket b\u00e4ttre.<\/p>\n<p>Svampen \u00e5ngar \u00e4nd\u00e5 och sl\u00e4pper v\u00e4tska tillsammans med sm\u00f6ret som ocks\u00e5 inneh\u00e5ller en del vatten, men samtidigt leder fettet v\u00e4rme, s\u00e4tter smak och ger f\u00e4rg. Ytan blir mycket finare och smaken definitivt b\u00e4ttre. Utan fett fastnar ofta en del av kantarellerna i botten p\u00e5 pannan och f\u00e5r en br\u00e4nd, lite besk ton. Perfekt att blanda med sm\u00f6r och krydd\u00f6rter.<\/figcaption><\/figure>\n<p>S\u00e5 var det vitl\u00f6ken. Ett r\u00e5tt vitl\u00f6kssm\u00f6r f\u00f6rtar lite av kantarellernas fina aromer. Nej, jag vill ha de fina milda n\u00e4stan lite s\u00f6ta tonerna fr\u00e5n rostad vitl\u00f6k. Jag halverar hela vitl\u00f6kar som f\u00e5r gona sig i ugnsv\u00e4rme tills de \u00e4r helt genom mjuka. Och d\u00e4r har kantarellerna f\u00e5tt en smakkompanjon. B\u00e5da trivs ihop med sm\u00f6r, persilja och timjan s\u00e5 de ska med. Och s\u00e5 har vi br\u00f6det. Rej\u00e4la skivor levain som f\u00e5tt en fin yta i stekpannan. Perfekt!<\/p>\n<p>Nu lagar vi mat.<\/p>\n<h2>Kantarellmacka med rostat vitl\u00f6kssm\u00f6r<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>400 g kantareller<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>4 skivor levain, surdegsbr\u00f6d<\/li>\n<li>Rostat vitl\u00f6kssm\u00f6r<\/li>\n<li>1 hel vitl\u00f6k<\/li>\n<li>1 liten knippa persilja<\/li>\n<li>timjan, repad f\u00e4rsk eller torkad<\/li>\n<li>100 g rumsvarmt sm\u00f6r<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<ol>\n<li>B\u00f6rja med att f\u00f6rbereda vitl\u00f6kssm\u00f6ret. S\u00e4tt ugnen p\u00e5 175 grader. Dela vitl\u00f6ken p\u00e5 mitten och l\u00e4gg den i en form. Ringla \u00f6ver lite olja, salta och st\u00e4ll in i ugn cirka 30 min tills den \u00e4r helt genom mjuk. L\u00f6ken ska inte ta f\u00e4rg och ett alternativ \u00e4r att sl\u00e5 in den i folie innan den l\u00e4ggs i ugnen. Ta ut och l\u00e5t svalna.<\/li>\n<li>Hacka persiljan grovt och repa blad fr\u00e5n ett par timjankvistar om du anv\u00e4nder f\u00e4rsk.<\/li>\n<li>Tryck ut den rostade, mjuka vitl\u00f6ken fr\u00e5n skalet och blanda med sm\u00f6r, persilja, timjan, salt och peppar.<\/li>\n<li>Rensa kantarellerna och dela stora exemplar. Stek till fin f\u00e4rg med sm\u00f6r i panna. Smaka av med salt och peppar.<\/li>\n<li>Rosta eller stek br\u00f6dskivorna.
