Passar till n\u00e4stan vad som helst och jag har redan hunnit plocka in den i \u00e5rets h\u00f6stmiddagar till f\u00e4rsbiffar, <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/havets-wallenbergare-valborgsmassogott\/\">Havets Wallenbergare<\/a> och en middag med <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/favoritratten-ugnsrostade-rotsaker\/\">ugnsrostade gr\u00f6nsaker<\/a> och<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/zucchinifritters-njut-av-storskorden\/\"> zucchinifritters<\/a>. Klicka p\u00e5 l\u00e4nkarna f\u00f6r recepten.<\/p>\n<p>Mycket kantareller blir det trots att jag \u00e4r en usel kantarellplockare. Torget och gener\u00f6sa grannar \u00e4r r\u00e4ddarna. Men jag ger inte upp och trots att de flyr mig i skogen \u00e4r vi b\u00e4sta v\u00e4nner n\u00e4r de hamnat i k\u00f6ket.<\/p>\n<p>Nytt l\u00e4r man sig hela tiden och \u00e5rets hack \u00e4r att kantareller ska stekas i sm\u00f6r fr\u00e5n start. F\u00f6rut har jag svettat bort v\u00e4tska i torr panna, men de vinner absolut p\u00e5 att sm\u00f6ret \u00e5ker i genast. V\u00e4rmen ska vara n\u00e5got h\u00f6gre \u00e4n medel, men inte f\u00f6r mycket.<\/p>\n<p>Och som sagt de passar till olika typer av r\u00e4tter och ihop med en hel del ingredienser. En liten inblick i n\u00e5gra av kantarellens smakkompanjoner kan se ut s\u00e5h\u00e4r: dill, krondill, persilja, g\u00f6s, abborre, kr\u00e4ftor, vitl\u00f6k, l\u00f6k, bacon, lagrad ost, sm\u00f6r, gr\u00e4dde, vitt vin, kron\u00e4rtskocka, kanel, kryddnejlika, kryddpeppar, timjan, rosmarin, viltk\u00f6tt och m\u00e5nga fler.<\/p>\n<p>Men nu lagar vi mat. F\u00e4rsbiffar \u00e4r gott, men s\u00e5sen kan som sagt serveras till andra grejer : )<\/p>\n<h2>Kantarells\u00e5s till f\u00e4rsbiffar, eller annat<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>500 g vilt-, n\u00f6t- eller blandf\u00e4rs<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>2 skivor vitt formbr\u00f6d<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 dl gr\u00e4dde<\/li>\n<li>1 msk koncentrerad vilt- eller oxfond<\/li>\n<li>1 nypa malen kryddpeppar<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>Kantarells\u00e5s<\/h4>\n<ul>\n<li>300 g kantareller, cirka 1 liter<\/li>\n<li>1 schalottenl\u00f6k<\/li>\n<li>1 dl vitt vin<\/li>\n<li>2 dl cr\u00e8me fraiche<\/li>\n<li>1 dl vatten<\/li>\n<li>1 msk koncentrerad gr\u00f6nsaks- eller k\u00f6ttfond<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<ol>\n<li>Finhacka l\u00f6ken till f\u00e4rsbiffarna. Stek den p\u00e5 l\u00e5g v\u00e4rme till den b\u00f6rjar ta f\u00e4rg. L\u00e5t svalna.<\/li>\n<li>Mixa br\u00f6dskivorna till smulor.<\/li>\n<li>L\u00e4gg f\u00e4rsen i en sk\u00e5l tillsammans med stekt l\u00f6k, br\u00f6dsmulor, \u00e4gg, gr\u00e4dde, fond, kryddpeppar, salt och peppar. Blanda och forma biffar. Stek till fin f\u00e4rg och st\u00e4ll sedan in i ugnen p\u00e5 150 grader cirka 10 minuter tills de \u00e4r genomstekta.<\/li>\n<li>Rensa kantarellerna noga. Riv st\u00f6rre exemplar i bitar. Hacka l\u00f6ken fint.<\/li>\n<li>L\u00e4gg svampen tillsammans med en klick sm\u00f6r i en stekpanna. L\u00e5t \u00e5ngan fr\u00e4sa bort och n\u00e4r svampen b\u00f6rjar brynas l\u00e4ggs l\u00f6khacket i. Fr\u00e4s till fin f\u00e4rg innan vinet h\u00e4lls i pannan. L\u00e5t vinet koka in n\u00e5got innan cr\u00e8me fraiche r\u00f6rs i tillsammans med vatten och fond.<\/li>\n<li>Sm\u00e5puttra svampen 10 minuter. Mixa s\u00e5sen grovt s\u00e5 att sm\u00e5 bitar finns kvar. Smaka av med salt och peppar. Ta eventuellt undan n\u00e5gra fina kantareller till uppl\u00e4ggning.<\/li>\n<\/ol>\n<p>Servera s\u00e5sen tillsammans med f\u00e4rsbiffar, potatis och r\u00e5r\u00f6rda lingon. Eller till n\u00e5got helt annat. Allt gott!
