Idag helt en fr\u00e5ga om smak och det beh\u00f6vs bara n\u00e5gra puffar f\u00f6r att f\u00e5 ett fint resultat. En sorts ytlig kryddning som g\u00e5r p\u00e5 ett par minuter.<\/p>\n<p>Det finns m\u00e5nga v\u00e4gar att addera r\u00f6ksmak: Under lock p\u00e5 grillen, olika essanser, r\u00f6ksalt och annat, men jag gillar tanken p\u00e5 \u00e4kta rykande enris. Lite extra jobb, men ocks\u00e5 en happening strax innan maten st\u00e5r p\u00e5 bordet.<\/p>\n<p>Viltf\u00e4rs \u00e4r oftare fastare i konsistensen \u00e4n annan f\u00e4rs. F\u00e4rsen \u00e4r i regel mycket magrare och s\u00e4kert har det med det vilda livet i skogen och m\u00f6rningsprocessen att g\u00f6ra. H\u00e5ll er under k\u00f6ksfl\u00e4kten f\u00f6r att inte sprida r\u00f6ken. Enriset ska bara t\u00e4ndas p\u00e5 och b\u00f6rja ryka innan grytlockat l\u00e4ggs p\u00e5 s\u00e5 det finns ingen brandfara.<\/p>\n<h2>L\u00e4ttr\u00f6kta viltf\u00e4rsbiffar med spetsk\u00e5l<\/h2>\n<p>4 personer<\/p>\n<p><strong>L\u00e4ttr\u00f6kta viltf\u00e4rsbiffar<\/strong><\/p>\n<ul>\n<li>500 g r\u00e5djursf\u00e4rs<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>2 skivor vitt formbr\u00f6d<\/li>\n<li>1 dl cr\u00e8me fraiche<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 \u00bd msk koncentrerad vilt- eller oxfond<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>ett par sm\u00e5 kvistar enb\u00e4rsris till r\u00f6kning<\/li>\n<\/ul>\n<h4>Oststuvad spetsk\u00e5l<\/h4>\n<ul>\n<li>1 litet huvud spetsk\u00e5l<\/li>\n<li>1 \u00bd dl gr\u00e4dde<\/li>\n<li>1 dl riven, lagrad ost<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>eventuellt fint hackad persilja<\/li>\n<\/ul>\n<ol>\n<li>L\u00e4gg r\u00e5djursf\u00e4rsen i en bunke. Skala och hacka l\u00f6ken riktigt fint. Stek den p\u00e5 relativt l\u00e5g v\u00e4rme tills den precis b\u00f6rjar ta f\u00e4rg. St\u00e4ll att svalna n\u00e5got.<\/li>\n<li>K\u00f6r br\u00f6dskivorna till smulor i en mixer. Blanda alla f\u00e4rsens ingredienser. Forma 8 biffar och ge dem en stekyta innan de s\u00e4tts in i ugnen p\u00e5 100 grader.<\/li>\n<li>Sk\u00e4r spetsk\u00e5len i klyftor. Salta och stek i olja till fin f\u00e4rg. H\u00e4ll p\u00e5 gr\u00e4dden och l\u00e5t k\u00e5len sm\u00e5puttra tills gr\u00e4dden tjocknar n\u00e5got. R\u00f6r i osten och smaka av med salt och peppar.<\/li>\n<li>Ta biffarna ut ugnen. L\u00e4gg i en gryta tillsammans med enriset. T\u00e4nd p\u00e5 riset och l\u00e4gg p\u00e5 locket. L\u00e5t st\u00e5 n\u00e5gra minuter.<\/li>\n<li>Servera biffarna p\u00e5 en b\u00e4dd av den stuvade k\u00e5len g\u00e4rna tillsammans het, s\u00f6tsyrlig chutney av n\u00e5got slag.
