Det h\u00e4r \u00e4ter jag g\u00e4rna n\u00e4r- och varsomhelst. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Nu \u00e4r det sista rycket. V\u00e4xthusen ska s\u00e5ptv\u00e4ttas och allt plockas av. Det \u00e4r h\u00f6st och komposten \u00e4r snart kn\u00f6kfull av sommarens plantor. Aubergine, paprika, tomater, chili och squash har gjort sitt f\u00f6r i \u00e5r. Och de har banne mig gjort det bra.<\/p>\n<p>Inte en dag har g\u00e5tt utan att jag skattat plantorna p\u00e5 solmogna, f\u00e4rgsprakande juveler. Vi har \u00e4tit oss m\u00e4tta p\u00e5 det b\u00e4sta man kan \u00f6nska sig. Men nu \u00e4r det slut.<\/p>\n<p>Frysen \u00e4r laddad och i k\u00f6ket st\u00e5r stora fat med \u00e5rets sista sk\u00f6rd. Den ska anv\u00e4ndas med omsorg och idag blir det frukost till middag.<\/p>\n<h2>Shakshuka \u2013 mustigt, vegetariskt<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>1 gul l\u00f6k<\/li>\n<li>4 vitl\u00f6ksklyftor<\/li>\n<li>1 medelstark chili<\/li>\n<li>1 aubergine<\/li>\n<li>1 paprika, r\u00f6d eller gul<\/li>\n<li>1 liten squash<\/li>\n<li>750 g k\u00f6rsb\u00e4rstomater<\/li>\n<li>\u00bd tsk spiskummin<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<li>4 \u00e4gg<\/li>\n<li>hackad persilja<\/li>\n<\/ul>\n<ol>\n<li>Finhacka l\u00f6k och vitl\u00f6k. Hacka ocks\u00e5 chilifrukten fint. Smaka eventuellt en liten bit f\u00f6r att avg\u00f6ra styrkan.<\/li>\n<li>Sk\u00e4r aubergine, paprika och squash i t\u00e4rningar. Halvera tomaterna.<\/li>\n<li>Fr\u00e4s l\u00f6k och vitl\u00f6k i olja. R\u00f6r i chili, aubergine, paprika och squash. Fr\u00e4s p\u00e5 medelv\u00e4rme n\u00e5gra minuter innan tomaterna f\u00e5r f\u00f6lja med. Krydda med spiskummin, salt och peppar innan r\u00f6ran f\u00e5r koka ihop till h\u00f6g smak.<\/li>\n<li>G\u00f6r fyra gropar i r\u00f6ran f\u00f6r \u00e4ggen och kn\u00e4ck i dem. L\u00e5t st\u00e5 kvar p\u00e5 plattan tills \u00e4ggen f\u00e5tt \u00f6nskad konsistens. Str\u00f6 persilja \u00f6ver och servera gr\u00f6nsaksr\u00f6ran med gott br\u00f6d.<\/li>\n<\/ol>\n<p>Ofta \u00e4ter vi Shakshuka precis s\u00e5h\u00e4r, men den som vill g\u00f6ra till\u00e4gg kan t\u00e4nka oliver och n\u00e5gon smulad ost typ feta eller den mildare salladsosten.<\/p>\n<p>Ratatouille \u00e4r en fransk gr\u00f6nsaksr\u00f6ra med i princip samma grundgr\u00f6nsaker. \u00c4r du nyfiken p\u00e5 den s\u00e5 <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/ratatouille-laga-en-klassiker-av-din-squash\/\">kika p\u00e5 receptet h\u00e4r<\/a>.
