Och idag bjuds en fantastisk fransk l\u00f6kpaj. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>L\u00f6k, v\u00e5r allra mest p\u00e5litliga trotj\u00e4nare. St\u00e4ller alltid upp som grunden i n\u00e4stan varje recept, men som huvudrollsinnehavare inte lika ofta. Tills idag.<\/p>\n<p>M\u00e4ngden l\u00f6k, 6 stycken kan l\u00e5ta mycket, men tricket \u00e4r att plocka fram s\u00e4rskilda egenskaper och h\u00e4r handlar det om umami. Och nu blir det paj.<\/p>\n<h2>Fransk l\u00f6kpaj<\/h2>\n<p>8 bitar<\/p>\n<h4>Pajdeg<\/h4>\n<ul>\n<li>150 g kallt sm\u00f6r<\/li>\n<li>3 dl vetemj\u00f6l<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>\u00bd &#8211; 1 msk vatten<\/li>\n<\/ul>\n<h4>Fyllning<\/h4>\n<ul>\n<li>6 gula l\u00f6kar, eller 8 bananschalottenl\u00f6kar<\/li>\n<li>2 dl cr\u00e8me fraiche<\/li>\n<li>1 dl mj\u00f6lk eller gr\u00e4dde<\/li>\n<li>3 \u00e4gg<\/li>\n<li>175 g grovt riven gruyereost, eller svensk h\u00e5rdost<\/li>\n<li>\u00bc tsk timjan<\/li>\n<\/ul>\n<ol>\n<li>Mixa eller nyp snabbt ihop ingredienserna till pajdegen. L\u00e5t vila i kyl minst en halvtimma.<\/li>\n<li>Kavla ut degen tunt och kl\u00e4 en pajform, g\u00e4rna en med avtagbar kant. Nagga degen i botten med en gaffel. S\u00e4tt in hela formen i frysen 30 minuter. Det minskar risken att pajskalet sjunker ihop i ugnen.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 225 grader. F\u00f6rgr\u00e4dda det frusna pajskalet till fin f\u00e4rg cirka 10 minuter.<\/li>\n<li>Dela, skala och skiva l\u00f6ken tunt. Stek till fin f\u00e4rg p\u00e5 medelv\u00e4rme. L\u00e5t det ta tid, d\u00e5 utvecklas aromerna b\u00e4st.<\/li>\n<li>Blanda fyllningens \u00f6vriga ingredienser, men spara en del av osten att str\u00f6 p\u00e5 toppen.<\/li>\n<li>L\u00e4gg l\u00f6ken i pajskalet, h\u00e4ll \u00f6ver fyllningen och toppa med lite av den rivna osten.<\/li>\n<li>Gr\u00e4dda pajen cirka 30 minuter.
