Grytk\u00f6ttet \u00e4r speciellt. Det ska v\u00e4ljas med omsorg och g\u00e4rna fr\u00e5n bitar som inte \u00e4r m\u00f6ra i sig sj\u00e4lva. Tro det eller ej, men det \u00e4r hinnor och senor som g\u00f6r grytan m\u00f6r.<\/p>\n<p>De hemliga ingredienserna \u00e4r fuktig v\u00e4rme och l\u00e5ng tid. D\u00e5 omvandlas det sega fr\u00e5n h\u00e5rt kollagen till mjukt gelatin. Det drar \u00e5t sig fukt och smak och varje tugga blir s\u00f6nderfallande m\u00f6r. Magi p\u00e5 k\u00f6ksniv\u00e5.<\/p>\n<p>B\u00e4sta grytbitarna till ett mustigt l\u00e5ngkok kommer fr\u00e5n bogar, bringa, h\u00f6grev eller fr\u00e5n l\u00e4gg. M\u00f6jligen fr\u00e5n ytterl\u00e5r, men jag tycker det \u00e4r lite knepigare.<\/p>\n<p>Till det kommer ett par korta, men viktiga gryttips. Bryn k\u00f6ttet innan det l\u00e4ggs i grytan och g\u00f6r g\u00e4rna samma sak med rotsakerna. En fin stekyta kommer att dela med sig av ljuvliga smaker.<\/p>\n<p>Sk\u00e4r k\u00f6ttet i ungef\u00e4r lika stora bitar s\u00e5 att de blir f\u00e4rdiga samtidigt.<\/p>\n<p>Dags att laga mat!<\/p>\n<h2>Svampdoftande viltgryta<\/h2>\n<p>6 \u2013 8 personer<\/p>\n<ul>\n<li>1,2 kg framdelsk\u00f6tt av vilt, \u00e4lg eller hjort, putsat<\/li>\n<li>2 l\u00f6kar, hackade<\/li>\n<li>2 vitl\u00f6ksklyftor, finhackade<\/li>\n<li>1 stor morot, t\u00e4rnad<\/li>\n<li>\u00bd rotselleri, t\u00e4rnad<\/li>\n<li>2 msk tomatpur\u00e9<\/li>\n<li>20 g torkad, smulad karljohansvamp, eller 2 &#8211; 3 f\u00e4rska<\/li>\n<li>3 dl r\u00f6tt vin<\/li>\n<li>1 dl sherry<\/li>\n<li>2 msk koncentrerad vilt- eller oxfond<\/li>\n<li>2 dl vatten<\/li>\n<li>6 enb\u00e4r, grovt krossade<\/li>\n<li>purjol\u00f6k, f\u00e4rsk timjan, f\u00e4rsk rosmarin, lagerblad och persiljestj\u00e4lkar i en ihopbunden kryddbukett, eller motsvarande torkade kryddor<\/li>\n<li>svartpeppar<\/li>\n<li>salt<\/li>\n<\/ul>\n<ol>\n<li>Sk\u00e4r k\u00f6ttet i t\u00e4rningar. Salta, peppra och stek till fin f\u00e4rg.<\/li>\n<li>Fr\u00e4s l\u00f6k, vitl\u00f6k, morot och selleri i gryta p\u00e5 medelv\u00e4rme. L\u00e5t det ta tid s\u00e5 att smakerna utvecklas. Klicka i tomatpur\u00e9n och fr\u00e4s vidare i n\u00e5gra minuter innan k\u00f6ttet l\u00e4ggs i.<\/li>\n<li>R\u00f6r i svampen. Anv\u00e4nds f\u00e4rsk karljohan ska den t\u00e4rnas och stekas till fin f\u00e4rg innan den hamnar i grytan. H\u00e4ll p\u00e5 vin och sherry. Puttra i 10 minuter innan fond och vatten h\u00e4lls p\u00e5.<\/li>\n<li>L\u00e4gg ner enb\u00e4r och \u00f6rtkryddor. L\u00e5t sedan grytan puttra p\u00e5 l\u00e5g v\u00e4rme minst tv\u00e5 timmar.<\/li>\n<li>Testa k\u00f6ttet som ska vara riktigt m\u00f6rt. Om inte, l\u00e5t det puttra vidare. Ta eventuellt av locket p\u00e5 slutet och l\u00e5t lite av v\u00e4tskan \u00e5nga bort. Grytan ska vara riktigt mustig.
