V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>L\u00f6k &#8211; igen och igen konstaterar jag att det \u00e4r en r\u00e5vara som g\u00f6r livet b\u00e4ttre. S\u00e4g en dag n\u00e4r du inte plockar upp en l\u00f6k, skalar, hackar och skivar. \u00d6verallt \u00e4r den med i bakgrunden, men allt oftare ger jag den en v\u00e4lf\u00f6rtj\u00e4nt huvudroll.<\/p>\n<p>Stinget i den r\u00e5a \u00e4r bara en sida. Den andra \u00e4r mustig och s\u00f6t. Under skalet d\u00f6ljer sig en st\u00f6rre m\u00e4ngd socker \u00e4n man kanske tror och idag l\u00e4gger vi till \u00e4nnu mer. Det ska bli marmelad.<\/p>\n<p>Inget att ha p\u00e5 frukostmackan, men ett perfekt tillbeh\u00f6r till olika k\u00f6ttr\u00e4tter och till ost. H\u00e4r till ugnsbakad, l\u00e4tt rinnig brie. En enkel variant g\u00e5r fint. B\u00e4ttre sorter f\u00f6rlorar i smak n\u00e4r de hamnar i ugnsv\u00e4rme. Vi \u00e4r ute efter det milda, kr\u00e4miga.<\/p>\n<h2>R\u00f6dl\u00f6ksmarmelad<\/h2>\n<p>liten burk, cirka 15 cl<\/p>\n<ul>\n<li>3 \u2013 4 r\u00f6da l\u00f6kar<\/li>\n<li>1 dl socker + 2 msk vatten<\/li>\n<li>3 msk sherryvin\u00e4ger<\/li>\n<li>1 nypa salt<\/li>\n<li>1 nypa rosmarin eller en kvist<\/li>\n<\/ul>\n<ol>\n<li>Halvera och skala l\u00f6karna. Hacka dem fint.<\/li>\n<li>H\u00e4ll socker och vatten i en tjockbottnad kastrull. V\u00e4rm tills sockret b\u00f6rjar bubbla, f\u00e5r en ljust brun f\u00e4rg och doftar karamell. H\u00e4ll i l\u00f6khacket tillsammans med vin\u00e4ger, salt och rosmarin.<\/li>\n<li>L\u00e5t sm\u00e5puttra p\u00e5 l\u00e5g v\u00e4rme upp till en halvtimma. L\u00f6ken ska bli helt mjuk. Tills\u00e4tt eventuellt n\u00e5gon extra matsked vatten om det blir torrt i pannan. Konsistensen ska vara marmeladaktig.<\/li>\n<li>Servera g\u00e4rna med ugnsbakad, hel brieost som f\u00e5r en kr\u00e4mig, halvrinnande konsistens efter 8 &#8211; 10 minuter i 200 graders ugnsv\u00e4rme.
