Ig\u00e5r avhandlades f\u00f6rr\u00e4tten<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/nyarets-forratt-doftar-hav\/\"> i inl\u00e4gget h\u00e4r<\/a> och idag blir det k\u00f6tt till varmr\u00e4tten.<\/p>\n<p>Jag har tre f\u00f6rslag. Salta, peppra och stek det till fin f\u00e4rg innan det v\u00e4nds f\u00f6r att f\u00e5 stekyta p\u00e5 andra sidan. S\u00e4nk temperaturen n\u00e5got och v\u00e4nd k\u00f6ttet flera g\u00e5nger. Prova g\u00e4rna innertemperaturen som ligger runt 57 grader f\u00f6r medium. L\u00e4gg k\u00f6ttet p\u00e5 en sk\u00e4rbr\u00e4da f\u00f6r att vila innan det sk\u00e4rs upp.<\/li>\n<li>Sm\u00e4lt sm\u00f6ret till s\u00e5sen.<\/li>\n<li>Finhacka l\u00f6ken och koka den ett par minuter tillsammans med vin\u00e4ger, vatten och eventuellt stj\u00e4lkar fr\u00e5n dragon och persilja. Sila upp i en ny kastrull.<\/li>\n<li>S\u00e4tt kastrullen i ett vattenbad eller direkt p\u00e5 medelvarm platta och vispa ner \u00e4ggulorna i vin\u00e4gerreduktionen. N\u00e4r blandningen blir fluffig och b\u00f6rjar tjockna droppas sm\u00f6ret ner lite i taget under kraftig vispning.<\/li>\n<li>Smaka av med salt och cayennepeppar och r\u00f6r i \u00f6rterna.<\/li>\n<li>Fr\u00e4s upp tomatpur\u00e9 och sm\u00f6r under n\u00e5gon minut.
