V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>R\u00e5tt k\u00f6tt!? Jag vet att m\u00e5nga ryggar och aldrig n\u00e5gonsin skulle kunna t\u00e4nka sig, medan andra tv\u00e4rtom jublar. En sak \u00e4r s\u00e4ker det h\u00e4r \u00e4r mat som kr\u00e4ver en fantastisk r\u00e5vara, riktigt vass kniv och fink\u00e4nsla.<\/p>\n<p>Ni som g\u00e5r p\u00e5 krogen har s\u00e4kert m\u00e4rkt att det h\u00e4r \u00e4r en trend. P\u00e5 alltfler st\u00e4llen serveras r\u00e5tt k\u00f6tt i sm\u00e5 portioner. Jag snackade med k\u00f6ksm\u00e4staren Johan Bjurstr\u00f6m som f\u00f6rra \u00e5ret kunde h\u00f6ja n\u00e4ven efter att ha vunnit pris f\u00f6r \u00c5rets viltkrog. En kille som kan k\u00f6tt. \u00c4mnet var just r\u00e5biff och h\u00e4r kommer n\u00e5gra av hans tips.<\/p>\n<ul>\n<li>Till r\u00e5biff g\u00e4ller absolut toppklass p\u00e5 r\u00e5varan, annars kan det vara. Enklast \u00e4r att utg\u00e5 fr\u00e5n k\u00f6ttdetaljer som \u00e4r naturligt fria fr\u00e5n bindv\u00e4v och senor som fil\u00e9, innanl\u00e5r eller biff.<\/li>\n<li>Precis nymalt k\u00f6tt g\u00e5r bra, men \u00e4nnu hellre oerh\u00f6rt tunna skivor eller sm\u00e5tt t\u00e4rnat. Malt kan bli lite mosigt.<\/li>\n<li>Presentationen p\u00e5 tallriken spelar stor roll. Det ska k\u00e4nnas s\u00e5 l\u00e5ngt fr\u00e5n grovt och primitivt som m\u00f6jligt. Mycket omsorg p\u00e5 vacker uppl\u00e4ggning allts\u00e5. Och det ska vara sm\u00e5 portioner k\u00f6tt. R\u00e4kna med 70 g per person.<\/li>\n<li>V\u00e5ga experimentera med smaker. Klassisk r\u00e5biff med l\u00f6k, r\u00f6dbeta, kapris och \u00e4ggula \u00e4r mycket gott, men prova asiatiska smaker eller andra kombinationer. R\u00e5biffen klarar mycket smak helt enkelt.<\/li>\n<\/ul>\n<p>Vad s\u00e4ger ni, t\u00f6rs vi? H\u00e4r kommer mitt recept p\u00e5 en r\u00e4tt med asiatiskt tema. Gott kan jag lova. Jag anv\u00e4nde \u00e4lg, men oxfil\u00e9, innanl\u00e5r av n\u00f6t eller n\u00f6tbiff fungerar utm\u00e4rkt bra.<\/p>\n<p><strong>Och obs!<\/strong> R\u00e5tt k\u00f6tt \u00e4r en av de r\u00e5varor gravida f\u00e5r v\u00e4nta med. Under tiden festar vi andra.<\/p>\n<h2>R\u00e5biff med asiatiska smaker<\/h2>\n<p>4 personer<\/p>\n<p>cirka 280 g fil\u00e9, innanl\u00e5r eller biff av vilt eller n\u00f6t<\/p>\n<h4>Snabbpicklad gurka<\/h4>\n<p>1 msk \u00e4ttika (12 %)<\/p>\n<p>2 msk socker<\/p>\n<p>3 msk vatten<\/p>\n<p>en nypa chiliflakes<\/p>\n<p>\u00bd gurka, urk\u00e4rnad, skuren i strimlor<\/p>\n<p>1 liten schalottenl\u00f6k, fint hackad<\/p>\n<h4><strong>Asiatisk dressing<\/strong><\/h4>\n<p>\u00bd dl japansk soja<\/p>\n<p>1 \u00bd msk saft fr\u00e5n lime<\/p>\n<p>1 tsk sesamolja<\/p>\n<p>1 liten vitl\u00f6ksklyfta, riven<\/p>\n<p>1 tsk f\u00e4rsk ingef\u00e4ra, riven<\/p>\n<h4>Chilimajonn\u00e4s<\/h4>\n<p>1 \u00bd dl majonn\u00e4s, g\u00e4rna hemmagjord<\/p>\n<p>2 &#8211; 3 tsk srirachas\u00e5s, het chilis\u00e5s<\/p>\n<h4>Till servering<\/h4>\n<p>1 salladsl\u00f6k, fint skivad<\/p>\n<p>1 \u00bd msk sesamfr\u00f6n, torrostade<\/p>\n<p>f\u00e4rsk koriander<\/p>\n<ol>\n<li>Putsa k\u00f6ttet och sk\u00e4r det i l\u00f6vtunna skivor.<\/li>\n<li>Blanda \u00e4ttika, socker och vatten tills sockret sm\u00e4lter. L\u00e4gg i gurka och finhackad schalottenl\u00f6k.<\/li>\n<li>Blanda ingredienserna till dressingen.<\/li>\n<li>Blanda majonn\u00e4sen med srirachas\u00e5s. Ta lite i taget av chilis\u00e5sen och avg\u00f6r styrkan.<\/li>\n<li>L\u00e4gg upp k\u00f6ttet p\u00e5 tallrikar. L\u00e5t gurkan och l\u00f6ken rinna av ordentligt innan den f\u00f6rdelas \u00f6ver k\u00f6ttet.<\/li>\n<li>Skeda lite av dressingen \u00f6ver tallrikarna och servera resten bredvid.
