Och knappast godare. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Allt kan g\u00f6ras till en konst. Ett omhuldat hantverk omg\u00e4rdat av regler och komplicerade moment. Med stor respekt f\u00f6r dem som ut\u00f6var den ursprungliga processen i alla dess delar vill jag visa hur enkelt det kan vara och g\u00f6ra en pastadeg p\u00e5 n\u00e5gra f\u00e5 minuter.<\/p>\n<p>En bra deg. Tv\u00e5 ingredienser och minimalt med arbete.<\/p>\n<p>Alla har sett de vackra h\u00f6garna med mj\u00f6l och kratern med \u00e4gg i mitten. L\u00e5ngsamt vispas mj\u00f6let in i \u00e4gget tills de tv\u00e5 bildar en smulig deg som ska kn\u00e5das l\u00e4nge. Trevligt. Kontemplativt. Den vita mj\u00f6lvulkanen med en \u00e4ggfylld krater. Den som vill g\u00f6r s\u00e5h\u00e4r och vispar in mj\u00f6let i \u00e4ggsmeten tills det blir en smulig deg. Sedan \u00e4r det bara att kn\u00e5da. Ofta g\u00f6rs det h\u00e4r direkt p\u00e5 bakbordet, men det blir l\u00e4tt kladdigt. Anv\u00e4nd en sk\u00e5l vetja : )<\/figcaption><\/figure>\n<p>Maten ska p\u00e5 bordet och i fj\u00e4rran f\u00f6rsvinner id\u00e9n om ursprungligt hantverk och ist\u00e4llet grabbar man en f\u00f6rpackning f\u00e4rsk pasta i kyldisken. Tills nu n\u00e4r jag testade en snabb fulvariant.<\/p>\n<p>Ingredienserna \u00e5kte ner i matberedaren som fick ihop en deg p\u00e5 n\u00e5gra sekunder. Sedan kn\u00e5dade jag vidare f\u00f6r hand tills degen blev smidig och allt som allt tog det cirka 10 min. Efter det ska degen vila, minst en timme. Jag snor ihop ihop den p\u00e5 morgonen och har en perfekt deg klar n\u00e4r det \u00e4r dags att \u00e4ta. Vattnet kokar upp samtidigt som jag vevar pastamaskinen.<\/p>\n<p>Ingredienslistan \u00e4r kort: mj\u00f6l och \u00e4gg. Det finns m\u00e5nga skolor h\u00e4r med varianter p\u00e5 mj\u00f6lsorter, malning och annat, men jag k\u00f6r p\u00e5 vanligt vete special som har en h\u00f6g proteinhalt.<\/p>\n<p>Grundregeln \u00e4r att degen g\u00f6rs p\u00e5 1 \u00e4gg till 100 g mj\u00f6l. M\u00e5nga l\u00e4gger till salt, vatten och olja, men jag skippar det. M\u00f6jligen om degen verkar f\u00f6r torr och h\u00e5rd l\u00e4gger jag till 1 extra \u00e4ggula eller en skv\u00e4tt olivolja, oftast inte.<\/p>\n<p>Har du en pastamaskin \u00e4r sj\u00e4lva utbakningen enkel. Dela degen i tv\u00e5 bitar och k\u00f6r f\u00f6rst ett par, tre g\u00e5nger p\u00e5 inst\u00e4llningen som ger den tjockaste degplattan. Minska sedan med ett sn\u00e4pp i taget tills du \u00e4r n\u00f6jd med tjockleken. F\u00f6r tagliatelle tycker jag det blir bra n\u00e4r man skymtar handen genom degen. Med pastamaskin \u00e4r tagliatellen skuren och klar p\u00e5 ett kick.<\/p>\n<p>Det g\u00e5r absolut att kavla f\u00f6r hand och sk\u00e4ra degen. Lite knepigt att f\u00e5 den j\u00e4mntjock, men ingen tvekan om att det g\u00e5r. Dusta med mj\u00f6l mellan varven.<\/p>\n<h2>F\u00e4rsk pasta<\/h2>\n<p>4 personer<\/p>\n<p>400 g vetemj\u00f6l special<\/p>\n<p>4 \u00e4gg (eventuellt + 1 \u00e4ggula)<\/p>\n<ol>\n<li>L\u00e4gg ingredienserna i matberedaren. K\u00f6r ihop till en deg. K\u00e4nns degen h\u00e5rd l\u00e4gger du till en \u00e4ggula.<\/li>\n<li>Kn\u00e5da degen smidig. Plasta och l\u00e5t vila i kyl minst en timme.<\/li>\n<li>Kavla i maskin eller f\u00f6r hand. V\u00e4lj \u00f6nskad pastaform p\u00e5 maskinen eller vik degen och sk\u00e4r.<\/li>\n<li>Den som g\u00f6r tagliatelle ska pudra den f\u00e4rdiga pastan med mj\u00f6l och l\u00e4gga den luftigt s\u00e5 att det inte klibbar ihop.<\/li>\n<li>L\u00e4gg i kokande riktigt salt vatten och koka 1 \u00bd &#8211; 2 minuter.<\/li>\n<\/ol>\n<p>Sv\u00e5rare \u00e4r det inte och det blir verkligen bra. Idag kommer v\u00e5r tagliatelle presenteras som carbonara med stekta fl\u00e4skt\u00e4rningar, \u00e4ggula, rikligt med riven ost och v\u00e5gade m\u00e4ngder grovt krossad svartpeppar. Allt gott!
