Men jag lovar. Hur bra som helst! V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det \u00e4r l\u00e4tt att fastna i t\u00e4nket. Fr\u00e5ga n\u00e5gon vad de associerar med havre och du f\u00e5r svar som h\u00e4stk\u00e4k, vajande s\u00e4desf\u00e4lt, julk\u00e4rvar, morgongr\u00f6t och sylt. Sen tar det stopp. Eller ja, havremj\u00f6lk kanske, men h\u00e4r kommer en helt annan variant. Nu blir det en havreotto med risotto som f\u00f6rebild.<\/p>\n<p>Idag handlar det om havrekross, allts\u00e5 inte gryn. Det \u00e4r precis som det l\u00e5ter, havren skalas, behandlas i \u00e5nga och klipps i bitar. Ingenting tillf\u00f6rs eller tas bort. Definitivt en r\u00e5vara att l\u00e4gga p\u00e5 minnet. Passar mycket och blir helt suv\u00e4ren gr\u00f6t.<\/figcaption><\/figure>\n<p>Gryn tillagas p\u00e5 n\u00e5gon minut, men krosset \u00e4r h\u00e5rdare och beh\u00f6ver lite mer tid. Strukturen finns kvar och det ger en perfekt konsistens till min havreotto.<\/p>\n<p>Kanske k\u00e4nns det konstigt att g\u00f6ra en salt r\u00e4tt av n\u00e5got som f\u00f6rknippas med sylt, men inte alls. I grunden har havre en neutral, mild lite n\u00f6tig smak som g\u00e5r att kombinera p\u00e5 m\u00e5nga s\u00e4tt.<\/p>\n<p>Mitt matt\u00e4nk har alltid god smak som prio, men visst \u00e4r det en bonus med n\u00e4rodlat och h\u00e4lsof\u00f6rdelar. <a href=\"https:\/\/www.livsmedelsverket.se\/globalassets\/publikationsdatabas\/broschyrer-foldrar\/vad-ar-nyttiga-och-onyttiga-kolhydrater.pdf\">Havre \u00e4r en kolesterols\u00e4nkare av rang och det \u00e4r faktiskt bevisat : )<\/a><\/p>\n<p>Jag vill ha den med en smak av prim\u00f6rer och plockade rej\u00e4lt med sparris och gr\u00e4sl\u00f6k. God buljong, eventuellt en skv\u00e4tt vitt vin, lagrad ost och en klick sm\u00f6r beh\u00f6vs dessutom. Och s\u00e5h\u00e4r g\u00e5r det till.<\/p>\n<h2>Havreotto med sparris<\/h2>\n<p>2 portioner<\/p>\n<p>1 schalottenl\u00f6k<\/p>\n<p>1 \u00bd dl havrekross<\/p>\n<p>4 \u2013 5 dl gr\u00f6nsaks- eller kycklingbuljong<\/p>\n<p>(eventuellt \u00bd dl vitt vin)<\/p>\n<p>1 knippa sparris<\/p>\n<p>1\/2 knippa gr\u00e4sl\u00f6k<\/p>\n<p>1 dl lagrad ost, riven<\/p>\n<p>1 klick sm\u00f6r<\/p>\n<ol>\n<li>Hacka l\u00f6ken fint och svetta den i en kastrull med olja eller sm\u00f6r.<\/li>\n<li>R\u00f6r ner havrekrosset och h\u00e4ll p\u00e5 vin om du vill ha det tillsammans med drygt h\u00e4lften av buljongen. R\u00f6r om och l\u00e5t sm\u00e5puttra. Fyll p\u00e5 med mer buljong allt eftersom v\u00e4tskan kokar in.<\/li>\n<li>Koka upp saltat vatten i en kastrull. Bryt av nedersta delen av sparrisstj\u00e4lkarna och skiva stj\u00e4lkarna tunt, men l\u00e4mna knopparna hela. Koka sparrisen s\u00e5 att den har en viss sp\u00e4nst kvar. H\u00e4ll av.<\/li>\n<li>Sk\u00e4r gr\u00e4sl\u00f6ken fint.<\/li>\n<li>Smaka av havrekrosset efter 10 minuter. Det ska vara tillagat, men absolut ha en k\u00e4rna kvar. Det f\u00e5r inte bli gr\u00f6t. K\u00e4nns den fortfarande f\u00f6r h\u00e5rd \u00e4r det bara att sp\u00e4da med mer buljong och koka till den k\u00e4nns bra. Havreotto ska precis som risotto vara l\u00f6sare \u00e4n man tror. Vi vill definitivt inte ha den stabbig.<\/li>\n<li>N\u00e4r du \u00e4r n\u00f6jd tar du den fr\u00e5n spisen och r\u00f6r ner osten och en klick sm\u00f6r tillsammans med gr\u00e4sl\u00f6k och n\u00e4stan all sparris.
