Midsommar. Och husmanskost. Lite gammaldags, men helt r\u00e4tt. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>En r\u00e4tt ingen gjort p\u00e5 l\u00e4nge, men \u00e4nd\u00e5 med ett t\u00e4nk som passar nutiden. Min variant g\u00e5r under ben\u00e4mningen inkokt, men t\u00e4nk bort torr och h\u00e5rd. Det h\u00e4r \u00e4r en r\u00e4tt d\u00e4r laxen beh\u00e5ller sin mj\u00e4llaste struktur och \u00e4r bara precis genomvarm med en aning, aning rosa mitt. Inte r\u00e5 bara mj\u00e4ll och mjuk.<\/p>\n<p>Och inkokt? Jag vet inte ens om den kan kallas det eftersom den heta lagen h\u00e4lls \u00f6ver r\u00e5 lax i skivor. Tillagningen sker liksom utanf\u00f6r spisv\u00e4rmen och den mjuka strukturen finns kvar n\u00e4r fettet stannar i laxen ist\u00e4llet f\u00f6r att koka bort.<\/p>\n<p>Smaken \u00e4r l\u00e4tt syrlig av vin\u00e4ger. D\u00e4r finns ocks\u00e5 en aning s\u00f6tma och s\u00e4lta, men allt utan det lite ettriga som kommer med en 1-2-3-lag. Mild och smakrik skulle jag kalla den.<\/p>\n<p>Inkokt lax 2023 kan man s\u00e4ga. Och helt perfekt till midsommarhelgen f\u00f6rst\u00e5s.<\/p>\n<h2><strong>Inkokt lax med dillmajonn\u00e4s<\/strong><\/h2>\n<p>4 personer<\/p>\n<p>600 g fil\u00e9 av lax<\/p>\n<h4><strong>Lag<\/strong><\/h4>\n<p>1 gul l\u00f6k<\/p>\n<p>1 l vatten<\/p>\n<p>\u00bd dl vin\u00e4ger<\/p>\n<p>1 msk salt<\/p>\n<p>1 msk socker<\/p>\n<p>3 kryddnejlikor<\/p>\n<p>2 kryddpepparkorn<\/p>\n<p>3 lagerblad<\/p>\n<p>dillstj\u00e4lkar, dillbladen anv\u00e4nds till majonn\u00e4sen<\/p>\n<h4><strong>Dillmajonn\u00e4s<\/strong><\/h4>\n<p>2 dl majonn\u00e4s, g\u00e4rna egen l\u00e4nk till recept finns nedan<\/p>\n<p>1 rej\u00e4l knippa dill<\/p>\n<ol>\n<li>Sk\u00e4r laxen i skivor cirka 1 \u00bd cm tjocka. Salta l\u00e4tt och l\u00e4gg skivorna i en form.<\/li>\n<li>Skala och skiva l\u00f6ken tunt. L\u00e4gg den tillsammans med lagens \u00f6vriga ingredienser i en kastrull och koka upp.<\/li>\n<li>H\u00e4ll den heta lagen \u00f6ver laxskivorna och s\u00e4tt plast \u00f6ver formen. L\u00e5t st\u00e5 en halvtimma. St\u00e4ll in i kyl eller servera laxen direkt ljummen.<\/li>\n<li>Mixa majonn\u00e4sen med dillen.<\/li>\n<li>Servera laxen med dillmajonn\u00e4s och en sallad av tunt skivad gr\u00f6n sparris som kokats 30 sekunder. Dessutom l\u00f6vtunna skivor f\u00e4nk\u00e5l, gurka och r\u00e4disor. Sp\u00e4da sallatsblad och finhackad gr\u00e4sl\u00f6k, dill och krasse.
