V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>L\u00e4mnar br\u00f6det p\u00e5 j\u00e4sning och ger mig ut f\u00f6r en stund vid krusb\u00e4rsbusken. Det ska bli marmelad till frukostfrallan. Ett enkelt recept p\u00e5 ett litet kok som fyller precis en burk.<\/p>\n<p>Det h\u00e4r \u00e4r min tid p\u00e5 dagen. Morgonstunden man bara delar med sig sj\u00e4lv. Lotten \u00e4r sitt vackraste n\u00e4r den h\u00e4mtat andan med lite nattsvalka. Och krusb\u00e4ren\u2026har vuxit sig \u00e4nnu st\u00f6rre bara sedan ig\u00e5r kv\u00e4ll. N\u00e5gra \u00e4r mjuka och helt mogna andra h\u00e5rdare med syran i beh\u00e5ll.<\/p>\n<p>Br\u00f6dbak och krusb\u00e4rskok innan frukost t\u00e4nker ni, men det h\u00e4r \u00e4r snabba varianter och du kommer vara s\u00e5, s\u00e5 n\u00f6jd. Precis som efter middagen n\u00e4r du plockar fram ett par goda ostar och marmeladen f\u00e5r visa upp en helt annan sida i sitt konstregister.<\/p>\n<p>Krusb\u00e4r inneh\u00e5ller en hel del pektin som g\u00f6r att marmeladen tjocknar, men jag v\u00e4ljer \u00e4nd\u00e5 att anv\u00e4nda syltsocker som inneh\u00e5ller pektin. Bara f\u00f6r att jag inte vill koka den f\u00f6r l\u00e4nge och f\u00f6r att jag vill anv\u00e4nda en lite mindre m\u00e4ngd socker \u00e4n marmelad i regel inneh\u00e5ller. Ofta s\u00e4ger man lika stor viktm\u00e4ngd b\u00e4r som socker, men jag vill verkligen k\u00e4nna smaken av krusb\u00e4r. Dessutom \u00e4r koket s\u00e5 litet att man kan gl\u00f6mma den konserverande effekten. Det h\u00e4r \u00e4r slut inom ett par veckor. Eller en.<\/p>\n<h2>Krusb\u00e4rsmarmelad<\/h2>\n<p>1 burk<\/p>\n<p>400 g krusb\u00e4r (lite mer \u00e4n 6 dl)<\/p>\n<p>\u00bd citron, saften (och rivet skal om man vill)<\/p>\n<p>300 g syltsocker<\/p>\n<p>1 vaniljst\u00e5ng eller \u00bd tsk grovkrossade kardemummafr\u00f6n<\/p>\n<ol>\n<li>Ansa krusb\u00e4ren fr\u00e5n blom- och stj\u00e4lkrester. L\u00e4gg i en kastrull med citronsaften. Koka upp p\u00e5 medelv\u00e4rme och h\u00f6j n\u00e4r b\u00e4ren saftar sig.<\/li>\n<li>N\u00e4r b\u00e4ren mjuknat efter ett par minuter plockade jag fram stavmixern och mixade grovt. Tills\u00e4tt sockret och den sk\u00e5rade vaniljst\u00e5ngen.<\/li>\n<li>Koka under omr\u00f6rning i 5 minuter. G\u00f6r eventuellt ett enkelt marmeladprov. L\u00e4gg en klick p\u00e5 en tallrik. Dra undersidan av en sked genom marmeladen. Rinner sidorna inte ihop utan h\u00e5ller sig p\u00e5 plats \u00e4r marmeladen klar. Annars f\u00e5r den koka lite till.<\/li>\n<li>H\u00e4ll upp den heta marmeladen i v\u00e4l rengjord glasburk.<\/li>\n<\/ol>\n<p>Vi \u00e5t marmeladen ljummen p\u00e5 varma frallor. V\u00e4sterbottensost till och starkt kaffe.
