V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Fritters \u2013 jag vet att det uppr\u00f6r m\u00e5nga. Ett ingetord. L\u00e5nat fr\u00e5n\u2026ja, USA f\u00f6rmodligen. Finns inte i n\u00e5gon av Svenska Akademiens ordb\u00f6cker. Inte \u00e4n. \u00c4nd\u00e5 vet de flesta matintresserade precis vad det inneb\u00e4r. N\u00e5got som bryns eller friteras gyllne i olja till frasiga h\u00e4rligheter. S\u00f6tt eller salt, det varierar.<\/p>\n<p>S\u00e5, nog om detta. Nu blir det mat. Det blir \u00e4pple och det blir s\u00f6tsaker. H\u00e4rhemma k\u00f6r vi dem ist\u00e4llet f\u00f6r fikabr\u00f6d och n\u00e5gon g\u00e5ng efter soppmiddagar.<\/p>\n<p>Det h\u00e4r \u00e4r ingenting man g\u00f6r ofta. Ett par, tre g\u00e5nger per s\u00e4song. Dagar n\u00e4r n\u00e5gon f\u00f6rtvivlad tr\u00e4dg\u00e5rds\u00e4gare b\u00f6nat om hj\u00e4lp att ta &#8221;bara en kasse till&#8221; av dignande frukttr\u00e4d. Och vem kan s\u00e4ga nej?<\/p>\n<p>Ingredienserna \u00e4r enkla. Det \u00e4r friteringen man kan st\u00e4lla sig fr\u00e5gande till. Jag friterar aldrig i m\u00e4ngder av olja. En rej\u00e4l bottenskyla i en mindre gryta r\u00e4cker gott. Man f\u00e5r f\u00f6rsiktigt skaka grytan s\u00e5 att inget fastnar och v\u00e4nda ett par g\u00e5nger eftersom oljan inte t\u00e4cker, men det funkar fint.<\/p>\n<p>Fluffet skapas av bakpulvret och av \u00e4ggen som ska vispas. Smeten suffl\u00e9rar n\u00e4r den n\u00e5r hettan i grytan. Poff hinner den vidga sig innan v\u00e4rmen st\u00e4nger ytan till ett krispigt h\u00f6lje.<\/p>\n<p>Receptet \u00e4r en variant p\u00e5 n\u00e5got jag l\u00e4ste i tidningen Buff\u00e9 f\u00f6r n\u00e5gra \u00e5r sedan. Har memorerat det och f\u00f6rmodligen \u00e4r det inte riktigt vad det var, men riktigt bra \u00e4nd\u00e5 : )<\/p>\n<h2>\u00c4ppelfritters<\/h2>\n<p>15 \u2013 20 stycken<\/p>\n<p>3 &#8211; 4 syrliga \u00e4pplen<\/p>\n<p>\u00bd citron, saften<\/p>\n<p>4 dl vetemj\u00f6l<\/p>\n<p>1 \u00bd tsk bakpulver<\/p>\n<p>2 msk socker<\/p>\n<p>2 \u00e4ggulor<\/p>\n<p>2 \u00bd dl r\u00f6d mj\u00f6lk<\/p>\n<p>2 \u00e4ggvitor<\/p>\n<p>1 nypa salt<\/p>\n<h4>Tillbeh\u00f6r<\/h4>\n<p>Socker blandat med kanel (och grovt mortlade kardemummafr\u00f6n) att v\u00e4nda dina fritters i<\/p>\n<ol>\n<li>Skala och k\u00e4rna ur \u00e4pplena s\u00e5 att de f\u00e5r ett h\u00e5l i mitten. Skiva \u00e4pplena med h\u00e5let i mitten. Halvcentimertjocka ungef\u00e4r. Saknar du en urk\u00e4rnare kan \u00e4pplena t\u00e4rnas ist\u00e4llet. V\u00e4nd \u00e4pplet i den pressade saften av \u00bd citron.<\/li>\n<li>Blanda mj\u00f6l och bakpulver i en sk\u00e5l.<\/li>\n<li>Vispa socker och \u00e4ggulor p\u00f6sigt.<\/li>\n<li>V\u00e4nd ihop \u00e4ggsmeten med mj\u00f6lken och blanda varsamt ned mj\u00f6let.<\/li>\n<li>Vispa \u00e4ggvitorna till ett fast vitt skum. Det ska bildas toppar n\u00e4r du lyfter upp vispen.<\/li>\n<li>V\u00e4nd ner \u00e4ggvitorna f\u00f6rsiktigt, f\u00f6rsiktigt s\u00e5 att den invispade luften inte ger sig iv\u00e4g p\u00e5 \u00e4ventyr.<\/li>\n<li>Hetta upp en rej\u00e4l bottenskyla olja i en gryta eller kastrull. V\u00e4nta in en temperatur runt 180 grader. Testa med termometer eller stick ner spetsen p\u00e5 handtaget till en tr\u00e4slev i grytan. N\u00e4r bubblor bildas vid skaftet \u00e4r tempen okej.<\/li>\n<li>V\u00e4nd \u00e4ppelskivorna i smeten och fritera n\u00e5gra \u00e5t g\u00e5ngen. De ska inte nudda varandra. V\u00e4nd en eller ett par g\u00e5nger tills de f\u00e5r fin f\u00e4rg.<\/li>\n<li>Har du t\u00e4rnat dina \u00e4pplen s\u00e5 blandas bitarna i smeten som du sedan klickar ner i oljan.<\/li>\n<li>V\u00e4nd dina fritters i sockerblandningen och servera genast.<\/li>\n<\/ol>\n<p>Aprop\u00e5 fritters s\u00e5 kanske du vill testa en annan variant.
