V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Vad \u00e4r en gulasch? Precis som alla stora r\u00e4tter finns den i ett o\u00e4ndligt antal varianter. En gulasch \u00e4r id\u00e9n om n\u00e5gonting med ett antal ingredienser som \u00e5terkommer. Det ska vara k\u00f6tt, paprika, kummin och tomat. Sen \u00e4r det fritt spelrum f\u00f6r fantasin. Och h\u00e4r har ni min variant.<\/p>\n<p>K\u00f6tt f\u00f6rresten, jag kan i och f\u00f6r sig se framf\u00f6r mig en fantastisk r\u00e4tt utan k\u00f6tt. Linser, gr\u00f6na eller svarta skulle g\u00f6ra sig fint tillsammans med grytbasen, men idag blir det en k\u00f6ttgryta. En riktigt l\u00e5ng, l\u00e5ngputtrad.<\/p>\n<p>Jag ser ofta recept d\u00e4r man puttar i paprikan p\u00e5 slutet av tillagningen f\u00f6r att den inte ska koka s\u00f6nder, men jag gillar inte den halvr\u00e5a gr\u00f6nsaken i en mustig gryta. Jag vill ha fram s\u00f6tman och den aningen karamelliserade tonen den f\u00e5r efter en omg\u00e5ng i ugnen. I min gulasch ungsbakas de st\u00f6rre paprikabitarna.<\/p>\n<p>Paprikan har dessutom en roll precis i b\u00f6rjan av tillagningen n\u00e4r jag lugnt och f\u00f6rsiktigt fr\u00e4ser den fint t\u00e4rnad med l\u00f6k och vitl\u00f6k.<\/p>\n<p>En annan st\u00e5ende gulaschingrediens \u00e4r kummin och h\u00e4r ska det vara br\u00f6dkummin. Recept i l\u00e4nkar nedan.<\/figcaption><\/figure>\n<p>Vill du bjuda p\u00e5 en riktigt mustig h\u00f6stgryta har du hittat r\u00e4tt. Den \u00e4r verkligen mycket god. Och s\u00e5h\u00e4r g\u00e5r det till.<\/p>\n<h2>Gulaschgryta min variant<\/h2>\n<p>4 \u2013 5 personer<\/p>\n<p>800 g h\u00f6grev, n\u00f6tk\u00f6tt eller \u00e4lg<\/p>\n<p>1 stor r\u00f6d paprika<\/p>\n<p>1 stor l\u00f6k, gul eller r\u00f6d<\/p>\n<p>3 vitl\u00f6ksklyftor<\/p>\n<p>1 msk paprikapulver<\/p>\n<p>1 \u00bd tsk kummin<\/p>\n<p>2 msk tomatpur\u00e9<\/p>\n<p>tomater, 1 burk krossade eller motsvarande m\u00e4ngd f\u00e4rska<\/p>\n<p>2 msk koncentrerad k\u00f6ttfond<\/p>\n<p>vatten<\/p>\n<p>salt<\/p>\n<p>svartpeppar<\/p>\n<h4>Till ugnsrost<\/h4>\n<p>2 hela paprikor<\/p>\n<ol>\n<li>Sk\u00e4r k\u00f6ttet i grytstora bitar. Salta och stek bitarna till fin f\u00e4rg i panna. Stekytan blir en extra grytkrydda.<\/li>\n<li>K\u00e4rna ur och t\u00e4rna paprikan fint. Finhacka l\u00f6k och vitl\u00f6k.<\/li>\n<li>Fr\u00e4s hacket i gryta p\u00e5 relativt l\u00e5g v\u00e4rme. Bitarna ska bli mjuka och s\u00f6ta, inte br\u00e4nda.<\/li>\n<li>R\u00f6r ner paprikapulver och kummin som f\u00e5r fr\u00e4sa med n\u00e5gon minut innan tomatpur\u00e9n r\u00f6rs i. Forts\u00e4tt fr\u00e4s ytterligare n\u00e5gon minut.<\/li>\n<li>L\u00e4gg ner k\u00f6ttet och h\u00e4ll p\u00e5 tomater. Anv\u00e4nder du f\u00e4rska ska de t\u00e4rnas f\u00f6rst.<\/li>\n<li>T\u00e4ck k\u00f6ttet precis med vatten och h\u00e4ll p\u00e5 fonden. Locket p\u00e5 och sedan f\u00e5r tiden g\u00f6ra jobbet. L\u00e5t gulaschen puttra p\u00e5 svag v\u00e4rme till k\u00f6ttet \u00e4r riktigt m\u00f6rt. Det kan ta upp till tre timmar. Eller mer. Smaka till sist av med salt och peppar.<\/li>\n<li>Under tiden s\u00e4tter du ugnen p\u00e5 150 grader. K\u00e4rnar ur paprikorna, sk\u00e4r dem i bitar, saltar och v\u00e4nder i olja. S\u00e4tt in i ugnen och l\u00e5t dem mjukna i v\u00e4rmen och f\u00e5 lite f\u00e4rg. S\u00f6tman ska verkligen triggas. Ta ut n\u00e4r de b\u00f6rjar f\u00e5 en l\u00e4tt brynt yta.<\/li>\n<li>N\u00e4r k\u00f6ttet \u00e4r m\u00f6rt kan du servera grytan genast eller l\u00e5ta den mogna i kyl till dagen d\u00e4rp\u00e5.<\/li>\n<li>Servera med de ugnsrostade paprikabitarna p\u00e5 toppen och flufftigt ris.<\/li>\n<\/ol>\n<p>Jag vet \u00e4r det \u00e4r en klyscha, men visst \u00e4r grytor h\u00f6stmat och jag har flera f\u00f6rslag.
