Jag bjuder in s\u00e4lta, syra och viss hetta till koket. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Egen sk\u00f6rd \u2013 jisses vilken h\u00f6st det blir i s\u00f6tpotatisens namn. Har tagit upp m\u00e4ngder. Har ni inte gjort det f\u00f6rr s\u00e5 skriv upp s\u00f6tpotatis i n\u00e4sta \u00e5rs odlingsplan. Ni kommer inte \u00e5ngra er.<\/p>\n<p>Potatis \u00e4r helt missvisande f\u00f6r \u00f6vrigt. Det h\u00e4r \u00e4r en sl\u00e4kting till den vackert bl\u00e5 Blomman f\u00f6r dagen och vill du veta mer om det och om odlingen <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/sotpotatis-2021\/\">s\u00e5 kika i inl\u00e4gget h\u00e4r.<\/a><\/p>\n<p>S\u00f6tpotatis \u00e4r s\u00f6tt, ingen tvekan om det och h\u00e4r vill det till balans f\u00f6r att matcha smaken. Alls inte d\u00f6lja, snarare plocka fram och s\u00e4tta spr\u00e4tt p\u00e5 den.<\/p>\n<p>F\u00f6rsta r\u00e5det \u00e4r att inte koka. Ugnsrosta ist\u00e4llet f\u00f6r att koncentrera s\u00f6tman och ge den karakt\u00e4r. De brynta kanterna lockar fram s\u00f6tpotatisens b\u00e4sta sidor. Efter det vill jag g\u00e5 p\u00e5 svenska smaker. Lite f\u00e5nigt kanske, men jag tr\u00f6ttnar n\u00e4r s\u00e5 m\u00e5nga recept famlar efter kokosmj\u00f6lk som utv\u00e4g. En liten hint bara.<\/p>\n<p>Fettet i en skv\u00e4tt gr\u00e4dde eller cr\u00e8me fraiche rundar av och g\u00f6r plats f\u00f6r hetta som kommer med svartpeppar. Nu har vi bara en detalj kvar. N\u00e5got som bryter av och inte bara balanserar utan ger karakt\u00e4r. Timjan gamle v\u00e4n kliv fram och g\u00f6r din grej. Och d\u00e4r satt den, min soppa har f\u00e5tt b\u00e5de kropp och sj\u00e4l.<\/p>\n<h2>S\u00f6tpotatissoppa<\/h2>\n<p>4 personer<\/p>\n<p>700 g s\u00f6tpotatis<\/p>\n<p>5 dl vatten<\/p>\n<p>1 t\u00e4rning gr\u00f6nsaksbuljong<\/p>\n<p>2 dl gr\u00e4dde eller cr\u00e8me fraiche<\/p>\n<p>1 msk pressad citron<\/p>\n<p>1 dl riven lagrad ost, g\u00e4rna V\u00e4sterbottensost<\/p>\n<p>2 krm torkad timjan<\/p>\n<p>salt<\/p>\n<p>svartpeppar<\/p>\n<h4>P\u00e5 toppen<\/h4>\n<p>1 ptk bacon, skuret i sm\u00e5 bitar och knaperstekt<\/p>\n<p>riven lagrad ost<\/p>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 225 grader. Skala s\u00f6tpotatisen och sk\u00e4r den i bitar. V\u00e4nd i olja och salta. Rosta i ugnen tills bitarna f\u00e5tt f\u00e4rg och \u00e4r helt mjuka. H\u00e5ll koll det g\u00e5r snabbare \u00e4n m\u00e5nga andra rotsaker.<\/li>\n<li>Mixa med h\u00e4lften av vattnet. Smula ner buljont\u00e4rningen, fyll p\u00e5 med mejeri och kolla konsistensen. Sp\u00e4d med vatten tills du \u00e4r n\u00f6jd.<\/li>\n<li>R\u00f6r ner citron, ost och timjan. Smaka av med salt och peppar. Sn\u00e5la inte med peppar.<\/li>\n<li>Nu plockar du fram din inre finsmakare. Mer syra? Mer salt? Mer timjan. Peppar?<\/li>\n<li>N\u00e4r du \u00e4r n\u00f6jd serverar du soppan med riven ost och baconstr\u00f6ssel p\u00e5 toppen. Lite timjanpiff \u00e4r inte heller fel.<\/li>\n<\/ol>\n<p>Kanske tycker du att m\u00e4ngden soppa \u00e4r liten. Helt r\u00e4tt noterat. Den ska avnjutas i sm\u00e5 delikata portioner. Och hungrig l\u00e4mnar ingen bordet. Du har ju bakat ocks\u00e5, inte sant!?
