Den sp\u00e4da nysk\u00f6rdade har lagrats n\u00e5gra m\u00e5nader. Fortfarande saftig och sp\u00e4nstig, men med ett annat bett och en mognare stil. Den har f\u00e5tt karakt\u00e4r.<\/p>\n<p>Det finns s\u00e5 mycket att s\u00e4ga om l\u00f6k. L\u00e5ng, riktigt l\u00e5ng, tid p\u00e5 medelv\u00e4rme v\u00e4cker l\u00f6ken allra b\u00e4sta sidor och det g\u00e4ller i s\u00e5 m\u00e5nga r\u00e4tter.<\/p>\n<p>Den d\u00e4r mustiga lite karamelliserade, trygga tonen kommer med tiden den f\u00e5r i pannan. Doft av timjan och en skv\u00e4tt vitt vin \u00e4r en lyxbonus.<\/p>\n<p>Nu lagar vi mat.<\/p>\n<h2>Ugnsrostad l\u00f6k i kr\u00e4mig s\u00e5s<\/h2>\n<p>4 personer<\/p>\n<p>4 \u2013 12 gula eller r\u00f6da l\u00f6kar, antal efter storlek<\/p>\n<p>2 dl cr\u00e8me fraiche<\/p>\n<p>1 dl vitt vin<\/p>\n<p>1 msk koncentrerad fond. V\u00e4lj gr\u00f6nsaks-, kyckling- eller oxfond beroende p\u00e5 vad den ska serveras till<\/p>\n<p>1 tsk soja<\/p>\n<p>1 nypa timjan, eller n\u00e5gra kvistar<\/p>\n<p>svartpeppar<\/p>\n<ol>\n<li>Dela l\u00f6ken p\u00e5 mitten och ta bort skalet. Hetta upp olja i en panna och stek l\u00f6khalvorna varsamt till fin f\u00e4rg med snittytan ner. V\u00e4nd och g\u00f6r samma sak p\u00e5 andra sidan.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 175 grader. S\u00e4tt in l\u00f6ken i panna eller form.<\/li>\n<li>R\u00f6r ihop cr\u00e8me fraiche, vin, fond, soja och timjan i en kastrull. L\u00e5t koka ihop n\u00e5gra minuter f\u00f6r att ta udden av skarpa vintoner. Smaka av med svartpeppar och h\u00e4ll s\u00e5sen runt l\u00f6karna och l\u00e5t st\u00e5 tills l\u00f6ken \u00e4r helt mjuk rakt genom, 20 &#8211; 25 minuter.<\/li>\n<li>Underbart att servera till f\u00e4rsbiffar, stekt kyckling eller som del i en vegetarisk m\u00e5ltid.<\/li>\n<\/ol>\n<p>Tittar p\u00e5 bilderna och minns en av mina s\u00f6ners vanliga kommentar n\u00e4r han smakade av middagsmaten som liten. \u201dDet ska vara mer brunt!\u201d Brunt? Det betydde mustigt helt enkelt och l\u00f6ken blev ofta l\u00f6sningen. Allt gott!
