Och nu blir det fest.<\/p>\n<h2><strong>Stekt torskrygg med tomatsm\u00f6rs\u00e5s<\/strong><\/h2>\n<p>4 personer<\/p>\n<p>600 g torskrygg med skinn<\/p>\n<h4><strong>Tomatsm\u00f6rs\u00e5s<\/strong><\/h4>\n<p>1 schalottenl\u00f6k<\/p>\n<p>1 vitl\u00f6ksklyfta<\/p>\n<p>2 \u00bd dl vitt vin<\/p>\n<p>1 burk tomater<\/p>\n<p>100 g kallt sm\u00f6r<\/p>\n<p>salt<\/p>\n<p>peppar<\/p>\n<p>citron att smaka av med<\/p>\n<p>basilika, f\u00e4rska blad<\/p>\n<ol>\n<li>Dela torskryggen i fyra bitar. Salta och l\u00e5t st\u00e5 minst 30 minuter.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 90 &#8211; 100 grader. Hetta upp olja i en panna, torka av fisken och stek den till fin f\u00e4rg p\u00e5 skinnsidan. V\u00e4nd den med skinnet upp och st\u00e4ll in i ugnen. M\u00e4t eventuellt innertemperaturen med en digital termometer. Vid 48 grader \u00e4r den l\u00e4tt glasig i mitten och vid 52 helt vit.<\/li>\n<li>Hacka l\u00f6k och vitl\u00f6k. Stek glansigt i kastrull innan vinet h\u00e4lls p\u00e5. L\u00e5t puttra till vinet reducerats till h\u00e4lften.<\/li>\n<li>H\u00e4ll p\u00e5 tomaterna och sjud 15 minuter.<\/li>\n<li>Strax f\u00f6re servering mixas sm\u00f6ret med tomaterna. S\u00e5sen ska vara sl\u00e4t och len. Smaka av med salt, peppar och citron.<\/li>\n<li>Str\u00f6 strimlade basilikablad \u00f6ver och servera med fisken och pressad potatis.<\/li>\n<\/ol>\n<p>H\u00f6gst p\u00e5 listan \u00f6ver uppskattade fiskar p\u00e5 v\u00e5ra matbord st\u00e5r laxen. Och ja, den \u00e4r ofta ett bra val. B\u00e5de f\u00f6r milj\u00f6 och f\u00f6r matgl\u00e4djen.
