Fullbokad?! Brukar vara s\u00e5 vid den h\u00e4r tiden. Slutet p\u00e5 maj och ett par veckor in i juni \u00e4r dagar d\u00e5 allt ska h\u00e4nda. Utflykter, avslutningar, student, konfirmation, tr\u00e4dg\u00e5rdsfester, luchbuff\u00e9 och bruncher. H\u00e4rligt och aningen pressande om man \u00e4r en av de som h\u00e5ller i tr\u00e5darna. Men vi kan v\u00e4l hj\u00e4lpas \u00e5t. Jag ger f\u00f6rslag och ni lagar!<\/strong><\/p>\n<p>T\u00e4nkte s\u00e5h\u00e4r. Jag plockar efterhand in recept som kan passa en kall f\u00f6rsommarbuff\u00e9. En del blir superenkelt och kan funka antingen som vardagsmiddag eller som en del p\u00e5 ett festbord. Och s\u00e5klart t\u00e4nker jag att det ofta ska finnas n\u00e5got natursk\u00f6rdat k\u00f6tt, fisk eller v\u00e4xter med i r\u00e4tten. Inte alltid, men som en extra twist om ni vill.<\/p>\n<p>Det vilda s\u00e4tter fart p\u00e5 pratet. Jag brukar l\u00e4gga ut beskrivande lappar vi faten p\u00e5 buff\u00e9bordet. Ta till exempel: \u201dTunnskivad vildsvinsfil\u00e9 med granskottsolja och skogsviol\u201d. Ni f\u00f6rst\u00e5r reaktionen. Och sedan kan man st\u00e5 bredvid och lyssna p\u00e5 de f\u00f6rv\u00e5nade utropen och samtalen som bubblar ig\u00e5ng. Men inte beh\u00f6ver man g\u00e5 all in. Det r\u00e4cker med skogsviolen f\u00f6r att starta en konversation.<\/p>\n<p>Idag g\u00e5r vi ut superenkelt med en ugnsbakad omelett. Den kan sk\u00e4ras i skivor och \u00e4tas varm, ljummen eller kall. Jag t\u00e4nkte att det h\u00e4r kan bli en av basr\u00e4tterna p\u00e5 bordet. Lite matigare, men n\u00e5got som l\u00e4tt kombineras med andra saker. Bra eftersom den \u00e4r vegetarisk och med n\u00e4ssla som den vilda ingrediensen.<\/p>\n<figure id=\"attachment_1225\" aria-describedby=\"caption-attachment-1225\" style=\"width: 682px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2016\/05\/Primoromelett-9-e1464073164948.jpg\"><img loading=\"lazy\" class=\"size-large wp-image-1225\" src=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2016\/05\/Primoromelett-9-682x1024.jpg\" alt=\"prim\u00f6romelett, n\u00e4ssla, galleri\" width=\"682\" height=\"1024\" \/><\/a><figcaption id=\"caption-attachment-1225\" class=\"wp-caption-text\">I april springer vi benen av oss efter de f\u00f6rsta n\u00e4sslorna. Nu finns de \u00f6verallt och gl\u00f6ms bort, men g\u00f6r inte det. De \u00e4r fortfarande lika goda. Men g\u00f6r inte det. \u00a0N\u00e4sslorna \u00e4r fortfarande sp\u00e4da, lika goda och betydligt mer l\u00e4ttplockade \u00e4n de var under tidig v\u00e5r. Ta de \u00f6versta topparna som \u00e4r j\u00e4ttefina precis nu. Det h\u00e4r blir f\u00f6r \u00f6vrigt en kombor\u00e4tt med b\u00e5de odlat och vilt.<\/p>\n<p>Omeletten \u00e4r lite som en paj utan pajskal. Passar till en sallad, till buff\u00e9bordets r\u00f6ror, till r\u00f6kt, till \u00a0k\u00f6tt eller fisk. M\u00e5nga v\u00e4ljer att \u00e4ta helt vegetariskt och d\u00e5 \u00e4r den h\u00e4r omeletten perfekt. En bra l\u00e4ttfixad buff\u00e9r\u00e4tt helt enkelt. Eller en kanongod, enkel middagsr\u00e4tt.<\/p>\n<p>Ett bra tips \u00e4r att anv\u00e4nda en stekpanna d\u00e4r maten sl\u00e4pper l\u00e4tt. Ska omeletten serveras p\u00e5 en buff\u00e9 kanske du vill stj\u00e4lpa upp den hel p\u00e5 ett fat eller en sk\u00e4rbr\u00e4da och d\u00e5 vill man inte att den sitter fast i botten p\u00e5 pannan.<\/p>\n<h2>Prim\u00f6romelett f\u00f6r buff\u00e9n \u00a0(8 \u2013 10 pers p\u00e5 buff\u00e9)<\/h2>\n<ul>\n<li>6 \u00e4gg<\/li>\n<li>1 dl cr\u00e8me fraiche<\/li>\n<li>2 gula knippl\u00f6kar<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>100 g v\u00e4lsk\u00f6ljda gr\u00f6na blad, t.ex. en blandning av n\u00e4sslor och spenat<\/li>\n<li>300 g kall kokt f\u00e4rskpotatis<\/li>\n<li>75 g fetaost<\/li>\n<li>lite finskuren gr\u00e4sl\u00f6k och g\u00e4rna gr\u00e4sl\u00f6ksblommor<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Har du en stekpanna med skaft som t\u00e5l v\u00e4rme kan omeletten gr\u00e4ddas i ugnen. S\u00e4tt i s\u00e5 fall ugnen p\u00e5 175 grader. Annars f\u00e5r den g\u00e5 f\u00e4rdigt p\u00e5 spisen med lock.<\/li>\n<li>Kn\u00e4ck \u00e4ggen i en sk\u00e5l och blanda med cr\u00e8me fraiche.<\/li>\n<li>Skiva l\u00f6ken tunt. Det ska vara f\u00e4rsk, sp\u00e4d l\u00f6k. Skala och finhacka vitl\u00f6ken. Hetta upp lite olja i en panna och stek l\u00f6ken en liten stund innan du l\u00e4gger i de gr\u00f6na bladen. Fr\u00e4s tills allt mjuknar utan att ta f\u00e4rg.<\/li>\n<li>Skiva potatisen tunt. L\u00e4gg skivorna i pannan och f\u00f6rs\u00f6k beh\u00e5lla dem hela. H\u00e4ll p\u00e5 omelettsmeten. Smula fetaosten \u00f6ver.<\/li>\n<li>S\u00e4tt in pannan i ugnen eller l\u00e4gg ett lock p\u00e5. Ha inte f\u00f6r h\u00f6g v\u00e4rme p\u00e5 plattan d\u00e5 br\u00e4nns botten. H\u00e5ll kvar omeletten i v\u00e4rmen tills den stelnar. Har du den i ugnen kan du v\u00e4nta in lite fin ytf\u00e4rg.<\/li>\n<li>Gr\u00e4dda den helst samma dag den ska \u00e4tas och servera g\u00e4rna ljummen, eller \u201dkall-ljummen\u201d, men inte kylsk\u00e5pskall.
