Mingel g\u00f6r mig mest nerv\u00f6s. Tack och lov f\u00f6r maten. En uppgift och min r\u00e4ddning. En planka att h\u00e5lla i. Ge mig ett k\u00f6k att \u00e4ga, ett bord att duka och en midsommarstimmig flock att f\u00f6da. Min fest \u00e4r ig\u00e5ng och h\u00e4r kommer ett somrigt smakprov.<\/strong><\/p>\n<p>Sill! Ja, jag vet, det \u00e4r det allra somrigaste, men vi vill ha n\u00e5gon sorts balans. Vid sidan av den underbara men lite ettrigt, p\u00e5tr\u00e4ngande sillen beh\u00f6vs en mild och tydlig kompanjon. N\u00e5got som bryter och kompletterar. Kalvf\u00e4rs blir perfekt.<\/p>\n<p>\u00c4r det biffar eller bullar? En stilla undran av en dotter efter hennes sjunde smakprov. Tja, det \u00e4r v\u00e4l n\u00e5got mittemellan. Sm\u00e5, men sn\u00e4ppet st\u00f6rre \u00e4n en k\u00f6ttbulle. Tillplattad som en f\u00e4rsbiff, men mycket mindre. Perfekta p\u00e5 ett festbord d\u00e4r man ska plocka fritt fr\u00e5n faten. D\u00e4r allt ska passa ihop och ingenting ska tynga utan bara ge lust till mer.<\/p>\n<p>Eftersom jag vill ha biffarna milda med en l\u00e4tt syra s\u00e5 f\u00e5r f\u00e4rsen samsas med cr\u00e8me fraiche. Dill och gr\u00e4sl\u00f6k, eller tunna ringar l\u00f6kblast blir bra och \u00e4ggulor. Str\u00f6br\u00f6d l\u00e4ttar upp och g\u00f6r f\u00e4rsen por\u00f6s, men det m\u00e5ste vara f\u00e4rskt. Jag k\u00f6r skivor av vitt br\u00f6d i matberedaren. Gr\u00e4nsfall med somrig smak av dill och gr\u00e4sl\u00f6k. Och serverade tillsammans med prim\u00f6r-prim\u00f6rer av egen sk\u00f6rd.<\/figcaption><\/figure>\n<p>Och f\u00e4rsen f\u00e5r det allra b\u00e4sta s\u00e4llskap man kan hitta. Jag tar en tur till lotten f\u00f6r att fylla p\u00e5 med dill och gr\u00e4sl\u00f6k och n\u00e5got har h\u00e4nt. Trots att jag g\u00e5r d\u00e4r varje dag s\u00e5 gick det pl\u00f6tsligt s\u00e5 fort. Det \u00e4r dags att sk\u00f6rda. \u00c5rets f\u00f6rsta sk\u00f6rd!<\/p>\n<p>Sm\u00e5, sm\u00e5 r\u00f6dbetor, de allra ljuvligaste sp\u00e4da mor\u00f6tterna. Och socker\u00e4rtor! Sk\u00f6ra, m\u00f6ra, mj\u00e4lla och alldeles underbara. L\u00f6ken har sv\u00e4llt upp och jag vet att de \u00e4r s\u00f6ta som socker n\u00e4r man kokar de l\u00e4tt. Som sagt, sommarfest utan tvekan.<\/p>\n<p>Och s\u00e5h\u00e4r g\u00e5r det till<\/p>\n<h2>Somriga kalvf\u00e4rsbiffar (30 st sm\u00e5)<\/h2>\n<ul>\n<li>1 kg kalvf\u00e4rs, jag gjorde mina p\u00e5 \u00e4lgkalv men n\u00f6t g\u00e5r utm\u00e4rkt<\/li>\n<li>3 skivor vitt br\u00f6d<\/li>\n<li>1 knippa dill<\/li>\n<li>1 knippa gr\u00e4sl\u00f6k, eller motsvarande m\u00e4ngd l\u00f6kblast<\/li>\n<li>1 \u00bd dl cr\u00e8me fraiche<\/li>\n<li>1 \u00bd msk koncentrerad kalvfond<\/li>\n<li>1 \u00e4gg + 2 \u00e4ggulor<\/li>\n<li>1 tsk salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>Prim\u00f6rer, mor\u00f6tter, r\u00f6dbetor, socker\u00e4rt efter lust och tillg\u00e5ng<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>K\u00f6r br\u00f6det till smulor i en matberedare. Sk\u00e4r dill och gr\u00e4sl\u00f6k fint. Har du tillg\u00e5ng till l\u00f6kblast s\u00e5 sk\u00e4r du den i tunna ringar.<\/li>\n<li>Blanda f\u00e4rsen med br\u00f6dsmulor, dill, gr\u00e4sl\u00f6k, cr\u00e8me fraiche, fond, \u00e4gg och salt. Och s\u00e5 n\u00e5gra drag p\u00e5 svartpepparkvarnen.<\/li>\n<li>Forma sm\u00e5 lite platta biffar. Jag brukar rada upp dem p\u00e5 ett bakpl\u00e5tspapper s\u00e5 att det inte blir s\u00e5dan hets n\u00e4r stekpannan \u00e4r ig\u00e5ng. Stek i rapsolja. Sm\u00f6r funkar om de ska serveras varma eller ljumna, men hamnar de p\u00e5 bordet kalla stelnar sm\u00f6ret och det vill vi inte.<\/li>\n<li>F\u00e4rsbiffarna kan tillagas och serveras direkt eller g\u00f6ras i f\u00f6rv\u00e4g och v\u00e4rmas p\u00e5 l\u00e5g temp i ugnen n\u00e4r det \u00e4r dags att \u00e4ta.<\/li>\n<li>L\u00e4ttkokta prim\u00f6rer f\u00e5r samsas med biffarna p\u00e5 fatet och en n\u00e4ve dill och gr\u00e4sl\u00f6kshack.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>M\u00e5nga fler f\u00f6rslag p\u00e5 r\u00e4tter som kan passa midsommarfesten hittar du i inl\u00e4gget <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/buffe-uppsamlingsheat-med-tips-och-recept\/\">h\u00e4r<\/a>.
