De nysk\u00f6rdade gr\u00f6nsakerna slokar. Jag jobbar verkligen med n\u00e4rodlat. Tolv minuter tar det fr\u00e5n lotten hem till k\u00f6ket. Kort, men alltf\u00f6r l\u00e5ngt, framf\u00f6rallt f\u00f6r sallad och andra blad, n\u00e4r solen str\u00e5lar. S\u00e5h\u00e4r g\u00f6r jag f\u00f6r att de ska beh\u00e5lla sp\u00e4nsten.<\/strong><\/p>\n<p>Lite av k\u00e4nslan med egen sk\u00f6rd \u00e4r det d\u00e4r krispet. Att s\u00e4tta t\u00e4nderna i sp\u00e4nstiga gr\u00f6nsaker, ett salladsblad eller en socker\u00e4rta och det riktigt krasar till. Men det \u00e4r en r\u00e4tt kortvarig lycka. Snart b\u00f6rjar v\u00e4tska dunsta fr\u00e5n det som f\u00f6rlorat sin vattenf\u00f6rs\u00f6rjning och det gr\u00f6na vissnar.<\/p>\n<p>Snabbast slokar alla bladen men avdunstningen drabbar \u00e4ven gr\u00f6nsakerna. Mor\u00f6tter och socker\u00e4rtor mjuknar. R\u00f6dbetan blir lite svampig \u00e4ven om det tar l\u00e4ngre tid.<\/p>\n<p>Mitt b\u00e4sta tips f\u00f6r att undvika det h\u00e4r \u00e4r: Skynda hem och \u00e4t direkt. Plocka bara de m\u00e4ngder som kommer att g\u00e5 \u00e5t och tillaga dem s\u00e5 fort du bara kan.<\/p>\n<p>Men jag vet att det d\u00e4r inte alltid \u00e4r m\u00f6jligt och d\u00e5 finns det r\u00e4ddning. Vi startar med det allra k\u00e4nsligaste. De tunna bladen: salladen, svartk\u00e5len, basilikan, r\u00f6dbetsblasten och alla andra som exponerar stora ytor d\u00e4r fukten flyktigt dunstar n\u00e4stan direkt.<\/p>\n<p>S\u00e5h\u00e4r g\u00f6r jag. Jag har en plastl\u00e5da med lock. Plastp\u00e5se g\u00e5r ocks\u00e5 bra, men den h\u00e5rda l\u00e5dan skyddar \u00e4ven bladen mot omild behandling. H\u00e4r g\u00e4ller varsamhet. I l\u00e5dan l\u00e4ggs ett tjockare, fuktat hush\u00e5llspapper eller en fuktig handduk. Sk\u00f6rdar g\u00f6r jag precis innan jag ska hem fr\u00e5n lottarbetet. F\u00f6rebygg genom att plocka i en plastl\u00e5da eller l\u00e4gg i kallt vattenbad f\u00f6r att den ska dra \u00e5t sig fukt och bli friskt krispig igen.<\/figcaption><\/figure>\n<p>Man kan gardera ytterligare genom att l\u00e4gga bladen i den fuktiga handduken i l\u00e5dan. Och p\u00e5 det s\u00e4ttet h\u00e5ller de sig fina.<\/p>\n<p>Om, jag s\u00e4ger om bladen trots allt tappat sin sp\u00e4nst n\u00e4r jag kommer hem l\u00e4gger jag dem i ett bad. Femton minuter i riktigt kallt vatten brukar g\u00f6ra susen. Efter det slungar jag bort den \u00f6verfl\u00f6diga vattnet.<\/p>\n<p>Har ingen riktig salladsslunga utan k\u00f6r handdukstricket. L\u00e4gger de bl\u00f6ta bladen p\u00e5 en handduk viker in kanterna och vevar runt i luften n\u00e5gra varv s\u00e5 vattnet st\u00e4nker. Ska bladen inte \u00e4tas direkt s\u00e5 kan de l\u00e4ggas luftigt i en plastp\u00e5se eller i plastl\u00e5dan f\u00f6r att sedan vila i kylen. D\u00e4r kan de nu v\u00e4nta ett par dagar p\u00e5 att bli upp\u00e4tna, fr\u00e4scha och n\u00e4stan som nyplockade.<\/p>\n<p>Med m\u00e5nga gr\u00f6nsaker kan man g\u00f6ra p\u00e5 liknande s\u00e4tt. Socker\u00e4rt, brytb\u00f6nor, mor\u00f6tter, r\u00f6dbetor och andra rotfrukter drar \u00e5t sig vatten om de f\u00e5r ligga i ett bad n\u00e5gon timma. Kanske blir de inte helt som nya, men i alla fall med form och sp\u00e4nst p\u00e5 plats igen.<\/p>\n<p>Och till sist ett litet ord om finliret f\u00f6r den som roar sig med s\u00e5dant. De sm\u00e5 sk\u00f6ra bladen och blommorna, vilda eller odlade. De plockas b\u00e4st direkt ner p\u00e5 fuktig b\u00e4dd i en plastl\u00e5da. Ska de fungera som dekoration m\u00e5ste de vara perfekta. Packa inte l\u00e5dan full utan l\u00e5t dem ligga en och en f\u00f6r att inte skadas.<\/p>\n<p>S\u00e5d\u00e4r ja, \u00a0d\u00e5 \u00e4r det bara att ta l\u00e5dan under armen och ge sig ut.<\/p>\n<p>Fr\u00e5gor p\u00e5 det?
