Eller ja, ett par dagar i alla fall. Letar upp ett par paket \u00e4lgf\u00e4rs i frysen. Och s\u00e5 \u00e4r det varje \u00e5r, att efter l\u00e5nga helger med finmat s\u00e5 vill alla helst ha n\u00e5got vanligt. F\u00e4rs \u00e4r perfekt. Enkelt med en miljon m\u00f6jligheter till variation.<\/strong><\/p>\n<p>F\u00f6r visst kan man variera viltk\u00f6ttet mer \u00e4n man tror. Jag har v\u00e4rldens b\u00e4sta jobb med m\u00f6jlighet att m\u00f6ta riktigt duktigt matfolk. F\u00f6r ett tag sedan tr\u00e4ffade jag en kock, Fredrik Eklund, inf\u00f6r en intervju och temat f\u00f6r samtalet var \u00e4lg och smak.<\/p>\n<p>Jag \u00e5terkommer till det m\u00f6tet inom kort, men f\u00f6r dagen \u00e4r det en sak han sa som ska fram i ljuset. Han sa att m\u00e5nga fastnar i sin krydds\u00e4ttning av vilt av gammal vana. Man t\u00e4nker enb\u00e4r, gr\u00e4dde, lingon bara f\u00f6r att det brukar vara s\u00e5. Men, sa Fredrik, testa till exempel \u00e4lg och citron. Helt fantastiskt bra. Och visst d\u00e5 g\u00f6r jag det.<\/p>\n<p>Vi k\u00f6r p\u00e5 \u00e4lgf\u00e4rsbiff med lite italiensk touch. Jag t\u00e4nker citron, vitl\u00f6k, parmesan\u2026.<\/p>\n<h2>Citrondoftande \u00e4lgf\u00e4rsbiffar (6 -8 pers)<\/h2>\n<h4>Ingredienser<\/h4>\n<ul>\n<li>1 kg \u00e4lgf\u00e4rs, eller annat vilt<\/li>\n<li>3 skivor vitt br\u00f6d<\/li>\n<li>1 citron<\/li>\n<li>1 kruka f\u00e4rsk basilika<\/li>\n<li>1 \u00bd dl grovriven f\u00e4rsk parmesan<\/li>\n<li>2 dl gr\u00e4dde<\/li>\n<li>1 \u00bd msk koncentrerad kalvfond<\/li>\n<li>1 \u00e4gg<\/li>\n<li>2 \u00e4ggulor<\/li>\n<li>2 tsk salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Det h\u00e4r \u00e4r en rej\u00e4l omg\u00e5ng f\u00e4rs som g\u00e5r bra att halvera. Ta helt enkelt h\u00e4lften s\u00e5 mycket av alla ingredienserna utom av \u00e4gget som man beh\u00e5ller ocks\u00e5 i en halv sats.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 125 grader. Mixa br\u00f6dskivorna till smulor. Tv\u00e4tta citronen supernoga. Riv det yttersta gula av skalet. Halvera citronen och pressa ena halvan \u00f6ver f\u00e4rsen. Strimla basilikan fint.<\/li>\n<li>Blanda alla ingredienserna. Forma r\u00e4tt stora biffar och ge dem en fin gyllenbrynt yta i stekpanna. L\u00e4gg biffarna i en form som st\u00e4lls in i ugnen f\u00f6r att bli klara. Det \u00e4r dem n\u00e4r innertemperaturen n\u00e5tt 70 grader. Lite \u00f6verkurs, men d\u00e5 vet man att de \u00e4r klara utan att vara torra.<\/li>\n<\/ol>\n<p>Som sagt f\u00e4rs ligger etta p\u00e5 topplistan \u00f6ver folkets favoritr\u00e4tter. Ett gott sk\u00e4l att h\u00e4nga p\u00e5, s\u00e5 jag k\u00f6r p\u00e5 med lite olika f\u00e4rsid\u00e9er i kommande inl\u00e4gg.
