Vi tar den enklaste r\u00e5varan och f\u00f6rvandlar den till en krispig, gyllenbrynt d\u00e4ngare p\u00e5 festbordet. K\u00f6kets f\u00f6rvandlingskonstn\u00e4r som klarar allt fr\u00e5n att vara mosig tr\u00f6stemat en snuvig tisdag till att bli en sj\u00e4lvklar del av de fina kalasen. V\u00e4lkommen in i k\u00f6ket!<\/strong> Vi v\u00e4nder oss till en klassiker, f\u00f6r att p\u00e5minna. Hasselbackspotatisen! Ni har v\u00e4l inte gl\u00f6mt bort den? Enkel, men \u00e5h n\u00e4r den \u00e4r omsorgsfullt lagad. Bara s\u00e5 bra. S\u00e5klart finns det en historia som jag fick mig till livs varje g\u00e5ng jag tillsammans med min mormor passerade krogen p\u00e5 Djurg\u00e5rden. Restaurang Hasselbacken med anor fr\u00e5n 1700-talet. Historien rymmer storbrand, celebriteter, konstn\u00e4rer, poeter, punsch\u00e5ngor och s\u00e5 till sist potatisen som blev till n\u00e4r krogen under en tid tidigt 1900-tal rymde en restaurangskola. R\u00e4tt kul \u00e4nd\u00e5, idag \u00e4r potatisreceptet spritt \u00f6ver hela v\u00e4rlden. Resultatet vi vill ha \u00e4r en potatis med gyllenbrynt krispig yta. Ett s\u00e4tt \u00e4r att mortla br\u00f6det till finaste str\u00f6br\u00f6d. Perfekt att sprinkla \u00f6ver hasselbackspotatisen.<\/figcaption><\/figure><\/p>\n<p>Hasselbackspotatis \u00e4r alldeles fantastisk till k\u00f6tt. Underbart till vilt och g\u00e4rna i kombination med r\u00f6dvinss\u00e5s. Men den funkar bra till fisk ocks\u00e5 och som en del i en helt vegetarisk r\u00e4tt. Allround helt enkelt. Receptet \u00e4r simpelt enkelt. Potatis, sm\u00f6r, salt och str\u00f6br\u00f6d, det \u00e4r allt. Jag \u00e4r inget fan av f\u00e4rdigk\u00f6pt str\u00f6br\u00f6d och tar mig alltid besv\u00e4ret att g\u00f6ra eget. Mixar eller mortlar helt enkelt n\u00e5gra dagar gammalt vitt br\u00f6d till smulor i den storlek jag \u00f6nskar. H\u00e4r ska det vara superfina sm\u00e5smulor. S\u00e5klart kan man l\u00e4gga till ingredienser. Ost, parmesan till exempel eller vitl\u00f6k kan s\u00e4kert bli bra. \u00d6rtkryddor funkar absolut och n\u00f6tter kanske. Ja, ni f\u00e5r testa b\u00e4st ni vill och v\u00e5gar. Det ursprungliga receptet att starta med har ni h\u00e4r.<\/p>\n<h2>Hasselbackspotatis 4 pers<\/h2>\n<ul>\n<li>1 kg potatis<\/li>\n<li>50 g sm\u00f6r<\/li>\n<li>2 msk str\u00f6br\u00f6d, helst egenmixat<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 225 grader. Skala potatisen. L\u00e4gg en och en i en tr\u00e4slev och skiva tills det tar stopp. Potatisskivorna h\u00e4nger ihop i botten eftersom du inte sk\u00e4r hela v\u00e4gen genom. En av bilderna i galleriet visar hur det g\u00e5r till.<\/li>\n<li>Sm\u00e4lt sm\u00f6ret. L\u00e4gg potatisarna i en form och pensla dem gener\u00f6st med sm\u00f6r. Salta och str\u00f6 p\u00e5 br\u00f6det. S\u00e4tt in i ugnen och l\u00e5t st\u00e5 tills de f\u00e5r fin f\u00e4rg och \u00e4r helt mjuka inuti. R\u00e4kna med att det tar ungef\u00e4r 40 min, men det kan skilja sig n\u00e5got beroende p\u00e5 potatisens storlek och ugnens egenheter.<\/li>\n<\/ol>\n<p>Potatis kan verkligen bli festligt och vill du kika p\u00e5 en annan klassisk variant s\u00e5 finns det h\u00e4r inl\u00e4gget om <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/pommes-riche-anna\/\">Pommes Riche och Pommes Anna.<\/a> Och till den som vill prata mat s\u00e4ger jag.
