Mer jul! Mer mellandagar! Och till slut mer ny\u00e5r! Det h\u00e4r \u00e4r \u00e5rets ultimata festmatvecka och n\u00e5gra r\u00e4tter \u00e4r p\u00e5 pricken r\u00e4tt hela tiden. H\u00e4r kommer en av dem, V\u00e4sterbottenspaj! Den \u00e4lskade! V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Hur s\u00e4ger man egentligen? \u00c4r det v\u00e4sterbottenpaj eller v\u00e4sterbottensostpaj eller..? Ja, ni vet ju hursomhelst vad jag menar.<\/p>\n<p>Jag fick h\u00f6ra att det h\u00e4r \u00e4r ett av v\u00e5ra mest googlade recept. Undra p\u00e5 det, sv\u00e5rslaget gott helt enkelt. Men varf\u00f6r d\u00e5 g\u00f6ra det igen\u2026s\u00e5klart f\u00f6r att m\u00e5nga uppenbarligen inte riktigt vet hur. Och f\u00f6r att jag serverar den i n\u00e4pet miniformat.<\/p>\n<p>Dessutom t\u00e4nker jag att det alltid \u00e4r bra att p\u00e5minna om pajdegens mysterier. Vi vill ju ha den spr\u00f6d och frasig, inte sant?! Men hur g\u00f6r man d\u00e5? H\u00e4r f\u00e5r du veta hur.<\/figcaption><\/figure>\n<p>Vi startar d\u00e4r. Med pajdegen. Och det finns n\u00e5gra saker att h\u00e5lla reda p\u00e5. H\u00e4r kommer den enkla, lyckade pajdegens checkpunkter.<\/p>\n<h3>Allt om pajskalet<\/h3>\n<ul>\n<li>S\u00e5h\u00e4r ser proportionerna ut. 50 g sm\u00f6r till 1 dl mj\u00f6l. \u00a0Och till en paj av vanligaste storleken blir det bra s\u00e5h\u00e4r:\u00a0150 g sm\u00f6r,\u00a03 dl vetemj\u00f6l,\u00a0\u00bd tsk salt,\u00a01 msk kallt vatten<\/li>\n<li>Pajdeg och kyla = sant! Kallt sm\u00f6r och snabbast m\u00f6jliga arbete \u00e4r b\u00e4sta starten. L\u00e4gg ingredienserna i matberedare och k\u00f6r. Klart p\u00e5 n\u00e5gra f\u00e5 sekunder.<\/li>\n<li>L\u00e5t degen vila. S\u00e5 fort degen g\u00e5tt ihop i matberedaren ska den sl\u00e5s in i plast och l\u00e4ggas i kylen en timma.<\/li>\n<li>Gr\u00e4dda degen p\u00e5 sm\u00f6rpapper i form. Kl\u00e4 formens botten med bakpl\u00e5tspapper. Antingen genom att klippa till pappret s\u00e5 att det passar, eller genom att trycka fast pappret mellan formens botten och den l\u00f6stagbara kanten.<\/li>\n<li>Pickad botten b\u00e4st. Kavla ut degen p\u00e5 l\u00e4tt mj\u00f6lat bord. Sk\u00e4r ut plattor efter formens m\u00e5tt. L\u00e4gg i botten, kl\u00e4 kanterna och picka botten med en gaffel. P\u00e5 s\u00e5 s\u00e4tt bubblar den inte upp.<\/li>\n<li>N\u00e4r formen \u00e4r degk\u00e4dd och pickad ska den in i frysen ungef\u00e4r 10 min. Under tiden v\u00e4rmer du upp ugnen till 225 grader. Ta formen direkt fr\u00e5n frysen och f\u00f6rgr\u00e4dda skalet till fin f\u00e4rg, ungef\u00e4r 10 min.<\/li>\n<\/ul>\n<p>Nu har du ett fint skal som ska fyllas. Och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2>V\u00e4sterbottenspaj (1 stor form el, 6 st sm\u00e5)<\/h2>\n<h4>Pajskal<\/h4>\n<ul>\n<li>se ovan<\/li>\n<\/ul>\n<h4>Fyllning<\/h4>\n<ul>\n<li>165 g v\u00e4sterbottensost (en liten)<\/li>\n<li>2 dl cr\u00e8me fraiche<\/li>\n<li>1 dl gr\u00e4dde<\/li>\n<li>3 \u00e4gg<\/li>\n<li>ev en liten dust cayennepeppar<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>l\u00f6jrom 25 g per person<\/li>\n<li>smetana, cr\u00e8me fraiche eller liknande<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Ugnen ska st\u00e5 p\u00e5 200 grader. Riv v\u00e4sterbottensosten p\u00e5 rivj\u00e4rnets grova sida. Blanda noga cr\u00e8me fraiche, gr\u00e4dde, \u00e4gg och ev. peppar. Fyll upp det f\u00f6rgr\u00e4ddade pajskalet, eller f\u00f6rdela mellan om du g\u00f6r flera.<\/li>\n<li>S\u00e4tt in i ugnen och gr\u00e4dda 30- 35 min om du har en stor form. Sm\u00e5former g\u00e5r klart p\u00e5 halva tiden. H\u00e5ll koll p\u00e5 ytan s\u00e5 att den inte f\u00e5r f\u00f6r mycket f\u00e4rg. T\u00e4ck i s\u00e5 fall. Fyllningen kommer att p\u00f6sa upp, men den l\u00e4gger sig igen n\u00e4r den kommer ut ur ugnen.<\/li>\n<li>Fyllningen kan verka lite dallrig och of\u00e4rdig, men prova att stick i den och kommer stickan upp utan att den \u00e4r smetig \u00e4r pajen klar.<\/li>\n<li>St\u00e4ll att svalna n\u00e5got innan servering. Jag tycker att den \u00e4r allra b\u00e4st kallljummen. Du fattar, eller hur?! Sk\u00e4r upp i st\u00f6rre bitar eller som jag i sm\u00e5 munsbitar att plocka \u00e5t sig och \u00e4ta med fingrarna.<\/li>\n<li>Fullkomligt underbart \u00e4r att servera en klick l\u00f6jrom till. Dessutom lite smetana, gr\u00e4ddfil eller liknande och riktigt omsorgsfullt finhackad r\u00f6d l\u00f6k.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Som sagt festen forts\u00e4tter i dagarna sju.
