Trettondagen med lagom stora krav p\u00e5 m\u00e5nga r\u00e4tter, fest och glam. Jag t\u00e4nker mest stillsam middag med en k\u00e4r gammal onkel. Ett enda \u00f6nskem\u00e5l har han i matfr\u00e5gan och det \u00e4r lingon. Sj\u00e4lvklart, s\u00e4ger jag och serverar efterr\u00e4tt p\u00e5 lingontema. Det blir en lingonpavlova! V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Trettondagen och Ps \u00e4lskade onkel ber\u00e4ttar en g\u00e5ng till om vad det egentligen \u00e4r vi firar. Precis som varje \u00e5r. De tre vise m\u00e4nnen vet de flesta, men visste ni att stj\u00e4rngossen fr\u00e5n b\u00f6rjan h\u00f6rde ihop med trettondagen och inte med lucia? Unga m\u00e4n vandrade runt den 6 januari och samlade ihop till en hejdundrande fest.<\/p>\n<p>I spetsen av t\u00e5get gick en stj\u00e4rnb\u00e4rare som symboliserade stj\u00e4rnan som de tre vise m\u00e4nnen f\u00f6ljde p\u00e5 v\u00e4g mot Jesusbarnet. Och ve den som inte l\u00e4mnade ett tillr\u00e4ckligt bra festbidrag n\u00e4r gossarna knackade p\u00e5. I t\u00e5get ingick en julbock som delade ut straff till den som var f\u00f6r sn\u00e5l. Lite av nutidens trick or treat allts\u00e5.<\/p>\n<p>N\u00e5, n\u00e5got ska man \u00e4ta mellan historierna och h\u00e4r kommer kv\u00e4llens dessert. En lingonpavlova. Jag \u00e4lskar kombinationen av den knaprigt s\u00f6ta mar\u00e4ngen, syrliga lingon, sval glass, mjuk gr\u00e4dde och kolas\u00e5s. S\u00e4rskilt gott blir det om kolas\u00e5sen smaks\u00e4tts med lite pepparkakskrydda. L\u00e4gg \u00e4ggvitor, socker, maizena och citron i en alldeles ren sk\u00e5l. Mar\u00e4ng \u00e4r k\u00e4nsligt f\u00f6r fett och minsta lilla gnutta kan g\u00f6ra mar\u00e4ngen om\u00f6jlig att vispa till h\u00e5rt skum. F\u00f6r det \u00e4r s\u00e5 den ska vara, blank, och med toppar som h\u00e5ller om man provar p\u00e5 en klick. Sk\u00e5len ska kunna v\u00e4ndas uppochner n\u00e4r mar\u00e4ngen \u00e4r klar.<\/li>\n<li>Spritsa eller klicka ut runda mar\u00e4nger p\u00e5 en pl\u00e5t kl\u00e4dd med bakpl\u00e5tspapper. Inte f\u00f6r n\u00e4ra varandra. De sv\u00e4ller i ugnen. Jag brukar g\u00f6ra minivarianter. Det blir 12 stycken av den h\u00e4r smeten. N\u00e4r du spritsat ut mar\u00e4ngerna tar du en sked och trycker till en liten f\u00f6rdjupning i mitten av varje.<\/li>\n<li>Gr\u00e4dda i ugnen f\u00f6rst 10 minuter innan du s\u00e4nker v\u00e4rmen till 100 grader och l\u00e5ter mar\u00e4ngerna st\u00e5 i ytterligare 15 minuter. Ta ut och l\u00e5t dem svalna. Mar\u00e4ngerna g\u00e5r bra att spara om inte alla g\u00e5r \u00e5t. Viktigt \u00e4r att de f\u00f6rvaras torrt.<\/li>\n<li>Spara n\u00e5gra av lingonen till dekoration och r\u00f6r resten tillsammans med sockret. Jag tycker tv\u00e5 matskedar socker r\u00e4cker, men smaka av och l\u00e4gg eventuellt till lite extra. Resultatet ska bi som r\u00e5r\u00f6rda lingon och har du redan god sylt s\u00e5 fungerar det finfint att anv\u00e4nda den.<\/li>\n<li>Vispa gr\u00e4dden och blanda varsamt i sylten.<\/li>\n<li>N\u00e4r det \u00e4r dags f\u00f6r dessert \u00e4r det bara att l\u00e4gga ihop delarna. Mar\u00e4ng i botten, glass om du vill ha det, lingongr\u00e4dde, kolas\u00e5sen och till sist n\u00e5gra lingon p\u00e5 toppen.<\/li>\n<\/ol>\n<p>En v\u00e4rdig avslutning p\u00e5 helgerna som sedan g\u00e5r \u00f6ver i oxveckorna. Ett utryck som pekar p\u00e5 det tunga, trista vi har framf\u00f6r oss, men jag \u00e4lskar den h\u00e4r tiden. Vardag och nystart!
