Min fina mamma jag \u00e4lskar dig!\u201d Mer pepp \u00e4n s\u00e5 beh\u00f6vs knappast f\u00f6r att b\u00e4dda in dagens matlagning i ett lyckans skimmer. Det h\u00e4r \u00e4r mat som kan f\u00f6renklas eller g\u00f6ras till. Allt efter dagsform och lust. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag \u00e4r kluven till alltf\u00f6r mycket anpassning. M\u00e5ste man g\u00f6ra burgare f\u00f6r att alla runt bordet ska vara n\u00f6jda? Nej, men det \u00e4r klart att med tre halvvuxna ungar runt bordet s\u00e5 g\u00e5r burgare hem. Och s\u00e5 gillar jag ju mat i kombination med br\u00f6d. N\u00e4stan alltid gott och synnerligen l\u00e4tt att variera.<\/p>\n<p>Burgare p\u00e5 fisk \u00e4r inte alls sv\u00e5rt och valet av sort \u00e4r fritt. Eftersom jag i min n\u00e4rhet har en alltf\u00f6r ivrig fiskare har jag tillg\u00e5ng p\u00e5 en hel del sm\u00e5fisk. Varf\u00f6r sl\u00e4nga tillbaka f\u00e5ngsten n\u00e4r den kan visas upp och v\u00e4cka beundran trots sin ringa storlek?<\/p>\n<p>I frysen ligger d\u00e4rf\u00f6r ett antal pyttefil\u00e9er av abborre som knappast h\u00e5ller f\u00f6r annan matlagning \u00e4n malning. Burgarmat allts\u00e5. Men visst anv\u00e4nder jag k\u00f6pta fil\u00e9er ocks\u00e5 ibland, \u00e4lskar kolja och torsk f\u00f6rst\u00e5s. Alternativet \u00e4r matberedare och det funkar lika bra. G\u00f6r mig ocks\u00e5 besv\u00e4ret att mixa eget str\u00f6br\u00f6d. Picklade gr\u00f6nsaker, eller picklad l\u00f6k ger verkligen burgaren en extra skjuts.<\/figcaption><\/figure>\n<p>Jag mal f\u00e4rs till burgarna i kvarn. Har en bra kvarn superenkel att s\u00e4tta ihop och l\u00e4tt att diska. Ett alternativ \u00e4r matberedare och ett tips \u00e4r att inte k\u00f6ra maskinen f\u00f6r l\u00e4nge. Lite grovmalet, eller grovhackat \u00e4r gott.<\/p>\n<p>Oavsett metod s\u00e5 \u00e4r det superviktigt med skinande rena h\u00e4nder. Malning inneb\u00e4r att det blir enorma ytor f\u00f6r mindre trevliga g\u00e4ster som bakterier att hitta plats att f\u00e4sta p\u00e5.<\/p>\n<p>Jag gillar att blanda f\u00e4rsen med gr\u00e4dde. D\u00e5 blir burgarna saftigare och s\u00e4rskilt viktigt med en tillsats av n\u00e5got fett blir det om du v\u00e4ljer vit fisk som generellt \u00e4r mager. Lax \u00e4r fetare s\u00e5 ing\u00e5r den i f\u00e4rsen kan du spara lite p\u00e5 gr\u00e4dden.<\/p>\n<p>Det h\u00e4r kan bli en superenkel r\u00e4tt d\u00e4r du st\u00e5r f\u00f6r burgarna, men bygger vidare med f\u00e4rdigk\u00f6pta ingredienser. Alternativet \u00e4r lyxburgare d\u00e4r du bakar br\u00f6det sj\u00e4lv, g\u00f6r din egen majonn\u00e4s och picklar gr\u00f6nsaker. Satsa stort och g\u00f6r allt sj\u00e4lv eller v\u00e4lj n\u00e5gon del.<\/p>\n<p>Recept och tips p\u00e5 varje del f\u00f6r sig hittar du i tidigare inl\u00e4gg och l\u00e4nkarna har du h\u00e4r:<\/p>\n<p><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/sasong-for-burgarbrod\/\">Hamburgerbr\u00f6d med briochek\u00e4nsla<\/a><\/p>\n<p><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/majonnas\/\">Majonn\u00e4s p\u00e5 15 sekunder<\/a><\/p>\n<p><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/buffeakuten-lax-och-snabbpicklade-gronsaker\/\">Picklade gr\u00f6nsaker.<\/a>\u00a0Vill du bara ha r\u00f6dl\u00f6k s\u00e5 funkar det med samma lag.<\/p>\n<p>Och s\u00e5 har vi sj\u00e4lva burgarna, s\u00e5h\u00e4r g\u00f6r jag mina:<\/p>\n<h2>Fiskburgare<\/h2>\n<ul>\n<li>600 g vit fisk t.ex. kolja, torsk eller abborre<\/li>\n<li>\u00be tsk salt<\/li>\n<li>1 \u00e4gg<\/li>\n<li>1 dl gr\u00e4dde<\/li>\n<li>3 skivor vitt formbr\u00f6d, eller panko<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>4 hamburgerbr\u00f6d<\/li>\n<li>sallat, g\u00e4rna flera sorter<\/li>\n<li>n\u00e5got picklat, gr\u00f6nsaker och\/eller r\u00f6dl\u00f6k<\/li>\n<li>majonn\u00e4s<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Sk\u00e4r fisken i bitar, salta och mal p\u00e5 mellanskiva i kvarn eller l\u00e4gg i matberedare. Blanda med \u00e4gg och gr\u00e4dde.<\/li>\n<li>K\u00f6r br\u00f6det i mixer till sm\u00e5smulor. Nu ska det formas biffar som ska v\u00e4ndas i br\u00f6det och jag vill ge ett tips. G\u00f6r det noggrant, bara f\u00f6r att det blir s\u00e5 enormt mycket b\u00e4ttre.<\/li>\n<li>Jag har f\u00e5tt lite sk\u00e4ll f\u00f6r att det \u00e4r \u00f6verambiti\u00f6st med eget str\u00f6br\u00f6d och fine, ta panko det blir ocks\u00e5 bra. Men inte riktigt lika bra: )<\/li>\n<li>Dags att steka och r\u00e5det d\u00e4r \u00e4r detsamma. Ta det lugnt och arbeta varsamt. Vill du \u00e5t den d\u00e4r perfekta frasiga ytan m\u00e5ste du l\u00e4gga lite sj\u00e4l i arbetet.<\/li>\n<li>Dags att l\u00e4gga ihop h\u00e4rligheten.
