Ute tvekar allt gr\u00f6nt inf\u00f6r kylan. Allt utom rabarbern. Och den kan underh\u00e5lla en matlagare l\u00e4nge. Idag satsar jag p\u00e5 rabarberchutney. Hett och kryddigt! V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>T\u00e4nk rabarber och k\u00e4nn hur det b\u00f6rjar dra lite bak i kinderna. Surt! Helt r\u00e5 f\u00f6rsvinner karakt\u00e4ren i n\u00e4stan bara syrligt. Men s\u00e5 fort den f\u00e5r lite omsorg i k\u00f6ket h\u00e4nder grejer. Smaken framtr\u00e4der och det g\u00e5r inte att ta miste. Rabarber smakar verkligen rabarber.<\/p>\n<p>\u00c5h, de d\u00e4r kn\u00e4ckiga pajerna, saften och marmeladen. Men rabarbern har ocks\u00e5 potential att bli ett kryddigt tillbeh\u00f6r till lagad mat. Till grytor och till grillat. Och s\u00e5 har vi min specialare, rabarberchutney till ostbrickan.<\/p>\n<p>Det h\u00e4r \u00e4r en variant med mycket kryddor. Lite indiskt kanske. Curry, ingef\u00e4ra, chili och vitl\u00f6k. Ett antal fikon f\u00e5r vara med f\u00f6r en mustig s\u00f6tma och ett trevligt litet knaster i varje munsbit.<\/figcaption><\/figure>\n<p>S\u00e4rskilt bra passar rabarberchutneyn till grytor p\u00e5 vildsvin, eller vanligt \u00a0fl\u00e4skk\u00f6tt s\u00e5klart. Kyckling \u00e4r ocks\u00e5 en given kompanjon liksom olika vegetariska r\u00e4tter, wokar och grytor.<\/p>\n<p>Och s\u00e5 har den fungerat som r\u00e4ddning f\u00f6r de d\u00e4r s\u00e4rskilda dagarna d\u00e5 jag verkligen inte orkar. Dagarna n\u00e4r fr\u00e5gan \u201dvad blir det till middag?\u201d aldrig f\u00e5r n\u00e5got riktigt bra svar. De som slutar med \u201d\u00e4h, vi k\u00f6r te och mackor\u201d.<\/p>\n<p>Vi laddar upp med med goda ostar och flera sorters br\u00f6d. och s\u00e5 kommer rabarberchutneyn fram. Ruggigt gott p\u00e5 ostmacka faktiskt.<\/p>\n<p>Hur du \u00e4n v\u00e4ljer att \u00e4ta din rabarberchutney s\u00e5 \u00e4r den enkel att g\u00f6ra. Det h\u00e4r \u00e4r en liten sats som fyller en halvlitersburk. Och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2>Kryddig rabarberchutney<\/h2>\n<ul>\n<li>400 gram rabarber, 4-6 stj\u00e4lkar<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>2 vitl\u00f6ksklyftor<\/li>\n<li>5 torkade fikon<\/li>\n<li>2 cm f\u00e4rsk ingef\u00e4ra<\/li>\n<li>3 \u00bd dl socker<\/li>\n<li>1 msk curry<\/li>\n<li>\u00bd dl \u00e4ppelcidervin\u00e4ger<\/li>\n<li>chiliflakes<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Skiva rabarberstj\u00e4lkarna. Finhacka l\u00f6k och vitl\u00f6k.<\/li>\n<li>Sk\u00e4r fikonen i sm\u00e5 bitar och hacka ingef\u00e4ran riktigt fint. Jag brukar inte bry mig om att skala ingef\u00e4ran.<\/li>\n<li>Blanda alla ingredienserna i en kastrull. M\u00e4ngden chili beror p\u00e5 dig. Gillar du chilihetta s\u00e5 tar du ett par nypor annars mindre.<\/li>\n<li>Koka upp och l\u00e5t sm\u00e5puttra tjugo minuter. R\u00f6r om ibland s\u00e5 att inget kokar fast. Den kommer att tjockna n\u00e4r den svalnar, men \u00e4r den mycket rinnig f\u00e5r den st\u00e5 kvar p\u00e5 plattan ytterligare en stund.<\/li>\n<li>H\u00e4ll upp den heta chutneyn i en absolut ren burk.\u00a0 L\u00e5t svalna och f\u00f6rvara sedan i kylen.<\/li>\n<\/ol>\n<p>Eftersom det \u00e4r rabarbertider s\u00e5 kommer det snart mer om dem.
