H\u00e5rda ord och anklagande blickar. Sylten \u00e4r slut! Pannkakor utan sylt. Neej, det funkar inte! Pang, d\u00e4r sm\u00e4ller en d\u00f6rr igen. Missn\u00f6jet \u00e4r\u2026ska vi s\u00e4ga uppenbart.<\/strong><\/p>\n<p>Soppan \u00e4r klar, och ett vackert fat med frasiga pannkakor tronar p\u00e5 bordet. Som den r\u00e5diga moder jag \u00e4r sliter jag upp frysen, h\u00e4ller upp en halvliter blandade bl\u00e5b\u00e4r och hallon plockade f\u00f6rra sommaren. Och ja, fem minuter senare har vi sylt. F\u00f6r hur sv\u00e5rt \u00e4r det? Faktiskt inte alls.<\/p>\n<p>Id\u00e9n med det h\u00e4r inl\u00e4gget \u00e4r inte att hylla mig sj\u00e4lv som den goda syltkokande modern, utan att reflektera en smula \u00f6ver ingrediensen socker. M\u00e5nga \u00e4r absolutister och helt kompromissl\u00f6sa. &#8221;Inte ett sockerkorn kommer \u00f6ver min tr\u00f6skel!&#8221;. Men jag \u00e4r inte d\u00e4r, inte alls. Men den h\u00e4r lilla syltincidenten fick mig \u00e4nd\u00e5 att fundera.<\/p>\n<p><strong>Om man sl\u00e5r upp ett recept p\u00e5 sylt \u00e4r principen ofta ungef\u00e4r dubbelt s\u00e5 mycket b\u00e4r som socker. Ett halvt kg till ett kilo b\u00e4r. En tredjedel av syltburken \u00e4r allts\u00e5 rent socker. Och sk\u00e4let? Smak till viss del, men allra mest handlar det om att socker konserverar.<\/strong><\/p>\n<p>Man ska kunna spara sylten. Man g\u00f6r s\u00e5 f\u00f6r att s\u00e5 har man alltid gjort. <strong>Syltning \u00e4r helt enkelt en gammaldags konserveringsmetod som verkligen beh\u00f6vdes innan frysen fanns. Sockret h\u00e5ller ordning p\u00e5 ov\u00e4lkomna mikroorganismer. D\u00e5 var det om\u00f6jligt att spara b\u00e4ren utan sockret. Men nu?<\/strong><\/p>\n<p>Hursomhelst s\u00e5 blev min lighta snabbvariant kanongod. Sylten smakade b\u00e4r och s\u00f6tt. I den ordningen, ist\u00e4llet f\u00f6r s\u00f6tt och b\u00e4r. Barnen var n\u00f6jda och sylten tog slut. Vilket ju var meningen eftersom den inte inneh\u00f6ll allt det d\u00e4r konserverande sockret.<\/p>\n<p><strong>Och s\u00e5h\u00e4r f\u00e5r det bli nu. Beh\u00f6vs det sylt s\u00e5 har jag b\u00e4r i frysen. Sedan f\u00e5r jag l\u00e4gga fem minuter p\u00e5 att koka en omg\u00e5ng som r\u00e4cker till maten f\u00f6r dagen.<\/strong><\/p>\n<p>Det h\u00e4r \u00e4r inte n\u00e5got principbeslut som g\u00e4ller f\u00f6r alltid. Jag gillar absolut id\u00e9n med sommar, bl\u00e5b\u00e4rsfl\u00e4ckiga kn\u00e4n och syltkok, men man kan ju variera sig. Fungerar alldeles utm\u00e4rkt om sylten inte ska sparas.<\/figcaption><\/figure>\n<h2>Sockersn\u00e5l snabbsylt<\/h2>\n<ul>\n<li>\u00bd l (ca 300 g) blandade hallon och bl\u00e5b\u00e4r<\/li>\n<li>\u00bd dl (ca 45 g) str\u00f6socker, eller syltsocker<\/li>\n<li>\u00bd vaniljst\u00e5ng, eller \u00bd tsk \u00e4kta vaniljpulver<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Ta b\u00e4ren ur frysen och l\u00e4gg dem i en kastrull tillsammans med sockret. Syltsocker ger en lite fastare sylt om den f\u00e5r en stund p\u00e5 sig innan man ska \u00e4ta.<\/li>\n<li>Str\u00f6 p\u00e5 vaniljpulvret eller halvera vaniljst\u00e5ngen innan du delar den p\u00e5 l\u00e4ngden. Skrapa ur fr\u00f6na och l\u00e4gg i kastrullen tillsammans med st\u00e5ngen som ocks\u00e5 ger fin smak. Koka upp p\u00e5 svag v\u00e4rme. R\u00f6r n\u00e5gra g\u00e5nger tills sockret \u00e4r sm\u00e4lt.<\/li>\n<li>H\u00e4ll upp i en sk\u00e5l och l\u00e5t svalna n\u00e5got eller helt. Servera till pannkakor, eller testa den varm varm till glass.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Jag \u00e4r en ekorre. En samlare. Men ibland blir det f\u00f6r mycket. Jag vet inte riktigt vad jag ska g\u00f6ra med g\u00f6mmorna. Nu \u00e4r det bl\u00e5b\u00e4rsf\u00f6rr\u00e5den som v\u00e4xt mig lite \u00f6ver huvudet. Har ni id\u00e9er?
