S\u00e5 mycket mer \u00e4n man kan tro g\u00e5r att \u00e4ta. Jag har smakat mig igenom m\u00e5nga \u00f6rter, blommor, blad och fr\u00f6er och h\u00e4r kommer en favorit med kort s\u00e4song. Det blir granskottsmajonn\u00e4s. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Just nu v\u00e4xer granarna till. L\u00e4ngst ut p\u00e5 grenarna sitter sm\u00e5 ljusgr\u00f6na skott. De \u00e4r mjuka och \u00f6rtartade, inte alls barriga \u00e4n. De \u00e4r syrliga och v\u00e4nligt skogiga i smaken. R\u00e4tt omh\u00e4ndertagna en delikatess.<\/p>\n<p>Men, och det h\u00e4r \u00e4r viktigt, de \u00e4r inte till\u00e5tna att plocka hursomhelst. Kvistar och grenar ing\u00e5r inte i allemansr\u00e4tten som ger oss tillg\u00e5ng till s\u00e5 mycket annat gr\u00f6nt. Man m\u00e5ste be mark\u00e4garen om lov. Jag har hittills aldrig f\u00e5tt ett nej utan tv\u00e4rtom bara nyfikna fr\u00e5gor, men som sagt fr\u00e5ga f\u00f6rst. F\u00f6r att det \u00e4r s\u00e5 fantastiskt gott och f\u00f6r att det \u00e4r s\u00e5 enkelt. L\u00e4gg in i ugn, ta ut, vik bort skinnet och \u00e4t helt benfria bitar.<\/figcaption><\/figure>\n<p>Jag har tidigare gjort<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/salt-och-olja-gott-av-granskott\/\"> ett salt av granskott och en illande gr\u00f6n olja <\/a>h\u00e4r p\u00e5 bloggen och idag blir det majonn\u00e4s. Smaken kommer fram otroligt fint tillsammans med det feta i olja och \u00e4gg. Helt underbart till en enkel tillagad r\u00f6ding, till en grillad k\u00f6ttbit, till nykokta prim\u00f6rer eller p\u00e5 en macka med n\u00e5got r\u00f6kt.<\/p>\n<p>\u00c4nnu b\u00e4ttre blir det om du s\u00e4nker blicken p\u00e5 din skogstur och letar upp en tuva harsyra. Den tillf\u00f6r en frisk syra som g\u00f6r citron helt \u00f6verfl\u00f6digt. L\u00e5ter det lite kr\u00e5ngligt s\u00e5 kan jag lova motsatsen. Det h\u00e4r \u00e4r mycket enkelt och snabbt.<\/p>\n<p>F\u00f6rst en beskrivning p\u00e5 ugnstillagad r\u00f6ding. Sv\u00e5rt? Knappast! S\u00e4tt ugnen p\u00e5 200 grader. Salta den rensade r\u00f6dingen ordentligt runtom och inuti. L\u00e4gg in den i ugnen. Ta ut efter femton till tjugo minuter n\u00e4r k\u00f6ttet l\u00e4tt lossar fr\u00e5n ryggbenet, eller n\u00e4r innertemperaturen \u00e4r 56 grader. Klart.<\/p>\n<p>Och nu blir det majjo!<\/p>\n<h2>Granskottsmajonn\u00e4s<\/h2>\n<ul>\n<li>1 \u00e4gg<\/li>\n<li>1 msk dijonsenap<\/li>\n<li>2 \u00bd dl rapsolja<\/li>\n<li>2 dl ljusgr\u00f6na granskott, de ska vara torra, inte regnbl\u00f6ta eller nysk\u00f6ljda<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Alla ingredienserna ska ha samma temperatur n\u00e4r du startar. Jag brukar g\u00e5 p\u00e5 rumstempererat.<\/li>\n<li>Kn\u00e4ck \u00e4gget och l\u00e4gg alla ingredienserna i beh\u00e5llaren till en stavmixer. Mixa till en sl\u00e4t, kr\u00e4mig, gr\u00f6n majonn\u00e4s. Smaka av med salt.<\/li>\n<\/ol>\n<p>Servera den vackert gr\u00f6na och skogiga majjon till din r\u00f6ding eller annat sovel och koka n\u00e5gra sm\u00e5 fina f\u00e4rskpotatisar till.
