Pulled! F\u00f6r bara ett n\u00e5gra \u00e5r sedan visste ingen, men nu \u00e4r r\u00e4tten lika hemma som k\u00e5ldolmar. Eller mycket mer hemma faktiskt. Och varf\u00f6r inte?\u00a0 S\u00e5 gott och s\u00e5 enkelt. Dessutom ett s\u00e4tt att anv\u00e4nda k\u00f6ttdetaljer vi varit lite skeptiska till. Idag blir det burgare p\u00e5 l\u00e5ngbakat och v\u00e4lkryddat k\u00f6tt. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>\u00c5rets frysrensning. Nu ska de t\u00f6mmas f\u00f6r att fyllas p\u00e5 med nytt. Vi st\u00e5r inf\u00f6r sk\u00f6rd och jakt. Frysrensning l\u00e5ter det trist? Inte alls, nu blir det fest f\u00f6r m\u00e5nga.<\/p>\n<p>Jag samlar ihop alla k\u00f6ttdetaljer som passar f\u00f6r pulled. Framdelsk\u00f6tt \u00e4r s\u00e4krast. T\u00e4nk bog, karr\u00e9, eller h\u00f6grev beroende p\u00e5 vilken sorts k\u00f6tt du har. Jag k\u00f6r p\u00e5 vilt, r\u00e5djur, dov, \u00e4lg och vildsvin.\u00a0 Fl\u00e4skk\u00f6tt \u00e4r ursprunget, \u201dpulled pork\u201d, men egentligen \u00e4r alla k\u00f6ttslag m\u00f6jliga att hantera s\u00e5h\u00e4r. Det vill s\u00e4ga tillaga l\u00e4nge och kryddigt s\u00e5 att det blir s\u00f6derfallande m\u00f6rt. Det h\u00e4r tar tid. Men med planering \u00e4r arbetsinsatsen liten. Egentligen ska den h\u00e4r r\u00e4tten tillagas under lock p\u00e5 grill. F\u00f6r mig g\u00e5r det bort. Jag \u00e4r ute efter resultatet med smakrikt k\u00f6tt som g\u00e5r att dra is\u00e4r inte efter grillupplevelsen, just idag i alla fall. Vi har jagat och odlat, sk\u00f6rdat, bakat, gjort egen majonn\u00e4s, barbeques\u00e5s och picklat. Slow,slooow snarare \u00e4n fast, men snacka om att \u00e4ta med k\u00e4nsla.<\/figcaption><\/figure>\n<figure id=\"attachment_3416\" aria-describedby=\"caption-attachment-3416\" style=\"width: 682px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2017\/07\/Pulled-2-e1500652626870.jpg\"><img loading=\"lazy\" class=\"size-large wp-image-3416\" src=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2017\/07\/Pulled-2-682x1024.jpg\" alt=\"pulled-juli17\" width=\"682\" height=\"1024\" \/><\/a><figcaption id=\"caption-attachment-3416\" class=\"wp-caption-text\">K\u00f6ttet \u00e4r l\u00e5ngbakat i kryddig barbeques\u00e5s. Br\u00f6det \u00e4r bakat och s\u00e5 ska vi ha n\u00e5got till. Jag picklar f\u00f6r att f\u00e5 in n\u00e5got syrligt och s\u00e5 blir det hemgjord majjo. Besv\u00e4rligt, nej det h\u00e4r \u00e4r burgarens snabbaste tillbeh\u00f6r. Gurka och r\u00f6dl\u00f6k skivas och f\u00e5r ligga minst en timma i 1-2-3-lag: en del \u00e4ttika, tv\u00e5 delar socker och tre delar vatten. L\u00e4nk till inl\u00e4gg om egen majjo hittar du nedan.<\/figcaption><\/figure>\n<p>G\u00f6r man r\u00e4tten i ugn s\u00e5 sk\u00f6ter den sig sj\u00e4lv. Det fungerar ocks\u00e5 bra att g\u00f6ra den dagen innan den ska \u00e4tas. Bra om det handlar om en m\u00e5ltid f\u00f6r m\u00e5nga.<\/p>\n<p>Vill du baka br\u00f6det sj\u00e4lv s\u00e5 har du recept p\u00e5 ett briocheliknande burgarbr\u00f6d<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/sasong-for-burgarbrod\/\"> h\u00e4r. <\/a>Och egen majonn\u00e4s f\u00e5r du till p\u00e5 bara 15 sekunder som <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/majonnas\/\">i inl\u00e4gget h\u00e4r<\/a>. Och nej, du beh\u00f6ver inte odla dina egna tomater f\u00f6r att g\u00f6ra det h\u00e4r. Tomater p\u00e5 burk fungerar alldeles utm\u00e4rkt. Men nu kastar vi oss \u00f6ver k\u00f6ttet. Det blir en enkel och smakrik s\u00e5s att tillaga k\u00f6ttet i. Och s\u00e5h\u00e4r g\u00e5r det till<\/p>\n<h2>Pulled burgare<\/h2>\n<ul>\n<li>1 kg framdelsk\u00f6tt, bog, karr\u00e9, bringa eller h\u00f6grev (r\u00e4kna med 125-150 g per burgare)<\/li>\n<li>2 gula l\u00f6kar<\/li>\n<li>4 vitl\u00f6ksklyftor<\/li>\n<li>500 gram f\u00e4rska tomater eller 1 burk krossade<\/li>\n<li>1 msk honung<\/li>\n<li>1 msk balsamvin\u00e4ger<\/li>\n<li>1 &#8211; 1 \u00bd tsk chipotlepulver (r\u00f6kt chili)<\/li>\n<li>1 tsk mald spiskummin<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>Burgarbr\u00f6d 1 el. tv\u00e5 per person beroende p\u00e5 vilka som ska \u00e4ta, farmor eller rugbylaget<\/li>\n<li>Sallat<\/li>\n<li>Tomatskivor<\/li>\n<li>Majonn\u00e4s, se l\u00e4nk ovan<\/li>\n<li>Picklad r\u00f6dl\u00f6k och gurka: Skiva och l\u00e4gg i 1-2-3- lag minst en timma: 1 del \u00e4ttika, 2 delar socker, 3 delar vatten<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Putsa k\u00f6ttet och dela eventuellt i bitar. Salta l\u00e4tt och l\u00e4gg \u00e5t sidan.<\/li>\n<li>Skiva l\u00f6k och vitl\u00f6k. Fr\u00e4s l\u00e4tt i olja innan du h\u00e4ller p\u00e5 tomater \u00a0och \u00f6vriga ingredienser. Puttra ihop till en s\u00e5s.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 150 grader. L\u00e4gg k\u00f6ttet i en gryta eller form. T\u00e4ck med lock eller folie och st\u00e4ll in i ugnen. L\u00e5t st\u00e5 tv\u00e5 till tre timmar tills k\u00f6ttet \u00e4r m\u00f6rt s\u00e5 att det enkelt kan dras och f\u00f6rdelas i tr\u00e5diga bitar.<\/li>\n<li>Kontrollera ibland att det inte kokar torrt, d\u00e5 f\u00e5r du fylla p\u00e5 med v\u00e4tska. Lite fond brukar bli bra. \u00a0Tillagningen ska vara fuktig och p\u00e5 slutet ska \u201ds\u00e5sen\u201d vara som en tjock smakrik barbecues\u00e5s att blanda med k\u00f6ttet. Inte f\u00f6r torrt inte rinnigt.<\/li>\n<li>Det h\u00e4r kan g\u00f6ras i god tid. K\u00f6ttet kan v\u00e4rmas igen f\u00f6re servering. Lite trickigt att hitta ett snyggt s\u00e4tt att l\u00e4gga upp, men jag brukar ta upp k\u00f6ttet p\u00e5 en sk\u00e4rbr\u00e4da och dra det i bitar. Sedan f\u00e5r alla bygga sina egna burgare och servera sig sj\u00e4lva.<\/li>\n<\/ol>\n<p>Perfekt till sommarfesten som man vill delta sj\u00e4lv i. Grill \u00e4r h\u00e4rligt, men det stj\u00e4l all ens tid och uppm\u00e4rksamhet. Ibland kan det vara fint att bara mingla.
