Oavsett om du odlar sj\u00e4lv eller inte s\u00e5 \u00e4r det h\u00e4r b\u00e4sta tiden. Det \u00e4r nu de \u00e4r som s\u00f6tast och mest smakrika. Varje dag \u00e4r en tomatutmaning. Idag blir det Panzanella, en m\u00e4rkv\u00e4rdigt bra kombination av tomater och gammalt br\u00f6d. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Gammalt br\u00f6d \u00e4r en underskattad r\u00e5vara. Kan man s\u00e4ga s\u00e5? Hursomhelst s\u00e5 \u00e4r det d\u00e4r lite torra tr\u00e5kiga mycket anv\u00e4ndbart. Det ska vara just torrt, absolut inte m\u00f6gligt eftersom br\u00f6dm\u00f6gel \u00e4r mindre h\u00e4lsosamt och sprider sig i br\u00f6det p\u00e5 ett s\u00e4tt som inte alltid syns tydligt. Man kan allts\u00e5 inte sk\u00e4ra bort det synliga och hoppas att resten \u00e4r okej.<\/p>\n<p>Surdegsbr\u00f6d som f\u00e5r ligga luftigt brukar torka p\u00e5 r\u00e4tta s\u00e4ttet. Just idag f\u00e5r det nytt liv i en sallad fr\u00e5n Italien. Den finns i m\u00e5nga varianter och jag gillar att g\u00f6ra den s\u00e5 enkelt som m\u00f6jligt, men f\u00f6ruts\u00e4ttningen \u00e4r riktigt goda tomater och g\u00e4rna en egenodlad krispig gurka.<\/p>\n<figure id=\"attachment_3504\" aria-describedby=\"caption-attachment-3504\" style=\"width: 682px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2017\/08\/Panzanella-6-e1503298327486.jpg\"><img loading=\"lazy\" class=\"size-large wp-image-3504\" src=\"https:\/\/blogg.land.se\/skog-till-bord\/wp-content\/uploads\/sites\/17\/2017\/08\/Panzanella-6-682x1024.jpg\" alt=\"panzanella-aug17\" width=\"682\" height=\"1024\" \/><\/a><figcaption id=\"caption-attachment-3504\" class=\"wp-caption-text\">Panzanella \u00e4r salladen som s\u00e4kert har sitt ursprung i gammalt br\u00f6d. En s\u00e4tt att ta tillvara och ge ett helt nytt liv till n\u00e5got som annars k\u00e4ndes r\u00e4tt pass\u00e9.<\/figcaption><\/figure>\n<p>Den som sl\u00e5r sig ner p\u00e5 en taverna i Florens kommer att f\u00e5 salladen med br\u00f6det mjukt efter att det dragit i en blandning av olja och vin\u00e4ger. Jag gillar knaprigt krisp och steker br\u00f6det i olja innan det blandas i salladen strax innan servering.<\/p>\n<p>Vet ni f\u00f6rresten att torrt br\u00f6d inte alltid \u00e4r bara torrt? Har br\u00f6det f\u00f6rvarats kallt s\u00e5 \u00e4r det ist\u00e4llet s\u00e5 att f\u00f6r\u00e4ndringar i st\u00e4rkelsen g\u00f6r det h\u00e5rt. Till viss del kan den mjuka konsistensen h\u00e4mtas tillbaka om br\u00f6det f\u00e5r en liten v\u00e4rmekick i rost eller panna.<\/p>\n<p>Jag presenterar en enkel variant av salladen, men den kan absolut byggas ut och bli till en hel m\u00e5ltid. G\u00f6r ett till\u00e4gg av kokta b\u00f6nor, stora vita eller svarta. Den kan serveras med \u00e4gghalvor eller varf\u00f6r inte med ost? Tunt skivad parmesanost eller ett par gener\u00f6sa skivor kr\u00e4mig italiensk Taleggio.<\/p>\n<h2>Panzanella<\/h2>\n<ul>\n<li>4 skivor surdegsbr\u00f6d, gammalt och torrt g\u00e5r utm\u00e4rkt<\/li>\n<li>600 g tomater, g\u00e4rna (solvarma) blandade sorter<\/li>\n<li>1 liten gurka<\/li>\n<li>1 r\u00f6d l\u00f6k<\/li>\n<li>svarta oliver, s\u00e5 m\u00e5nga du vill<\/li>\n<li>f\u00e4rsk basilika, gener\u00f6st<\/li>\n<\/ul>\n<h4>Dressing<\/h4>\n<ul>\n<li>2 msk r\u00f6dvinsvin\u00e4ger<\/li>\n<li>3\/4 dl olivolja<\/li>\n<li>\u00bd vitl\u00f6ksklyfta, riven<\/li>\n<li>salt<\/li>\n<li>svartpeppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Sk\u00e4r br\u00f6det i t\u00e4rningar. Jag g\u00f6r dem r\u00e4tt stora. Droppa olja \u00f6ver och salta l\u00e4tt. Stek till fin f\u00e4rg.<\/li>\n<li>Sk\u00e4r tomaterna i bitar. T\u00e4rna gurkan grovt.\u00a0 Skiva l\u00f6ken s\u00e5 tunt du kan.<\/li>\n<li>Blanda dressingen i en stor sk\u00e5l. Vin\u00e4ger, olja, salt och peppar. V\u00e4nd ner tomater, gurka, l\u00f6k och oliver. L\u00e5t st\u00e5 i rumstemperatur f\u00f6r att dra tio minuter.<\/li>\n<li>Precis innan servering v\u00e4nder du ner br\u00f6det och blad av f\u00e4rsk basilika.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>\u00c4t som en del av en st\u00f6rre m\u00e5ltid, som sidor\u00e4tt eller som en l\u00e4tt lunch.<\/p>\n<p>Kastar mig genast ut i v\u00e4xthuset f\u00f6r att sk\u00f6rda mer av det r\u00f6da, oranga, gula, gr\u00f6na och brunr\u00f6da, doftande guldet.
