Lite medelhav, lite semester, men icke, det h\u00e4r \u00e4r egen \u00f6stg\u00f6task\u00f6rd och plain vardag. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>All sk\u00f6rd \u00e4r en gl\u00e4dje, men s\u00e4rskilt kul \u00e4r kanske de d\u00e4r grejerna som inte finns att k\u00f6pa.\u00a0 Jag testar olika sorters aubergine och tomater i alla m\u00f6jliga f\u00e4rger och former. Vi har l\u00e4rt k\u00e4nna varandra v\u00e4l nu. Fr\u00f6na sattes i februari s\u00e5 varje planta \u00e4r som en gammal god v\u00e4n.<\/p>\n<p>N\u00e4r barnens \u00f6nskem\u00e5l om middag rungar: &#8221;moussaka!&#8221; ger jag mig ut f\u00f6r att plocka ihop ingredienserna. \u00a0Och d\u00e5 sl\u00e5r det mig, visst \u00e4r de sl\u00e4kt? Tillsammans med k\u00f6ttf\u00e4rs l\u00f6k och en kr\u00e4mig bechamels\u00e5s blir det en middag att l\u00e4ngta efter. Tre sorter med helt olika utseende. Den l\u00e5ngsmala &#8221;Farmers long&#8221;. \u00c4ggrunda och ljust rosalila &#8221;Rosa Bianca&#8221; och den lilla rara, svartlila &#8221;Ophelia&#8221;. Skivar och rostar dem en stund i ugnen innan de hamnar i min moussaka.<\/figcaption><\/figure>\n<p>Kollar och det st\u00e4mmer precis. Potatis \u2013 Solanum tuberosum. Aubergine \u2013 Solanum melongea och tomat \u2013 Solanum lycopersicum. Allts\u00e5 en middag med sl\u00e4kttr\u00e4fftema.<\/p>\n<p>Moussaka \u00e4r en kanonr\u00e4tt.\u00a0 K\u00f6ttf\u00e4rs g\u00e5r ju hem eller hur, och \u00e4ven om pastan \u00e4r en given och trogen f\u00f6ljeslagare s\u00e5 vill jag ha variation. \u00a0Ibland g\u00f6rs moussaka med bara k\u00f6ttf\u00e4rss\u00e5s och aubergine, men jag gillar till\u00e4gget av potatis.<\/p>\n<p>Det h\u00e4r \u00e4r dessutom en r\u00e4tt som funkar att laga i f\u00f6rv\u00e4g. V\u00e4rm sedan varsamt t\u00e4ckt i ugn n\u00e4r det \u00e4r dags att \u00e4ta.<\/p>\n<p>Jag delar recept p\u00e5 k\u00f6ttf\u00e4rss\u00e5s, men har du en egen favorit s\u00e5 k\u00f6r p\u00e5 den. G\u00f6r den p\u00e5 nysk\u00f6rdade tomater om du har tillg\u00e5ng och l\u00e4gg till oregano f\u00f6r att f\u00e5 till den grekiska touchen. Och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2>Moussaka med sl\u00e4kttema<\/h2>\n<ul>\n<li>400 g k\u00f6ttf\u00e4rs, lamm, vilt eller annan, g\u00e4rna eko<\/li>\n<li>1 stor gul l\u00f6k<\/li>\n<li>2 klyftor vitl\u00f6k<\/li>\n<li>1 morot<\/li>\n<li>ett par stj\u00e4lkar selleri<\/li>\n<li>2 msk tomatpur\u00e9<\/li>\n<li>1 msk balsamvin\u00e4ger<\/li>\n<li>oregano, repade blad eller 2 tsk torkad<\/li>\n<li>salt<\/li>\n<li>peppar<\/li>\n<li>500 g f\u00e4rska, skurna tomater eller 1 burk krossade<\/li>\n<li>1 medelstor aubergine eller motsvarande m\u00e4ngd mindre<\/li>\n<li>6 potatisar<\/li>\n<\/ul>\n<h4>Bechamels\u00e5s<\/h4>\n<ul>\n<li>2 msk sm\u00f6r<\/li>\n<li>2 \u00bd msk vetemj\u00f6l<\/li>\n<li>4 \u00bd dl mj\u00f6lk<\/li>\n<li>1 dl f\u00e4rskriven ost, g\u00e4rna parmesan<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>K\u00f6ttf\u00e4rss\u00e5sen f\u00f6rst. Stek f\u00e4rsen och st\u00e4ll \u00e5t sidan. Ansa och sk\u00e4r fint l\u00f6k, vitl\u00f6k, morot och selleri. Stek l\u00e4nge p\u00e5 r\u00e4tt l\u00e5g v\u00e4rme. Gr\u00f6nsakerna ska inte brynas h\u00e5rt bara bli mjukt glansiga.<\/li>\n<li>L\u00e4gg k\u00f6tt och l\u00e4ttbrynta gr\u00f6nsaker i en gryta tillsammans med tomatpur\u00e9, vin\u00e4ger, oregano, salt och peppar. R\u00f6r i tomater och l\u00e5t puttra under lock minst 30 minuter.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 200 grader. Skiva auberginen tunt, l\u00e4gg p\u00e5 pl\u00e5t, pensla med olja, salta l\u00e4tt och st\u00e4ll in i ugnen 10 min. Skiva potatisen tunt.<\/li>\n<li>Koka ihop din bechamel. Sm\u00e4lt sm\u00f6ret innan du h\u00e4ller i mj\u00f6l och vispar ihop noga. Vispa i mj\u00f6lken och forts\u00e4tt vispa ett par minuter tills s\u00e5sen tjocknar. R\u00f6r i osten.<\/li>\n<li>Plocka fram en ugnsform och varva k\u00f6ttf\u00e4rss\u00e5s, potatis och aubergine. H\u00e4ll bechamels\u00e5sen \u00f6verst och s\u00e4tt in i ugnen cirka 30 min, tills potatisen \u00e4r mjuk.<\/li>\n<\/ol>\n<p>Puh, l\u00e5ngt recept som egentligen \u00e4r enkelt. V\u00e4rt varje moment, jag lovar! Och vissa recept \u00e4r verkligen bra att ha p\u00e5 lut i minnet. Bechamel \u00e4r ett typiskt s\u00e5dant. S\u00e5sen som passar till all slags gratinering. Plugga in en g\u00e5ng f\u00f6r alla.<\/p>\n<p>Jag kastar mig ut i solen f\u00f6r att sk\u00f6rda \u00e4nnu ett g\u00e4ng av den k\u00e4ra familjen solanum. En del kommer att f\u00f6r\u00e4dlas till ratatouille.
