V\u00e4nt andra sidan till och vips har squashen blivit stor som ett sp\u00e4dbarn och inte alls l\u00e4ngre prim\u00f6rspr\u00f6d. Ingen fara de d\u00e4r sm\u00e5 monstren har en given plats h\u00e4rhemma. Jag har flera knep p\u00e5 lut och idag \u00e4r det dags f\u00f6r squashkaka. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det h\u00e4r mina damer och herrar \u00e4r en utmaning. Det \u00e4r kakdags och jag \u00e4r den jag \u00e4r. Egentligen ingen sockerbagare alls.\u00a0 Brukar g\u00f6ra en finfin variant p\u00e5 vetemj\u00f6l, men idag s\u00e4tts jag ytterligare p\u00e5 prov. Vi f\u00e5r g\u00e4ster och jag har pl\u00f6tsligt en glutenallergiker vid bordet.<\/p>\n<p>Smart d\u00e5 kanske att v\u00e4lja n\u00e5got obakat, men jag vill att alla r\u00e4tterna ska ha inslag av nysk\u00f6rdat och d\u00e5 ligger den d\u00e4r squashkakan n\u00e4ra till hands. \u00a0Det f\u00e5r bli ett test och ett kollage av andra recept. Jag l\u00e5nar helt enkelt id\u00e9er fr\u00e5n kakor som redan finns och komponerar en ny.<\/p>\n<p>Minns ni <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/kronans-kaka-en-potatishyllning\/\">kronans kaka<\/a>? Klassikern med mandelmj\u00f6l och potatis. Visst borde man kunna byta potatisen mot squash? Och lite \u00e4pple kanske f\u00f6r smaken? L\u00e5t den minst femton minuter innan du kramar ut s\u00e5 mycket som m\u00f6jligt av v\u00e4tskan i den.<\/figcaption><\/figure>\n<p>Squash f\u00f6rresten. Det \u00e4r naturligtvis samma sak som zuccini, som qourgette. Skillnaden \u00e4r ingen annan \u00e4n spr\u00e5klig. Squash \u00e4r ordvarianten som anv\u00e4nds i engelskspr\u00e5kiga l\u00e4nder, zuccini \u00e4r italienska och courgette s\u00e4ger man i Frankrike. Annars \u00e4r det precis samma gr\u00f6nsak man pratar om.<\/p>\n<p>V\u00e4xer g\u00f6r den oh\u00e4mmat var man \u00e4n \u00e4r och fort g\u00e5r det. Hur noga jag \u00e4n \u00e4r s\u00e5 ligger d\u00e4r pl\u00f6tsligt en gigant som inte passar f\u00f6r finlir. Men inte g\u00f6r det n\u00e5got. Jag har ett antal recept som passar de h\u00e4r bj\u00e4ssarna.<\/p>\n<h2>Squashkaka \u2013 glutenfri<\/h2>\n<ul>\n<li>300 g squash<\/li>\n<li>3 \u00e4gg<\/li>\n<li>2 dl socker<\/li>\n<li>125 g mandelmj\u00f6l<\/li>\n<li>\u00bd dl grovhackad mandel<\/li>\n<li>2 \u00bd tsk mald kanel<\/li>\n<li>1 \u00bd tsk grovkrossad kardemumma<\/li>\n<li>100 gr rumsvarmt, mjukt sm\u00f6r<\/li>\n<li>1 \u00e4pple<\/li>\n<\/ul>\n<h4>Frosting<\/h4>\n<ul>\n<li>75 g rumsvarmt sm\u00f6r<\/li>\n<li>150 g philadelphiaost<\/li>\n<li>3 dl florsocker<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 175 grader. Riv squashen p\u00e5 rivj\u00e4rnets grova sida. L\u00e5t st\u00e5 en stund och pressa sedan ut s\u00e5 mycket som m\u00f6jligt av v\u00e4tskan.<\/li>\n<li>Vispa \u00e4gg och socker vitt och p\u00f6sigt. Blanda de torra ingredienserna och vispa ner dem i \u00e4ggblandningen tillsammans med det mjuka sm\u00f6ret<\/li>\n<li>Riv \u00e4pplet grovt och blanda det i smeten. \u00a0Sm\u00f6rj en form med avtagbar kant. Jag \u201dbr\u00f6ade\u201d sedan med mandelmj\u00f6l.<\/li>\n<li>Gr\u00e4dda i ca 40 minuter. Ta ut och l\u00e5t svalna helt innan frostingen breds p\u00e5.<\/li>\n<li>Vispa rumsvarmt sm\u00f6r, philadelphiaost och siktat florsocker n\u00e5gra minuter tills det f\u00e5r en fin konsistens. Bred lite slarvigt \u00f6ver den helt avsvalnade kakan. L\u00e5t g\u00e4rna kakan vila i kyl n\u00e5gon timma f\u00f6re servering s\u00e5 s\u00e4tter den sig. \u00a0Str\u00f6, eventuellt \u00f6ver lite fint flisad mandel.<\/li>\n<\/ol>\n<p>Kakan blir saftig av squashen och kanongod. Lite mer dessert \u00e4n plain kaka. \u00c4ppelinslaget gav en aning syra och nymortlad kardemumma tillsammans med kanel \u00e4r alltid underbart.<\/p>\n<p>S\u00e5h\u00e4r i efterhand funderar jag om det fattades n\u00e5got som band ihop kakan n\u00e5got mer. Mandelmj\u00f6l binder inte s\u00e5 bra. Den \u00e4r ju inte t\u00e4nkt som en kaka att h\u00e5lla i handen utan ska \u00e4tas med sked, men \u00e4nd\u00e5.\u00a0 Kanske skulle det i lite potatismj\u00f6l eller maizena f\u00f6r att f\u00e5 den n\u00e5got stadigare?
