En n\u00e4ve n\u00f6t-och kryddblandning \u00f6ver enkelt och vardagligt g\u00f6r underverk. Och vi har en vinnare. Dukkah, en favorit som sprids frikostigt. \u00d6ver salladen, p\u00e5 br\u00f6det och h\u00f6jdaren, \u00f6ver ugnsrostade gr\u00f6nsaker. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Jag har aldrig testat den p\u00e5 plats i Egypten. Men jag har h\u00f6rt ber\u00e4ttelser om br\u00f6det som f\u00f6rst doppas i olivolja och vidare i det kryddiga n\u00f6tstr\u00f6et. Jag gillar verkligen id\u00e9n. Det beh\u00f6vs inte s\u00e5 mycket f\u00f6r att f\u00f6rh\u00f6ja och g\u00f6ra n\u00e5got nytt, sp\u00e4nnande av det enkla.<\/p>\n<p>Principen \u00e4r att n\u00f6tter och kryddor rostas f\u00f6r att f\u00e5 mer koncentrerad smak. De krossas l\u00e4tt och sedan \u00e4r det klart. Alltihop tar bara ett n\u00e5gra minuter.<\/p>\n<p>Recepten \u00e4r m\u00e5nga, proportionerna varierar och kryddorna \u00e4r inte alltid desamma. Jag har flera varianter och frispelar lite efter lust f\u00f6r dagen. K\u00e5lblad som \u00e4r lite gr\u00f6vre blir d\u00e4remot fantastiskt.<\/p>\n<p>Det h\u00e4r har blivit ett st\u00e5ende inslag vid middagsbordet en pl\u00e5t rostat och blandat. Jag sk\u00f6rdar ohejdat och blandar respektl\u00f6st. Idag blir det r\u00f6dk\u00e5l, blomk\u00e5l, morot, l\u00f6k och gulbeta. Till detta serveras Dukkah. Var och en str\u00f6r p\u00e5 efter egen lust. En klick feta- och yogurtr\u00f6ra och ett stekt \u00e4gg. M\u00e4rkv\u00e4rdigare beh\u00f6ver det inte vara.<\/p>\n<p>F\u00f6rutom till rostade gr\u00f6nsaker s\u00e5 passar dukkah som sagt till br\u00f6d och olja. Prova ocks\u00e5 att str\u00f6 den \u00f6ver en sallad. G\u00f6r underverk! Eller \u00f6ver ris och klyftpotatis.<\/p>\n<p>Min variant f\u00f6r dagen ser ut s\u00e5h\u00e4r:<\/p>\n<h2>Dukkah \u2013 en n\u00f6t och kryddblandning<\/h2>\n<ul>\n<li>1 \u00bd dl hasseln\u00f6tter<\/li>\n<li>\u00bd dl fr\u00f6, pumpa och solros<\/li>\n<li>2 msk sesamfr\u00f6<\/li>\n<li>2 tsk hel koriander<\/li>\n<li>2 tsk hel spiskummin<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>(ev lite chili eller hela f\u00e4nk\u00e5lsfr\u00f6n)<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<p>L\u00e4gg i en panna och rosta varsamt tills k\u00f6ket b\u00f6rjar dofta. Ta av fr\u00e5n v\u00e4rmen och l\u00e5t svalna helt. Krossa mer eller mindre fint med mortel. Ibland g\u00f6r jag ett gr\u00f6vre kross som bjuder p\u00e5 knapriga \u00f6verraskningar n\u00e4r man \u00e4ter.<\/p>\n<p>N\u00f6tter, fr\u00f6n och kryddor \u00e4r en h\u00e4rlig kombo.
