Men \u00e4ta r\u00e5tt k\u00f6tt, \u00e4r det verkligen okej? Det l\u00e5ter grovt och barbariskt, men det h\u00e4r \u00e4r tv\u00e4rtom en r\u00e4tt som kr\u00e4ver mycket omsorg och stor noggrannhet. Matlagning f\u00f6r finlirare. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Det finns r\u00e4tter som kan bli s\u00e5 fel eller alldeles alldeles underbara. Till den kategorien h\u00f6r allt som serveras r\u00e5tt. Det m\u00e5ste vara av absolut toppklass f\u00f6r att det ska bli bra.<\/p>\n<p>Inf\u00f6r ny\u00e5r tittar vi \u00e5t fil\u00e9h\u00e5llet och mitt absoluta tips \u00e4r att v\u00e4lja svenskt. I det h\u00e4r l\u00e4get finns inga genv\u00e4gar. Vi vill ha h\u00f6gsta kvalitet och det allra, allra b\u00e4sta. Den ska bara halvfrysas f\u00f6r att sedan skivas enkelt.<\/figcaption><\/figure>\n<p>Inga moment \u00e4r sv\u00e5ra, mycket kan f\u00f6rberedas, men det som kr\u00e4vs \u00e4r stor noggrannhet och en galet vass kniv. K\u00f6ttet ska vara genomskinligt tunt skivat.<\/p>\n<p>T\u00f6rs ni? I s\u00e5 fall \u00e4r det bara att h\u00e4nga med!<\/p>\n<h2>Italiensk carpaccio<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>400 gram halvfryst fil\u00e9 av kalv-, n\u00f6t- eller vilt<\/li>\n<li>200 gram k\u00f6rsb\u00e4rstomater<\/li>\n<li>40 gram pinjen\u00f6tter<\/li>\n<li>30 gram parmesanost<\/li>\n<li>\u00bd kruka basilika<\/li>\n<li>1 msk olivolja<\/li>\n<li>1 tsk balsamvin\u00e4ger<\/li>\n<li>flingsalt<\/li>\n<li>svartpeppar<\/li>\n<li>ev. parmesankr\u00e4m, se receptl\u00e4nk nedan<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 100 grader. Halvera tomaterna och l\u00e4gg dem med snittytan upp i en ugnsfast form. Salta l\u00e4tt och st\u00e4ll in i ugnen i en timma. De ska vara halvtorkade med fin koncentrerad smak n\u00e4r de \u00e4r klara.<\/li>\n<li>Vill du servera parmesankr\u00e4m till s\u00e5 \u00e4r det dags att g\u00f6ra den nu. Det \u00e4r alldeles fantastiskt gott till. F\u00f6lj l\u00e4nken nedan och byt ut v\u00e4sterbottensosten mot f\u00e4rskriven parmesanost.<\/li>\n<li>Rosta pinjen\u00f6tterna i en stekpanna utan n\u00e5got fett. Var uppm\u00e4rksam. De ska f\u00e5 f\u00e4rg, men inte br\u00e4nnas.<\/li>\n<li>Skiva det halvfrysta k\u00f6ttet supertunt. Man ska kunna se genom skivorna. L\u00e4gg upp k\u00f6ttet p\u00e5 ett serveringsfat. F\u00f6rdela tomater och n\u00f6tter \u00f6ver k\u00f6ttet. Hyvla osten tunt \u00f6ver fatet och plocka blad fr\u00e5n basilikan.<\/li>\n<li>Droppa p\u00e5 olivolja och vin\u00e4ger. \u00a0Avsluta med ett par nypor flingsalt och ett n\u00e5gra rej\u00e4la drag p\u00e5 svartpepparkvarnen.<\/li>\n<\/ol>\n<p>Vill du servera parmesankr\u00e4m till din carpaccio s\u00e5 <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/vasterbottenkram\/\">finns recept p\u00e5 den h\u00e4r<\/a>. Byt bara ut v\u00e4sterbottensosten mot f\u00e4rskriven parmesan. Kr\u00e4men \u00e4r som en dr\u00f6m och passar fantastiskt till k\u00f6ttet. F\u00f6r extra finess kan den spritsas i en eller flera vackra toppar p\u00e5 k\u00f6ttet.<\/p>\n<p>S\u00f6ker du efter en liten starter s\u00e5 kan jag tipsa om mina ny\u00e5rschips med rom och annat sm\u00e5gott.
