Putsa k\u00f6ttet och sk\u00e4r det i portionsbitar. Salta, peppra och stek till fin yta. Placera i ugnen och l\u00e5t det st\u00e5 till innertemperaturen n\u00e5tt 57 grader.<\/li>\n<li>Finhacka l\u00f6ken. Stek den varsamt i sm\u00f6r. Den ska bara brynas l\u00e4tt innan du r\u00f6r i bl\u00e5b\u00e4r och socker. Fr\u00e4s en kort stund innan du h\u00e4ller p\u00e5 vin, vatten och fond.<\/li>\n<li>L\u00e5t s\u00e5sen koka ihop n\u00e5gra minuter. Sila av b\u00e4ren och tryck till dem l\u00e4tt med baksidan av en sked f\u00f6r att f\u00e5 med all v\u00e4tska. Forts\u00e4tt att sjuda s\u00e5sen tills den har en fin konsistens. Smaka av med peppar.<\/li>\n<li>Skala potatisen och koka den mjuk i l\u00e4ttsaltat vatten. H\u00e4ll av vattnet och l\u00e4gg tillbaka den i kastrullen. H\u00e4ll p\u00e5 mj\u00f6lk, gr\u00e4dde och sm\u00f6r. Vispa moset med elvisp. Inte f\u00f6r l\u00e4nge bara precis till det \u00e4r sl\u00e4tt.
