Mmm.. spiskummin, oregano och koriander. Det ska bli gryta. En som v\u00e4rmer och st\u00e4rker utan att tynga. En chili f\u00f6r frusna januarisj\u00e4lar. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Chili utan k\u00f6tt \u00e4r som \u2026. ja vad\u00e5? N\u00e4 just precis, chili sin carne \u00e4r inget blekt f\u00f6rs\u00f6k att ers\u00e4tta n\u00e5got utan det \u00e4r en alldeles fantastisk r\u00e4tt i sig. Att den sedan passar s\u00e4rskilt bra i tider d\u00e4r m\u00e5nga vill minska, eller helt ta bort k\u00f6ttet \u00e4r v\u00e4l kanon.<\/p>\n<p>Jag \u00e4lskar den h\u00e4r grytan och g\u00f6r stora satser som kan frysas eller sparas n\u00e5gra dagar i kyl s\u00e5 att ungarna enkelt kan fylla tortillias eller pitabr\u00f6d som ett rej\u00e4lt mellis.<\/p>\n<p>N\u00e4r man l\u00e4ser kryddlistan kan det k\u00e4nnas lite mycket. Raden \u00e4r l\u00e5ng, men l\u00e5t mig lova att det \u00e4r v\u00e4rt det. Du v\u00e4ljer sj\u00e4lv. Det \u00e4r de gr\u00f6na bladen som delar oss i f\u00f6r och emot. Smakar tv\u00e5l och b\u00e4rfis s\u00e4ger m\u00e5nga medan andra \u00e4r mer eller mindre beroende. Inte bara bladen utan ocks\u00e5 de mogna fr\u00f6na anv\u00e4nds och de har en helt annan, aningen citrusliknande smak.<\/figcaption><\/figure>\n<p>Tillh\u00f6r du dem som ryggar inf\u00f6r ordet koriander s\u00e5 handlar det h\u00e4r om fr\u00f6et koriander inte om de gr\u00f6na bladen. I Mexiko anv\u00e4nder man flitigt b\u00e5da delarna och fr\u00f6et har en helt annan smak \u00e4n bladen som m\u00e5nga tycker \u00e4r parymerat tv\u00e5lig. Fr\u00f6et ger ist\u00e4llet en ton av torkat citrusskal.<\/p>\n<p>N\u00e5, h\u00e4r kommer min variant p\u00e5 k\u00f6ttl\u00f6s chili som bygger p\u00e5 b\u00f6nor. Jag varierar sorter och k\u00f6r p\u00e5 vita, svarta, kidney eller canellini. Allra b\u00e4st blir det om man blandar ett par olika.<\/p>\n<p>Till grytan brukar vi \u00e4ta ris eller ibland bara br\u00f6d och dessutom alltid n\u00e5gon eller ett par r\u00f6ror. Recept p\u00e5 dem kommer i n\u00e4sta inl\u00e4gg redan inom en kort stund.<\/p>\n<p>Inget att v\u00e4nta p\u00e5 vi s\u00e4tter ig\u00e5ng och det h\u00e4r \u00e4r faktiskt relativt snabb mat om man som jag anv\u00e4nder konserverade b\u00f6nor.<\/p>\n<h2>Chili sin carne<\/h2>\n<p>6 -8 personer<\/p>\n<ul>\n<li>1 morot<\/li>\n<li>2 sj\u00e4lkar selleri<\/li>\n<li>1 stor gul l\u00f6k<\/li>\n<li>2 vitl\u00f6ksklyftor<\/li>\n<li>2 msk tomatpur\u00e9<\/li>\n<li>3 burkar b\u00f6nor t.ex. svarta, kidney eller vita. Blanda g\u00e4rna.<\/li>\n<li>2 burkar krossade tomater<\/li>\n<li>1 msk koncentrerad gr\u00f6nsaksfond<\/li>\n<li>1 tsk salt<\/li>\n<\/ul>\n<h4>Kryddblandning<\/h4>\n<ul>\n<li>1 msk chilipulver<\/li>\n<li>1 tsk chipotlepulver, r\u00f6kt chili<\/li>\n<li>1 tsk mald koriander<\/li>\n<li>1 tsk mald spiskummin<\/li>\n<li>1 matsked oregano<\/li>\n<li>Vill du ha en riktigt chilihet gryta s\u00e5 l\u00e4gg till lite chiliflakes.<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>B\u00f6rja med att blanda kryddorna.<\/li>\n<li>Skala moroten och sk\u00e4r den i sm\u00e5 t\u00e4rningar. Sk\u00e4r sellerin i lika stora bitar. Skala och hacka l\u00f6ken.<\/li>\n<li>Stek morot, selleri och l\u00f6k p\u00e5 l\u00e5g v\u00e4rme i en gryta. N\u00e4r de b\u00f6rjar bli mjuka och glansiga r\u00f6r du i kryddorna och tomatpur\u00e9n. L\u00e5t fr\u00e4sa en kort stund innan de avrunna och sk\u00f6ljda b\u00f6norna \u00e5ker i grytan tillsammans med tomaterna, fonden och saltet.<\/li>\n<li>L\u00e5t grytan puttra tio minuter med locket p\u00e5 gl\u00e4nt. Smaka av och tills\u00e4tt eventuellt mer salt eller lite mer chilihetta.<\/li>\n<\/ol>\n<p>Till detta brukar vi \u00e4ta ris, eller tortillias, n\u00e5gra mexikanska r\u00f6ror och en klick yoghurt.
