Det finns ingen \u00e4nde p\u00e5 behovet av k\u00e5lrecept och h\u00e4r kommer ett till. En variant p\u00e5 coleslaw, salladen som passar till allt. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Receptet till dig som l\u00e4ngtar efter en smula variation. En vardagskick. En f\u00e4rgsprakande smakexplosion som skakar om och s\u00e4tter spr\u00e4tt p\u00e5 oxveckorna.<\/p>\n<p>Att \u00e4ta en omsorgsfullt tillagad coleslaw \u00e4r lite som att \u00e5ka p\u00e5 h\u00e4lsotripp hemma vid middagsbordet eftersom k\u00e5l \u00e4r en dokumenterad k\u00e4lla till v\u00e4lm\u00e5ende b\u00e5de f\u00f6r stunden och i ett framtidsperspektiv. Dessutom \u00e4r salladen en uppvisning i antioxidanter och helt igenom raw. Vem kan s\u00e4ga nej?<\/p>\n<p>Coleslaw kan vara en trist lite sladdrig, fet och r\u00e4tt s\u00f6t historia. H\u00e4r g\u00e5r vi en annan v\u00e4g. I alla fall idag, men det g\u00e5r precis lika bra med vitk\u00e5l. Inte visste jag att savoyk\u00e5len var en s\u00e5dan k\u00e4mpe att st\u00e5 emot vintern till slutet av januari. Lite slok\u00f6rad f\u00f6rst i k\u00f6ksv\u00e4rmen men efter en stund i kallt vatten \u00e4r den helt \u00e5terst\u00e4lld.<\/figcaption><\/figure>\n<p>Vi \u00e4ter salladen till mycket. Prova den till korv, till stekt fisk, till f\u00e4rsbiffar, till ett par kokta \u00e4gg eller till en vegoburgare. L\u00e4gg p\u00e5 macka, i en wrap eller blanda med svarta b\u00f6nor och proppa ett pitabr\u00f6d fullt. En v\u00e4lgjord coleslaw \u00e4r anv\u00e4ndbar, jag lovar och klarar dessutom ett dygn i kylen utan problem.<\/p>\n<p>F\u00f6r den som \u00e4r intresserad av odling kan jag ber\u00e4tta att savoyk\u00e5len \u00e4r nysk\u00f6rdad fr\u00e5n friland, idag den 22 januari. Vissa k\u00e5lsorter \u00e4r alldeles fantastiskt k\u00f6ldt\u00e5liga och jag tar varje dag en tur till lotten f\u00f6r att plocka av flera varianter.<\/p>\n<p>D\u00e4r finns: brysselk\u00e5l gr\u00f6n och r\u00f6d. Gr\u00f6nk\u00e5l, purpurk\u00e5l och savoyk\u00e5l. Ute ligger sn\u00f6 och termometern visar -6 grader. Helt galet bra och trots att de nysk\u00f6rdade bladen kan se lite ledsna ut n\u00e4r jag bryter dem s\u00e5 h\u00e4mtar de sig snabbt efter en stund i kallt vatten inne.<\/p>\n<p>Nog om detta, nu \u00e4ter vi och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2>Coleslaw, min version<\/h2>\n<p>4-6 personer<\/p>\n<ul>\n<li>600 gram k\u00e5l, blanda sorter men k\u00f6r r\u00f6d eller vitk\u00e5l som grund<\/li>\n<li>1 morot<\/li>\n<li>1 gul l\u00f6k<\/li>\n<li>1 \u00e4pple<\/li>\n<li>1 dl majonn\u00e4s, g\u00e4rna hemgjord, se l\u00e4nk nedan<\/li>\n<li>\u00bd dl tjock yoghurt<\/li>\n<li>1 msk pressad citron<\/li>\n<li>2 tsk senap<\/li>\n<li>1 liten riven vitl\u00f6ksklyfta<\/li>\n<li>salt<\/li>\n<li>peppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Strimla k\u00e5len fint. Skala och riv moroten p\u00e5 rivj\u00e4rnets grova sida. Skala och skiva l\u00f6ken tunt. L\u00e4gg alltihop i en bunke, str\u00f6 \u00f6ver 1 tsk salt, blanda och st\u00e4ll \u00e5t sidan 15 min. Krama ur v\u00e4tskan som bildas.<\/li>\n<li>Sk\u00e4r \u00e4pplet i tunna skivor och blanda samman alla ingredienserna i en salladssk\u00e5l. Smaka av med salt och peppar. Kanske vill du l\u00e4gga till lite mer majjo eller yoghurt f\u00f6r att f\u00e5 en kr\u00e4migare sallad. Mer senap n\u00e5gon?
