V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Ute bl\u00e5ser nordanvind och jag l\u00e4ngtar efter v\u00e4rme. Under de m\u00e5nader, ganska m\u00e5nga faktiskt, som jag sk\u00f6rdar sj\u00e4lv \u00e4r maten ofta l\u00e4tt. Den pr\u00e4glas av v\u00e5r, sommar och h\u00f6st. Nu vill vi ha mustig v\u00e4rme och d\u00e5 f\u00e5r man h\u00f6ja blicken ut \u00f6ver v\u00e4rlden f\u00f6r att hitta vegetarisk inspiration. Ett mycket givande projekt.<\/p>\n<p>Vi lagar marockanskt, mexikanskt, thail\u00e4ndskt, chilenskt, etiopiskt, libanesiskt och den vegetariska matresan har inget slut, den slingrar sig jorden runt. Doften av kryddorna sveper in oss i ett behagligt lugn. Vi kommer att bli m\u00e4tta. N\u00f6jda. Det \u00e4r mustigt utan att vara tungt. Kryddigt men inte n\u00f6dv\u00e4ndigtvis starkt.<\/p>\n<p>Om det ens finns n\u00e5gon kvar av dem som f\u00f6rr avf\u00e4rdade vegetariskt som kaninmat s\u00e5 \u00e4r det h\u00e4r r\u00e4tten som definitivt har potential att omv\u00e4nda den sista st\u00e5ndaktige motst\u00e5ndaren.<\/p>\n<p>Det indiska k\u00f6kets r\u00e5varor \u00e4r enkla samtidigt som variationerna \u00e4r o\u00e4ndliga. Idag blir det en gryta p\u00e5 potatis, blomk\u00e5l och cashewn\u00f6tter. Dessutom en ljummen morotssallad. Snabb och urenkel att g\u00f6ra. Bara n\u00e5gra handgrepp fr\u00e5n r\u00e5rivet, men s\u00e5 mycket mer.<\/p>\n<h2>Vegetarisk currygryta<\/h2>\n<h4>Kryddpasta<\/h4>\n<ul>\n<li>3 vitl\u00f6ksklyftor<\/li>\n<li>2 cm f\u00e4rsk ingef\u00e4ra<\/li>\n<li>1 tsk malen gurkmeja (Jag anv\u00e4nde f\u00e4rsk som syns p\u00e5 bilden. Gott, men varning. Den f\u00e4rgar allt kraftigt orangegult. Vill du anv\u00e4nda f\u00e4rsk gurkmeja s\u00e5 ska det vara lika mycket som ingef\u00e4ra.)<\/li>\n<li>1 tsk malen spiskummin<\/li>\n<li>1 tsk malen korianderfr\u00f6<\/li>\n<li>1 tsk chilipeppar, mald eller som pasta<\/li>\n<li>\u00bd tsk malen muskot<\/li>\n<li>1 tsk salt<\/li>\n<\/ul>\n<h4>Grytingredienser<\/h4>\n<ul>\n<li>1 gul l\u00f6k<\/li>\n<li>1 burk finkrossade tomater<\/li>\n<li>1 burk kokosmj\u00f6lk<\/li>\n<li>100 g cashewn\u00f6tter<\/li>\n<li>700 g fast potatis, 5 stora<\/li>\n<li>1 blomk\u00e5lshuvud<\/li>\n<\/ul>\n<h4>Ljummen morotssallad<\/h4>\n<ul>\n<li>4 mor\u00f6tter (ca 1\/2 kg)<\/li>\n<li>1 msk gult senapsfr\u00f6<\/li>\n<li>1 vitl\u00f6ksklyfta<\/li>\n<li>\u00bc -\u00bd tsk chilipeppar, mald eller pasta<\/li>\n<li>1 tsk socker<\/li>\n<li>2 msk pressad citron<\/li>\n<li>salt<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Riv vitl\u00f6k och ingef\u00e4ra. Blanda med \u00f6vriga kryddor till en pasta.<\/li>\n<li>Finhacka l\u00f6ken och fr\u00e4s den f\u00f6rsiktigt i en gryta. R\u00f6r i kryddpastan som f\u00e5r fr\u00e4sa med en kort stund innan tomaterna och kokosmj\u00f6lken ska i. Grovhacka n\u00f6tterna och r\u00f6r i dem.<\/li>\n<li>Koka upp en kastrull med l\u00e4ttsaltat vatten. Skala och t\u00e4rna potatisen i bitar p\u00e5 ett par centimeter. Dela blomk\u00e5len i mindre buketter. L\u00e4gg f\u00f6rst i potatisen f\u00f6ljd av blomk\u00e5len efter n\u00e5gra minuter. De ska bli mjuka, men inte mosiga. H\u00e4ll av och blanda varsamt ner i grytan.<\/li>\n<li>Skala och riv mor\u00f6tterna grovt. Hetta upp olja i en stekpanna och h\u00e4ll i senapsfr\u00f6et som b\u00f6rjar hoppa i pannan n\u00e4r det \u00e4r dags att l\u00e4gga i mor\u00f6tterna.<\/li>\n<li>Riv och blanda i vitl\u00f6ken. Str\u00f6 \u00f6ver socker och h\u00e4ll p\u00e5 pressad citron. R\u00f6r om och smaka av med salt. Mor\u00f6tterna ska mjukna n\u00e5got, men inte vara helt genomstekta.<\/li>\n<li>Servera grytan och mor\u00f6tterna med luftigt basmatiris.
