Och det kan handla om en enda r\u00e4tt. Ta en fransk fisksoppa med tusen olika moment, eller n\u00e5gon avancerad dessert. Och inte spelar det n\u00e5gon roll att en heldag vid spisen avslutas med femton minuter vid matbordet.<\/strong><\/p>\n<p>Mina hungriga ton\u00e5ringar har en kort intensiv argumentation om vilken bit som st\u00f6rst och vips s\u00e5 \u00e4r allt slut. Det g\u00f6r mig inget. Jag gillar att de gillar. Timmarna vid spisen \u00e4r det som gjort min dag. Jag trivs d\u00e4r. Lyssnar p\u00e5 radio, funderar, skriver ner en id\u00e9 och n\u00e5gra recept.<\/p>\n<p>Men det h\u00e4r \u00e4r inte en s\u00e5dan dag. Jag vill ha n\u00e5gon sorts mat som ger helgk\u00e4nsla men det ska g\u00e5 snabbt. Ett bra val i det l\u00e4get \u00e4r att v\u00e4lja en riktigt fin r\u00e5vara. N\u00e5got snabblagad som garanterat levererar. Fil\u00e9 \u00e4r l\u00e4tt. L\u00e4r man sig <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/viltfile\/\">steka den till perfektion<\/a> s\u00e5 kan man inte misslyckas. Och till detta ett kryddigt sm\u00f6r som inte sl\u00e5r ihj\u00e4l smak utan \u00e4r v\u00e4lbalanserat och ger k\u00f6ttet utrymme.<\/p>\n<p>Vitl\u00f6k kan ibland ta \u00f6ver en hel r\u00e4tt, men jag rostar den l\u00e5ngsamt tills den f\u00e5r en s\u00f6t aromatisk smak. De kan till och med g\u00f6ra det tamaste n\u00f6tk\u00f6ttet lite vildare.<\/figcaption><\/figure>\n<h2><strong>Fil\u00e9biten med kryddsm\u00f6r (4 pers)<\/strong><\/h2>\n<ul>\n<li>Vilt-, ox- eller kalvfil\u00e9 150 g per person<\/li>\n<li>100 g sm\u00f6r<\/li>\n<li>2 vitl\u00f6ksklyftor<\/li>\n<li>1 tsk koncentrerad kalvfond<\/li>\n<li>\u00bd dl finhackad persilja<\/li>\n<li>finhackade blad av f\u00e4rsk rosmarin och timjan<\/li>\n<li>2 krossade och finhackade enb\u00e4r<\/li>\n<li>salt och svartpeppar<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Rosta vitl\u00f6ksklyftorna med skalet p\u00e5 i en panna med lite fett. H\u00e5ll ner v\u00e4rmen och l\u00e5t dem ligga l\u00e4nge. L\u00e5t vitl\u00f6ken svalna innan du kl\u00e4mmer den ur skalet och blandar med \u00f6vriga ingredienser.<\/li>\n<li>Putsa k\u00f6ttet noga. Det ska vara rumstempererat och noga avtorkat innan det steks. Man kan sk\u00e4ra fil\u00e9n i skivor och steka dem var f\u00f6r sig eller tillaga fil\u00e9n hel. Oavsett hur man g\u00f6r s\u00e5 ska k\u00e4rntemperaturen p\u00e5 k\u00f6ttet vara 58 grader om man \u00f6nskar det medium.<\/li>\n<li>Jag brukar v\u00e4rma upp ugnen till 120 grader innan jag ger k\u00f6ttet en fin stekyta och l\u00e4gger in det i ugnen f\u00f6r att n\u00e5 r\u00e4tt innertemperatur. L\u00e5t alltid k\u00f6ttet vila minst tio minuter innan det sk\u00e4rs upp.<\/li>\n<li>Till detta kan man till exempel servera ugnsrostad, tunnskivad potatis, l\u00f6k och morot.<\/li>\n<\/ol>\n<p>Hur g\u00f6r ni n\u00e4r n\u00e5got krockar med l\u00e4ngtan efter en god middag? N\u00e4r det ska vara b\u00e5de snabbt och festligt. Ber\u00e4tta, hur l\u00f6ser ni den ekvationen?<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Helg och en k\u00f6ttbit till middag. Helg kan betyda extratid. Tid att ta sig tid till s\u00e5dant man annars inte hinner.
