Nu \u00e4r den som godast i kombination med billigast. Hur bra \u00e4r inte det? Vi r\u00e4kfrossar, ofta bara med en gener\u00f6s sk\u00e5l f\u00e4rska r\u00e4kor, varsin citron och n\u00e5gra droppar tabasco, men idag vill jag lite mer. Det blir r\u00e4kmacka med en twist. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>Har ni t\u00e4nkt p\u00e5 att ett och samma livsmedel kan upplevas helt olika beroende p\u00e5 hur det presenteras? Det kan handla om hur det sk\u00e4rs upp, i sm\u00e5 t\u00e4rningar eller rej\u00e4la stavar. Tillagningen kan vara exakt helt densamma, men \u00e4nd\u00e5 \u00e4r skillnaden stor.<\/p>\n<p>Den h\u00e4r r\u00e4kmackan \u00e4r ett exempel och r\u00e5varan som kommer att f\u00f6r\u00e4ndra scenen \u00e4r ett enkelt h\u00e5rdkokt \u00e4gg. T\u00e4nk en h\u00f6g rivet \u00e4gg p\u00e5 den kokta fisken med en liten sky brynt sm\u00f6r. Prova den p\u00e5 nykokt spenat, ugnsrostade mor\u00f6tter, till r\u00f6dbetor och pepparrot, p\u00e5 en kn\u00e4ckemacka eller ja, ni kan s\u00e4kert vidareutveckla det d\u00e4r sj\u00e4lva.<\/p>\n<p>Riktigt gott \u00e4r det\u00a0 hursomhelst och h\u00e4r har ni min enkla, men aningen annorlunda r\u00e4kmacka.<\/p>\n<h2>R\u00e4kmacka med rivet \u00e4gg<\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>3 -4 \u00e4gg<\/li>\n<li>1 kg f\u00e4rska oskalade r\u00e4kor, (600 g skalade)<\/li>\n<li>dill<\/li>\n<li>gr\u00e4sl\u00f6k<\/li>\n<li>sallat, g\u00e4rna min favorit little gem<\/li>\n<li>4 br\u00f6dskivor, g\u00e4rna surdeg<\/li>\n<\/ul>\n<h4>Citronmajonn\u00e4s<\/h4>\n<ul>\n<li>1 \u00e4gg<\/li>\n<li>2 tsk dijonsenap (eller mer om du gillar smaken)<\/li>\n<li>\u00bd tsk salt<\/li>\n<li>2 \u00bd dl rapsolja<\/li>\n<li>\u00a01 citron<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>Vi b\u00f6rjar med majonn\u00e4sen som blir allra b\u00e4st med hj\u00e4lp av en stavmixer. En av de k\u00f6ksmaskiner som jag verkligen har gl\u00e4dje av. Satsen \u00e4r stor, men majonn\u00e4sen g\u00e5r fint att spara i kyl fyra, fem dagar.<\/li>\n<li>Alla ingredienserna m\u00e5ste ha samma temperatur. Kn\u00e4ck \u00e4gget i stavmixerns beh\u00e5llare. L\u00e4gg i senap och salt innan du h\u00e4ller p\u00e5 oljan, allt p\u00e5 en g\u00e5ng. S\u00e4tt mixerstaven i beh\u00e5llarens botten, k\u00f6r ig\u00e5ng och dra staven sakta upp\u00e5t. P\u00e5 bara n\u00e5gra f\u00e5 sekunder \u00e4r majonn\u00e4sen klar.<\/li>\n<li>Smaks\u00e4tt med n\u00e5gra droppar citron och lite finrivet citronskal. Kanske lite extra salt ocks\u00e5, du k\u00e4nner efter och best\u00e4mmer.<\/li>\n<li>H\u00e5rdkoka \u00e4ggen, men bl\u00e5koka dem inte. Kyl i kallt vatten.<\/li>\n<li>Skala r\u00e4korna. Plocka sm\u00e5 fina vippor av dillen. Finhacka gr\u00e4sl\u00f6ken.<\/li>\n<li>Skala de kalla \u00e4ggen och riv dem p\u00e5 j\u00e4rnets fina sida.<\/li>\n<li>Rosta br\u00f6den och montera mackorna. Sallatsblad i botten, sedan r\u00e4korna. \u00d6ver dem en driva av det rivna \u00e4gget och en gener\u00f6s klick majonn\u00e4s.
