Macka k\u00e4nns avsp\u00e4nt. Ingen kavajmat, men gjord med omsorg \u00e4r det en hel m\u00e5ltid. Och just den h\u00e4r kommer med rubriken gourmet. S\u00e5 vansinnigt god! V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>F\u00f6rst lite om biff. Eller biff f\u00f6rresten det g\u00e5r precis lika bra selleri (se nedan) eller med n\u00e5gon annan k\u00f6ttdetalj, men kravet \u00e4r att det ska vara riktigt m\u00f6rt. Superm\u00f6rt. Annars \u00e4r det liksom ingen id\u00e9.<\/p>\n<p>Man kan tycka att den d\u00e4r biffen \u00e4r det v\u00e4l bara att brassa p\u00e5 spisen och s\u00e5 \u00e4r det, men biff\u00a0 inneb\u00e4r \u00e4nd\u00e5 lite finlir. Inte sv\u00e5rt. Inte tidskr\u00e4vande, men det ska g\u00f6ras med k\u00e4nsla. S\u00e5h\u00e4r g\u00f6r jag:<\/p>\n<p>Nummer ett \u00e4r att v\u00e4lja bra k\u00f6tt. Svenskt marmorerat, s\u00e4ger jag. \u00a0Det g\u00e5r inte \u00e5t s\u00e5 mycket till varje macka, ungef\u00e4r 100 g, och b\u00e4st \u00e4r att k\u00f6pa en eller ett par tjockare bitar biff som tillagas och sedan skivas supertunt.<\/p>\n<p>K\u00f6ttet ska vara rumstempererat, avtorkat och saltat innan det l\u00e4ggs i pannan.<a href=\"https:\/\/blogg.land.se\/skog-till-bord\/ghee-smor-med-nya-egenskaper\/\"> Jag steker i ghee, f\u00f6r att det \u00e4r ett v\u00e4rmet\u00e5ligt fett med finaste sm\u00f6rsmak<\/a>. Annars funkar det fint med rapsolja som f\u00f6rst\u00e4rks med en gener\u00f6s klick sm\u00f6r efter en stund. \u00d6s g\u00e4rna med fettet under stekningen.<\/p>\n<p>Perfekt till macka \u00e4r k\u00f6ttet n\u00e4r det har en innertemperatur p\u00e5 57 grader. Kolla med termometer. Biff med l\u00f6k \u00e4r en klassiker och h\u00e4r kommer en variant. Tv\u00e5 sorters tillagad l\u00f6k med helt olika karakt\u00e4r flankerar den tunt skivade superm\u00f6ra biffen. F\u00f6r h\u00e4r g\u00e4ller det att v\u00e4lja k\u00f6tt med omsorg.<\/figcaption><\/figure>\n<p>Precis lika bra med selleri \u00e4r alldeles sant. Om man v\u00e4ljer bort k\u00f6ttet s\u00e5 funkar mackan fantastiskt bra med en skiva stekt eller ugnsrostad rotselleri ist\u00e4llet.<\/p>\n<p>Och s\u00e5 har vi l\u00f6ken. Det blir tv\u00e5 sorter, en picklad f\u00f6r det lilla \u00e4ttiksstinget och en varsamt stekt. Jag hittade ett recept fr\u00e5n 30-talet som verkligen levererar. Perfekta stekta sm\u00e5l\u00f6kar som passar till mycket mer \u00e4n bara min macka.<\/p>\n<p>T\u00e4nk som garnering i en gryta, till steken, eller till ett par stekta \u00e4gg som mina vegetarianbarn f\u00f6redrar dem. Vi tar det l\u00f6kreceptet f\u00f6r sig s\u00e5 att ni inte missar den h\u00e4r godingen bland det andra.<\/p>\n<p><strong>\u00a0<\/strong><strong>Helstekt sm\u00e5l\u00f6k <\/strong><\/p>\n<ul>\n<li>500 gram sm\u00e5l\u00f6kar<\/li>\n<li>50 gram sm\u00f6r<\/li>\n<li>1 tesked socker<\/li>\n<li>\u00bd tesked salt<\/li>\n<li>2 matskedar vatten<\/li>\n<\/ul>\n<ol>\n<li>Skala l\u00f6karna. Sm\u00e4lt sm\u00f6ret i en panna och stek l\u00f6ken n\u00e5gra minuter till fin f\u00e4rg. Str\u00f6 \u00f6ver socker och salt. H\u00e4ll p\u00e5 lite av vattnet.<\/li>\n<li>L\u00e4gg p\u00e5 ett lock. Puttra l\u00f6karna mjuka och sp\u00e4d med mer v\u00e4tska om det beh\u00f6vs.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>Nu g\u00e5r vi vidare och l\u00e4gger ihop hela mackan. Och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2><strong>Biffmacka med tv\u00e5 sorters l\u00f6k<\/strong><\/h2>\n<p>4 personer<\/p>\n<ul>\n<li>300-400 g ryggbiff<\/li>\n<\/ul>\n<h4><strong>Picklad r\u00f6dl\u00f6k <\/strong><\/h4>\n<ul>\n<li>2 r\u00f6da l\u00f6kar<\/li>\n<li>\u00be dl \u00e4ttika<\/li>\n<li>\u00be dl socker<\/li>\n<li>1 \u00bd dl vatten<\/li>\n<\/ul>\n<h4><strong>Majonn\u00e4s<\/strong><\/h4>\n<ul>\n<li>1 \u00e4gg<\/li>\n<li>2 teskedar dijonsenap<\/li>\n<li>\u00bd tesked salt<\/li>\n<li>2 \u00bd dl rapsolja<\/li>\n<\/ul>\n<h4><strong>Tillbeh\u00f6r<\/strong><\/h4>\n<ul>\n<li>4 ciabattabr\u00f6d, eller liknande<\/li>\n<li>helstekta sm\u00e5l\u00f6kar, recept ovan<\/li>\n<li>sallat<\/li>\n<li>3\/4 dl f\u00e4rskriven pepparrot<\/li>\n<\/ul>\n<ol>\n<li>B\u00f6rja med den picklade l\u00f6ken. Skala l\u00f6karna, halvera dem och skiva tunt. Blanda \u00e4ttika, socker och vatten tills sockret l\u00f6ser sig. L\u00e4gg i l\u00f6ken och l\u00e5t den ligga minst en timma.<\/li>\n<li>Salta och peppra k\u00f6ttet. Stek i olja och sm\u00f6r till fin f\u00e4rg. L\u00e4gg att vila.<\/li>\n<li>Alla ingredienserna till majonn\u00e4sen ska vara rumstempererade. Kn\u00e4ck \u00e4gget i beh\u00e5llaren till en stavmixer. Klicka i senap, h\u00e4ll p\u00e5 salt och olja. S\u00e4tt stavmixern i botten p\u00e5 beh\u00e5llaren. K\u00f6r ig\u00e5ng och dra sakta mixern upp\u00e5t.<\/li>\n<li>Halvera br\u00f6den p\u00e5 l\u00e4ngden l\u00e4gg p\u00e5 sallat. Sk\u00e4r tunna skivor av k\u00f6ttet och f\u00f6rdela \u00f6ver br\u00f6den. L\u00e4gg p\u00e5 en driva av den picklade l\u00f6ken. Klicka p\u00e5 majonn\u00e4s, l\u00e4gg dit n\u00e5gra helstekta sm\u00e5l\u00f6kar och str\u00f6 till sist \u00f6ver pepparroten.<\/li>\n<\/ol>\n<p>Oj, det l\u00e4t mycket det d\u00e4r och \u00e4nd\u00e5 \u00e4r det enkelt.
