Allts\u00e5 jag \u00e4lskar en riktigt styvt vispad mar\u00e4ng! Och allra b\u00e4st \u00e4r varianterna som f\u00e5r en kort v\u00e4rmebehandling som den schweiziska. Jag k\u00e4nner mig en liten stund som en m\u00e4sterbagare. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>H\u00e4romdagen roade jag mig med att <a href=\"https:\/\/blogg.land.se\/skog-till-bord\/munkar-paskbakets-skrytbulle\/\">baka munkar<\/a>. F\u00f6rv\u00e5nansv\u00e4rt enkelt. Och roligt! De blev verkligen allt man kan \u00f6nska. S\u00e5g ut som munkar och smakade munkar. Vilken baklycka!<\/p>\n<p><a href=\"https:\/\/blogg.land.se\/skog-till-bord\/vaniljmunkar-steg-tva-i-skrytbaket\/\">De fick dessutom fyllning av vaniljkr\u00e4m som steg tv\u00e5 i baket.<\/a> Kvar efter det grandiosa munk-kalaset fanns en r\u00e4tt stor m\u00e4ngd \u00e4ggvitor och dem tar vi tag i idag.<\/p>\n<p>Det ska bli chokladmar\u00e4nger som funkar fint att \u00e4ta bara rakt upp och ner som de \u00e4r. Alternativet \u00e4r att g\u00f6ra sig till ytterligare och sl\u00e4nga ihop en mar\u00e4ngswiss. Det \u00e4r allt som beh\u00f6vs f\u00f6r att de r\u00e4tt mediokra ingredienserna ska bli en blank, fast alldeles underbar mar\u00e4ngsmet.<\/figcaption><\/figure>\n<p>\u00d6verblivna \u00e4ggvitor \u00e4r inte alldeles ovanligt. S\u00e4rskilt till p\u00e5sk har det h\u00e4nt ett antal g\u00e5nger att jag har haft \u00e4ggvitor \u00f6ver som blivit grunden till bak och fika, eller dessert. Vill ni riktigt grotta ner er i mar\u00e4ngens v\u00e4rld s\u00e5 finns en hel rad recept p\u00e5 temat i l\u00e4nkarna nedan.<\/p>\n<p>Men nu blir det chokladmar\u00e4nger. B\u00e4sta sorten med en h\u00e5rd knaprig yta och ett aningen segt inre.<\/p>\n<p>Ett r\u00e5d p\u00e5 v\u00e4gen \u00e4r att plocka fram v\u00e5gen. Vikt \u00e4r b\u00e4sta m\u00e5ttenheten. M\u00e4ter du volym s\u00e5 var noga. Antal \u00e4ggvitor \u00e4r alldeles f\u00f6r os\u00e4kert eftersom \u00e4gg inte kommer i en storlek. Till verket!<\/p>\n<h2>Mar\u00e4ng med choklad<\/h2>\n<ul>\n<li>250 g \u00e4ggvita, 2 \u00bd dl (6-8 st)<\/li>\n<li>500 g socker, 5 \u00bc dl<\/li>\n<li>100 g m\u00f6rk choklad<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>L\u00e4gg \u00e4ggvitor och socker i en sk\u00e5l. G\u00e4rna en rostfri som leder v\u00e4rme bra.<\/li>\n<li>S\u00e4tt sk\u00e5len i ett vattenbad p\u00e5 l\u00e5g v\u00e4rme. S\u00e4tt en termometer i sk\u00e5len och r\u00f6r eller vispa tills blandningen n\u00e5tt en temperatur p\u00e5 65 grader. D\u00e5 har alla sockerkristaller l\u00f6st upp sig.<\/li>\n<li>Ta sk\u00e5len fr\u00e5n v\u00e4rmen och forts\u00e4tt vispa tills mar\u00e4ngen \u00e4r kall. Det tar en god stund s\u00e5 har du inte enast\u00e5ende armkrafter \u00e4r en maskin att rekommendera. Mar\u00e4ngen ska vara lite seg, blank och kritvit. Den formar sig fogligt precis som du vill.<\/li>\n<li>S\u00e4tt ugnen p\u00e5 130 grader. Sm\u00e4lt chokladen i micro eller i sk\u00e5l \u00f6ver vattenbad.<\/li>\n<li>Ringla chokladen i mar\u00e4ngsmeten och v\u00e4nd ner den med en slickepott. V\u00e4nd bara n\u00e5gra f\u00e5 g\u00e5nger. L\u00e5t chokladen bilda m\u00f6rka, fina slingor i smeten.<\/li>\n<li>Skeda upp p\u00e5 pl\u00e5t med bakpl\u00e5tspapper. G\u00f6r flera mar\u00e4ngberg eller ett helt alplandskap som p\u00e5 bilden. Gr\u00e4dda i 60 min. G\u00f6r du sm\u00e5 mar\u00e4nger m\u00e5ste tiden kortas. Testa efter 40 minuter. De ska vara sega i mitten.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>H\u00e4r kan man stanna och bjuda mar\u00e4ngerna precis som de \u00e4r eller g\u00e5 vidare. Varf\u00f6r inte g\u00f6ra en mar\u00e4ngswiss?! L\u00e4gg p\u00e5 kulor av glass, vanilj och choklad.
