R\u00e4tten som passar det som blev \u00f6ver fr\u00e5n p\u00e5skbordet helt perfekt. All sorts lax, dill, potatis och ett kanske n\u00e5gra kvargl\u00f6mda sparrisknoppar. Husman som kylsk\u00e5psrensare. V\u00e4lkommen in i k\u00f6ket!<\/strong><\/p>\n<p>\u00c4rligt talat s\u00e5 h\u00e4nder det faktiskt aldrig. Att jag medvetet plockar ihop en varukorg med en laxpudding i sikte. Det h\u00e4r \u00e4r d\u00e4remot en av r\u00e4tterna jag ser fram mot efter st\u00f6rre helger. De d\u00e4r mathelgerna som ofta l\u00e4mnar en ensam laxrest i kylens innersta.<\/p>\n<p>Laxen har definitivt ett liv efter p\u00e5sk. Och n\u00e4r det kommer till laxpudding s\u00e5 funkar det fint att blanda. Kallr\u00f6kt, gravad eller rimmad alla blir lika bra, ensamma eller ihop i en blandning. N\u00e5gon g\u00e5ng har jag skivat upp en bit kvarl\u00e4mnad f\u00e4rsk lax supertunt och saltat ett par timmar. Gick j\u00e4ttebra det ocks\u00e5.<\/p>\n<p>Kokt \u00f6verbliven potatis, japp det funkar. Annars f\u00e5r man koka ny. Dill ska med i riklig m\u00e4ngd och l\u00f6k. Gul l\u00f6k, purjo, gr\u00e4s- eller salladsl\u00f6k. Det handlar om att varva ingredienserna i en ugnsfast form. G\u00e4rna en med avtagbar kant, men obs den m\u00e5ste h\u00e5lla t\u00e4tt. Misst\u00e4nker du l\u00e4ckage \u00e4r det b\u00e4ttre att ta en hel form.<\/p>\n<p>En sak \u00e4r viktig. Tryck inte till ingredienserna n\u00e4r du varvat dem. Vi vill inte ha en stabbig pudding utan en l\u00e4ttsam trevligt, v\u00e5rig sak.<\/p>\n<p>In och leta i kylen allts\u00e5 och s\u00e5h\u00e4r g\u00e5r det till:<\/p>\n<h2>Laxpudding<\/h2>\n<p>4 pers<\/p>\n<ul>\n<li>800 g (eller lite mer) kokt potatis<\/li>\n<li>1 liten gul l\u00f6k eller motsvarande m\u00e4ngd annan l\u00f6k<\/li>\n<li>1 knippa dill<\/li>\n<li>400 g lax, kallr\u00f6kt, gravad eller\/och rimmad<\/li>\n<li>3 \u00e4gg<\/li>\n<li>3 dl gr\u00e4dde<\/li>\n<li>1 dl mj\u00f6lk<\/li>\n<li>ett par sm\u00f6rklickar<\/li>\n<li>lite salt<\/li>\n<li>peppar<\/li>\n<\/ul>\n<h4>Tillbeh\u00f6r<\/h4>\n<ul>\n<li>Sparris<\/li>\n<li>Spenat<\/li>\n<\/ul>\n<h4>G\u00f6r s\u00e5h\u00e4r<\/h4>\n<ol>\n<li>S\u00e4tt ugnen p\u00e5 175 grader. Skiva den kokta potatisen tunt. Finhacka l\u00f6ken. Sk\u00e4r dillen fint.<\/li>\n<li>Sm\u00f6ra en form, g\u00e4rna en med l\u00f6stagbar kant. Alternativet \u00e4r att kl\u00e4mma fast ett bakpl\u00e5tspapper i botten. Det fastnar inte och det blir t\u00e4tt s\u00e5 att inte \u00e4ggstanningen rinner iv\u00e4g. \u00c4r du os\u00e4ker p\u00e5 om formen l\u00e4cker s\u00e5 ta en vanlig, hel form.<\/li>\n<li>Sedan \u00e4r det bara att varva: potatis, l\u00f6k, dill, lax, potatis, l\u00f6k, dill lax och s\u00e5 ett potatisvarv \u00f6verst. Lite peppar mellan varven ocks\u00e5 och eventuellt en gnutta salt, men t\u00e4nk p\u00e5 att laxen \u00e4r salt i sig. Spara lite av laxen att l\u00e4gga ovanp\u00e5 n\u00e4r gr\u00e4ddningen \u00e4r klar om du vill.<\/li>\n<li>Vispa l\u00e4tt ihop \u00e4ggen med gr\u00e4dde och mj\u00f6lk. H\u00e4ll blandningen i formen och st\u00e4ll in i ugnen. Gr\u00e4dda i en timme. H\u00e5ll koll p\u00e5 ytan s\u00e5 att den beh\u00e5ller en fin f\u00e4rg.<\/li>\n<li>Ta ut och l\u00e5t svalna n\u00e5got. \u00c4t som den \u00e4r eller l\u00e4gg p\u00e5 laxskivor. M\u00e5nga recept s\u00e4ger att laxpuddingen ska serveras med skirat sm\u00f6r, men jag tycker att det k\u00e4nns v\u00e4l sm\u00f6rigt.
